Amazing Cucumber Basil Salad image

I created this salad because I had lots of fresh veggies and herbs from my garden that needed using up. It is so good, and because it makes its own dressing, it's very healthy as well. The flavor is best when left in the fridge overnight.

2 cups fresh baby spinach
2 tablespoons chopped fresh basil
1 pound campari tomatoes, seeded and minced
2 large seedless cucumbers, peeled and minced
1 large red onion, minced
3 cloves garlic, minced
1 teaspoon salt, or to taste
1 teaspoon cracked black pepper, or to taste

Steps:

  • Run spinach and basil through a food processor until finely chopped.
  • Mix spinach mixture, tomatoes, cucumbers, red onion, garlic, salt, and pepper together in a large bowl with an air-tight lid. Cover bowl and refrigerate salad, 8 hours to overnight.

Vinaigrette:
1 shallot, finely chopped
Kosher salt
1 lemon
2 Tbsp. Katz's Sauvignon Blanc vinegar or other white wine vinegar
Salad and assembly:
2 lb. mixed heirloom cucumbers, sliced into1/4-inch thick wedges and rounds
1 English hothouse cucumber, halved lengthwise, sliced crosswise
Kosher salt
2 lb. yellow peaches, sliced into 3/4-inch thick wedges
4 oz. mild feta, crumbled
Freshly ground black pepper
Handful of basil leaves, torn if large
Handful of mint leaves, torn if large
1 lemon, halved

Steps:

  • Vinaigrette:
  • Place shallot in a small bowl and season with a big pinch of salt. Finely grate zest from lemon into bowl; cut lemon in half and squeeze in juice. Add vinegar and toss to combine. Let sit 10 minutes.
  • Salad and assembly:
  • Place cucumbers in a medium bowl and season with salt. Spoon half of vinaigrette over and toss gently to coat.
  • Place peaches in a serving bowl or on a platter and season with salt. Spoon remaining vinaigrette over and toss gently with your hands to coat.
  • Add cucumbers to peaches; toss gently again just to combine. Add feta; season with salt and pepper. Top salad with basil and mint and squeeze lemon over.

Among those cities is Glendale (not so small: it would be the second-most-populous city in New England), a center of the Armenian diaspora and home to one of the world's largest Armenian populations outside Armenia. Fleeing religious violence in the late 19th century, genocide in the early 20th or the Soviet Union after that, Armenian Californians became integral in the development of the fig, raisin and bulgur businesses. They also opened restaurants. This salad comes from one of them, Adana. The chef and owner, Edward Khechemyan, gave me the recipe in 2013.

15 mint leaves
2 medium Kirby cucumbers (8 ounces)

Steps:

  • Combine vinegar and sugar in small saucepan.
  • Wash and dry the mint leaves; then, add half of them to the saucepan. Heat the mixture just long enough to dissolve the sugar.
  • Wash and dry cucumbers; then, trim the ends. Slice thinly, and add to the saucepan, stirring to coat well.
  • Serve topped with the remaining mint leaves.

3 tablespoons mint, finely chopped
2 garlic cloves, minced (or 1/2 tsp garlic salt)
1 green onion, thinly sliced
70 g goat cheese, crumbled
2 tablespoons olive oil
2 tablespoons lemon juice
1 dash black pepper
salt, if using garlic cloves

Steps:

  • Combine cucumbers, mint, garlic (if using fresh), green onion, and cheese in a bowl.
  • Combine olive oil, lemon juice, pepper, and salt (if using) in a screw top jar. Shake until well combined. Pour over salad.
  • Enjoy at room temperature or chilled.
  • Note: excellent with pita crisps.
  • Note: When made for the blog, the dressing was omitted and only half the goat cheese was used (where most of the calories are hiding). Instead, I just used a light olive oil mist, which may not have been necessary. Cucumbers are plenty wet as it is!

  • Cut the cucumbers in half lengthwise. Use a teaspoon to scrape out the seeds, then cut into thin slices. Toss the cucumbers with the salt in a colander. Let drain in the sink for at least 30 minutes.
  • Meanwhile, soak the red onions in a small bowl of ice water for ten minutes, then drain in a fine mesh strainer. Blot dry with a paper towel.
  • Tap the cucumber-filled colander on the base of the sink to release any excess water. Lay a clean dish towel flat on the counter, and then dump the cucumbers over top. Use the edges of the towel to blot the cucumbers dry.
  • In a medium bowl, toss the cucumbers, onions, white wine vinegar, olive oil, vegetable oil, sugar, pepper and mint. Cover and let stand in refrigerator for at least 20 minutes or up to 12 hours. Before serving, taste and adjust seasoning, if necessary. Serve cold.
