STRAWBERRY-BASIL ICED TEA
Strawberries and basil give nuance to iced tea. The drink is toted in an old-fashioned glass jar, with ice added just before serving. Small bags of pistachios are the perfect accompaniment.

Steps:
- Bring 4 cups water to a boil in a medium saucepan. Add tea bags, and let steep for 5 minutes.
- Place strawberries in a bowl. Bring water and sugar to a boil in a small saucepan, stirring until sugar dissolves. Remove from heat, add basil, and let steep for 10 minutes. Strain over strawberries; discard basil. Toss to coat. Let stand until cool, about 25 minutes. Combine strawberries (with syrup) and tea in a pitcher. Refrigerate until chilled. Serve over ice, and garnish with basil.
BASIL ICED TEA
Shaken in a cocktail shaker, this Basil Iced Tea is the perfect summer beverage with a super refreshing, straight from the garden flavor.

- Add basil leaves and a splash of iced tea to a cocktail shaker.
- Muddles the basil leaves.
- Add the rest of the iced tea.
- Add ice then shake well.
- Strain into a tall glass over fresh ice.
- Add more basil to garnish, if desired.
- If you prefer your tea sweetened, add simple syrup or sugar to taste.

- Bring 8 cups water to a boil. Add the raspberries, sugar, tea bags and basil. Turn off the heat and steep 5 to 10 minutes. Strain and let cool, then combine with the lime juice in a large pitcher. Refrigerate until chilled, about 1 hour. Serve in Raspberry Ice-filled glasses, garnished with fresh basil leaves.
- Add 3 raspberries to each ice cube slot in an ice-cube tray. Fill with water and freeze until solid, 6 to 8 hours.
BLUEBERRY-BASIL ICED TEA

- Bring 4 cups water to a boil with 1 cup each blueberries and fresh basil and 5 tablespoons sugar; stir to dissolve the sugar. Let cool 5 minutes. Add 12 white tea bags and steep 5 minutes. Strain through a fine-mesh sieve into a pitcher, gently pressing on the solids. Stir in 3 cups cold water. Chill. Serve over ice with blueberries and basil sprigs.

- Brew tea for 5 to 8 minutes in 4 of boiling water (off heat).
- Remove the tea bags.
- Separately boil1 cup of water and add sugar and 1 cup of basil leaves, brew covered (off heat) for 10 minutes.
- Remove the basil and add chopped strawberries and let it chill in the fridge.
- Add the basil strawberry syrup to the cool or cold brewed tea.
- Serve in glasses with ice and enjoy!.

- Put tea bags and basil in a quart-size glass measure or heatproof bowl.
- In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and strain through a sieve into a heatproof pitcher. Cool tea and chill, covered, until cold, about 1 hour.
- Stir in nectar and syrup. Serve tea over ice in tall glasses and garnish with peach slices and basil sprigs.
- To make simple syrup:
- In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered. Makes about 2 cups.
