1 tablespoon olive oil
1/2 large sweet onion, finely diced
2 Fuji or Gala apples, diced
1 1/2 cups basmati rice
2 tablespoons fresh thyme leaves
2 1/2 cups chicken stock
1/2 cup apple juice
2 tablespoons unsalted butter
1 tablespoon apple cider vinegar
Kosher salt

Steps:

  • Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 10 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 1 to 2 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 20 minutes.
  • Fluff with a fork and adjust the salt as needed.

1/4 cup sliced almonds with skins
1/2 onion, finely chopped
1 1/2 cups basmati rice or other long-grain white rice
1/2 cup dried cranberries
1 cup chicken broth
Kosher salt and freshly ground black pepper
2 tablespoons finely chopped fresh parsley

Steps:

  • Melt 1 tablespoon of the butter in a medium saucepan over medium heat. Add the almonds and cook, stirring constantly, until golden and nutty smelling, about 3 minutes. Transfer to a small bowl and reserve.
  • Melt the remaining 2 tablespoons butter in the saucepan and add the onions. Cook, stirring occasionally, until softened, about 5 minutes. Add the rice and cranberries and cook, stirring, until well coated, about 1 minute. Add the chicken broth, 1 1/2 cups water, 1/2 teaspoon salt, and pepper to taste, and increase the heat to medium-high. Bring to a boil, then cover and reduce the heat to low. Cook until all the liquid has been absorbed, about 18 minutes. Take off the heat and let stand, covered, for 5 minutes. Stir in half of the reserved almonds and the parsley, and season with salt and pepper. Garnish with the remaining toasted almonds.

1 ½ cups chicken stock
1 tablespoon vegetable oil
¼ cup finely diced onion
1 bay leaf
1 cup uncooked basmati rice
salt to taste
1 tablespoon unsalted butter

Steps:

  • Heat chicken stock in a saucepan until boiling; keep hot until ready to use.
  • Heat vegetable oil in a 2 quart saucepan over medium-high heat. Cook and stir onion and bay leaf in the hot oil until onion is tender, about 5 minutes.
  • Stir basmati rice into onion mixture until rice is coated with oil.
  • Pour hot chicken stock into the rice mixture. Season with salt; stir.
  • Bring rice mixture to a boil; cover and reduce heat to medium-low. Continue simmering until rice is tender and liquid is absorbed, about 20 minutes.
  • Remove saucepan from heat and discard bay leaf. Add butter and fluff the rice with a fork.

Steps:

1 large onion, chopped
1/2-3/4 cup slivered almonds
1 cup basmati rice
1 cup finely chopped carrot
1/2 cup currants (or to taste)
1 1/2 teaspoons finely minced orange rind
1/4 teaspoon cinnamon
black pepper
1/8 teaspoon red pepper flakes (use more for more spicy, or omit the pepper flakes)
1 3/4 cups good quality chicken broth
1/4 cup water
salt (optional)

Steps:

  • In a medium saucepan, melt butter.
  • Saute the onion and almonds over medium heat until onion is soft (not brown) and the almonds are golden.
  • Stir in rice; cook stirring for about 4 minutes to release flavor.
  • Stir in chopped carrot, currants, orange peel, cinnamon, black pepper and red pepper flakes.
  • Carefully stir in chicken broth and water into the rice mixture, stir slightly with a wooden spoon.
  • Bring to a boil, and reduce heat.
  • Cover the saucepan and simmer until all liquid is absorbed, and the rice is tender (about 20 minutes).
  • Season with salt.

1 tablespoon olive oil
¾ cup chopped onions
½ cup dried cranberries
1 ½ cups uncooked jasmine rice
3 cups low-sodium chicken broth
1 teaspoon kosher salt, or to taste

2 green onions, chopped
3 tablespoons chopped fresh cilantro
¼ cup slivered almonds

Steps:

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Cook and stir onion in hot oil until tender and translucent, about 5 minutes.
  • Stir cranberries and jasmine rice into onion until rice is coated with oil and rice is lightly toasted, about 5 minutes more.
  • Pour chicken broth into skillet and season with kosher salt and black pepper.

  • Heat oil in heavy large saucepan over medium heat. Add onion and carrot; sauté 5 minutes. Add ginger, curry powder, cumin, and garlic; stir 1 minute. Stir in squash and next 4 ingredients. Add 3 3/4 cups water and salt. Bring to boil. Reduce heat to medium-low, cover, and simmer until water is absorbed and rice is tender, about 45 minutes. Remove from heat. Stir in cranberries. 1 tbsp vegetable oil
1 onion , chopped
1 tbsp tagine spice blend (we used Bart Baharat)
350g pack ready-diced butternut squash
225g basmati rice
2.5cm/1in piece root ginger , peeled and finely grated
1 garlic clove , crushed
100g fruit & nut mix
600ml vegetable stock
1 tbsp ready-made crispy onions
chopped parsley , to serve (optional)

Steps:

  • Place a large pan over a medium heat. Add the oil and onion, and cook gently until softened, around 5 mins. Tip in the spice blend, butternut squash and rice, and fry until everything is sizzling and coated in the spices. Add the ginger and garlic, fry for 30 secs more, then scatter in the fruit & nut mix. Stir in the stock and put the lid on the pan. Keep covered but stir regularly, every 5 mins or so, for 20 mins.
  • Once the rice is tender and the stock has been absorbed, serve at once on a large platter topped with crispy fried onions and chopped parsley, if you like.

1 tablespoon olive oil
1 small onion (preferably a sweet variety such as Maui, Wall Walla or Vidalia, cut into small dice, about 1/2 cup)
4 ounces butternut squash, peeled and cut into 1/4- to 1/2-inch cubes (1 cup)
1 medium granny smith apple, peeled, cored, cut into 1/4- 1/2 inch cubes
1/3 cup dried sweetened cranberries, coarsely chopped
1/8 teaspoon salt
1 1/2 cups uncooked basmati rice, rinsed according to package directions
2 1/2 cups about vegetable broth (or water or chicken broth)

Steps:

  • Heat oil in a medium pot over medium-high heat. Add the onion and cook for 2 to 3 minutes, stirring, then add the squash, apple, cranberries and salt; stir to combine, and cook for 2 minutes.
  • Add the rice, stirring to coat evenly; then add the broth or water. Allow the liquid to come just to a boil, then reduce the heat to medium and cook for 5 minutes.
  • Cover and reduce the heat so the liquid is barely bubbling at the edges; cook for 5 to 10 minutes, until the rice is tender and all of the broth or water has been absorbed; use a fork to stir once halfway through cooking.
  • Turn off the heat; let the finished rice sit, covered, for 5 to 10 minutes.
  • Uncover, fluff with a fork and serve. Makes 6 to 8 servings.

Bring to a boil, stirring occasionally, and continue to boil until liquid is reduced slightly below the rice level. Lower heat, top with lid, and let simmer for 15-20 minutes, or until all water absorbed and rice is tender.
  • Meanwhile, heat remaining 1 tablespoon olive oil in a small skillet. Cook shallot, stirring occasionally, for 2 minutes. Stir in apple, rosemary, and sage, and season generously with Kosher salt. Cook for about 5 to 7 minutes, until apple is softened.
