A Southwestern take on one of my hubby's favorite dishes. Usually I make baked beans with miniature smoked sausages, but this time I cut up large smoked sausages and used barbecue sauce and chile peppers. Ingredients

3 (15 ounce) cans pinto beans, rinsed and drained
1 (14 ounce) package johnsonville smoked sausage, cut into 1/4 inch pieces at an angle
1/2 cup chopped onion
1/4 cup diced chili pepper
1 cup mexican cheese, broken up into pieces
2 cups barbecue sauce (hickory or mesquite smoked)

Steps:

Preheat oven to 350F; spray a 2 quart baking dish with nonstick cooking spray.
In a large bowl, mix together all six ingredients; spread out into baking dish. Bake for 45 minutes.

Browning sausage gives these baked beans a wonderful extra punch of flavor and adds heartiness to the dish. These baked beans are an easy way to spice up canned beans with minimal ingredients. With just the right amount of sweetness, these will be a great addition to your cookouts. Delicious for a potluck too.

Ingredients

2 can(s) Bush's Baked Beans...any flavor you like, I use southern style (28 oz each)
1/2 onion, chopped fine
1 small bell pepper, chopped fine
1/2 c light brown sugar
1/4 c ketchup
1 Tbsp yellow mustard
1 lb (roll) Jimmy Dean sausage

Steps:

1. Cook sausage, onions, and bell pepper together in a large skillet.
2. Meanwhile, in a large bowl, combine both cans of beans, brown sugar, ketchup, and mustard. Mix well.
3. Add drained sausage to beans.
4. Transfer all into a greased 9x13 casserole dish.
5. Bake at 350 for about 30 minutes.

1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.
