Spicy Cod Fish Tacos with Cilantro Slaw and a Creamy Fish Sauce.

1 lb skinless cod fillet
2 tbsp oil
1 tbsp lemon juice
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp ground cumin
salt to taste
1/4 cup greek yogurt
2 tbsp mayonnaise
1 tsp lemon juice
1/2 tsp paprika
Salt to taste
1 cup purple cabbage, shredded
3/4 cup carrots, shredded
1/3 cup frozen corn, thawed
2 tbsp jalapenos, chopped
1/4 cup cilantro, chopped
3 tbsp greek yogurt
1 tsp lemon juice
Salt to taste
6-8 corn tortillas

Steps:

  • To marinate the fish, combine oil, lemon juice, paprika, cayenne pepper, cumin, and salt. Add the fish fillet and coat well. Marinate for at least 30 minutes.
  • Meanwhile make the sauce by combining the yogurt, mayonnaise, lemon juice, paprika, and salt. Mix them until creamy and smooth and set aside.
  • Combine the "to make slaw" ingredients in a bowl and set aside.
  • Heat a skillet and place the marinated fish. Sear the fish and cook for 3-5 minutes until the fish is completely done. Remove the fish fillets to a plate and break them into chunks.
  • To assemble the tortillas; char the corn tortillas on an open flame. Place the tortilla on a plate, add some chunks of fish, add a tablespoon of slaw and drizzle the prepared sauce on top.
  • Garnish with jalapenos and cilantro before serving.

1 pound fresh cod
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup root beer
1 recipe jalapeno crema (below)
4 roma tomatoes (diced)
1/2 white onion (minced)
1/4 fresh cilantro leaves (chopped)
2 avocados (diced)
2 limes (juiced)
1 teaspoon salt
2 cups shredded cabbage
1/2 cup red wine vinegar
salt and pepper
16 corn tortillas

Steps:

  • Pour vegetable oil into a large heavy skillet, using enough to cover the bottom with 1/2-1 inch of oil. Heat to 350 degrees.
  • Meanwhile, slice your fish into 1/2 inch wide strips, 5 inches long. In a medium-size mixing bowl, make your batter by whisking together flour, baking powder, mustard, garlic powder, onion powder, salt, pepper, and root beer. Set aside.
  • Make your avocado salsa by combining diced tomatoes, onion, cilantro, avocados, lime juice, and salt in a bowl. Toss together to combine.
  • Make your simple slaw by tossing together shredded cabbage with red wine vinegar. Season generously with salt and pepper, to taste.
  • Working in batches, dip fish into the prepared batter to coat. Place directly into the 350 degree oil. Fry until deep, golden brown, about 3 to 4 minutes per side. Let drain on a paper-towel lined plate.
  • Serve fried fish hot on a corn tortilla. Top with slaw, avocado salsa, and jalapeno crema.

2 tablespoons cornstarch
1 teaspoon baking powder
½ teaspoon salt
1 egg
1 cup beer
½ cup plain yogurt
½ cup mayonnaise
1 lime, juiced

½ teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon dried dill weed

1 quart oil for frying

1 1/2 teaspoons coarse salt

1 1/2 pounds cod fillets, cut crosswise into 1/2-inch-thick strips
Corn tortillas, warmed
Toppings, including shredded cabbage, sour cream, and salsa such as pico de gallo

Steps:

  • Heat oil in a large cast-iron or heavy skillet until a deep-fry thermometer registers 375 degrees. Meanwhile, whisk together eggs, beer, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a medium bowl; set aside.
  • In a separate medium bowl, whisk together flour, remaining teaspoon salt and 1/4 teaspoon black pepper, and cayenne; add to egg mixture. Whisk until batter is well combined; let rest 15 minutes.

150g plain flour
75g cornflour
½ tsp fine sea salt
230ml cold beer
vegetable oil, for deep-frying
4 skinless and boneless cod loins, cut in to 3cm pieces
8 small soft corn tortillas
2 Little Gem lettuces, shredded
hot sauce, to serve (optional)
150ml white wine vinegar
1 tsp coriander seeds, crushed
1 tsp peppercorns
2 tbsp caster sugar
1 large red onion, finely sliced
150g mayonnaise
½ small bunch of dill, finely chopped
½ small bunch of basil, finely chopped
½ tsp Dijon mustard
1 tsp capers, chopped

Steps:

  • First, make the pickled onions. Put the vinegar in a pan with 150ml water, the coriander seeds, peppercorns, sugar and 1 tsp salt over a medium heat, stirring until the sugar has dissolved. Scoop the onions into a bowl and carefully pour over the hot pickling liquid. Leave to cool for 15 mins, then cover and chill for at least 1 hr. Will keep chilled for up to two days.
  • For the tartare sauce, mix together all the ingredients, then cover and chill. Will keep chilled for up to two days.
  • Sift the flour and cornflour into a bowl, then stir through the salt. Make a well in the centre and whisk in the cold beer to make a smooth batter. Cover and chill for 30 mins.
  • Heat the oil in a deep, heavy-based pan, no more than two-thirds full, until the oil reaches 190C on a cooking thermometer. If you don't have a thermometer, check the oil is ready by dropping a small cube of bread into the oil - it should turn brown in about 10 seconds.
  • Dip each piece of cod into the batter to fully coat, then gently shake off the excess. Fry the fish in batches for 4 mins per batch, then remove using a slotted spoon and drain on kitchen paper.
  • Warm your tortillas in a low oven or in a dry frying pan. Spread over the tartare sauce, then add the fish and top with the pickled onions and shredded lettuce, plus a dash of hot sauce, if you like. Best enjoyed with a cold beer.

Steps:

  • Special Equipment: A deep-fry thermometer.
  • Lightly season cod with salt and black pepper. Transfer to a wire rack set inside a rimmed baking sheet. Chill, uncovered, at least 1 hour or up to overnight (this air-dries the surface so the batter will adhere better to the fish).
  • Whisk flour, cornmeal, seasoned salt, paprika, baking powder, baking soda, in a medium bowl. Add beer, club soda and vinegar and whisk just until combined and no lumps remain.
