BARBECUE BEEF CUPS
This is a quick and easy recipe given to me by a friend. My family loves it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
- In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
- Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
- Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

BEEF BISCUIT CUPS
These have reached comfort food status in my house. Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. I am sure there are lots of these recipes or similar variations floating around the Zaar.

Steps:
- Preheat oven to 375 degrees.
- Brown ground beef, drain, add spaghetti sauce and seasoning.
- Cook over medium heat about 5-10 minutes or until heated through.
- Press biscuits into the bottom and up the sides of greased muffin cups.
- Spoon 2 tablespoons (+) meat mixture into the center of each cup.
- Bake for 15 to 17 minutes or until golden brown.
- Sprinkle with cheese, bake 3 minutes longer or until cheese melts.
BBQ BEEF CUPS
This is a great recipe, easy to make, and popular with kids! You can use different flavors of barbecue sauce and different kinds of refrigerator biscuits as well (although I recommend the Pillsbury Grands sized ones as easiest to use).

- Preheat oven to 350 degrees.
- Spray or grease the cups of a muffin tin.
- In a skillet over medium heat, cook beef until browned; drain off drippings.
- Stir in the barbeque sauce and onion; simmer on low for 10 minutes.
- Flatten each biscuit with your hand or a rolling pin and press into the cups of the muffin tin; the dough needs to come to the top of each cup.
- Place a portion of the beef mixture into each dough cup.
- Bake at 350 degrees for 12 minutes.
- Remove from oven, sprinkle each cup with grated cheese, and bake for an additional 3 minutes or until cheese is melted.
- Makes 4 to 6 servings.
TERIYAKI BEEF & LETTUCE CUPS

- Put the steak between two sheets of cling film and beat with a rolling pin until half its original thickness. Thinly slice the steak, then mix with the teriyaki marinade in a bowl. Leave to marinate for 5-10 mins.
- Roughly dice the cucumber and mix with the chopped coriander and lime juice. Season with a little salt.
- Heat a frying pan until very hot, then fry the steak slices for 1½-2½ mins for rare to medium, turning the slices halfway through.
- Pile the cucumber mixture into the lettuce leaves, then top with the seared teriyaki beef, chilli and red onion.

CRUNCHY TACO CUPS RECIPE BY TASTY

- In a large skillet, brown the ground beef and drain any remaining fat. Transfer to a bowl.
- Add taco seasoning, tomatoes and green chiles to the ground beef and stir to combine.
- Preheat oven to 375ºF (190ºC).
- Cut flour tortillas into a square shape and cut each into 4 smaller equally sized square pieces.
- Generously coat a standard size muffin tin with nonstick cooking spray.
- Line each cup of prepared muffin tin with a tortilla sheet.
- Add 1.5 tablespoons taco mixture. Top with 1 tablespoon of cheese. Press down and add another layer of tortilla sheet, taco mixture, and a final layer of cheese.
- Lightly brush the top edges of the tortilla with cooking oil.
- Bake 18-20 minutes until cups are heated through and edges are golden brown.

BEEF STROGANOFF PIE CUPS
Savory pies made with Pillsbury pie crusts, sirloin, mushrooms and peas are a fun spin on traditional beef stroganoff.

- Heat oven to 400°F. Spray 8 regular-size muffin cups with cooking spray.
- Unroll pie crusts; cut out 8 (4 1/2-inch) rounds. Place round in each muffin cup; lightly press into cup with small glass. Gather dough scraps; re-roll to about 1/8-inch thickness. Cut out 8 (3-inch) rounds (these will be lids). Place lids on plate; place plate and muffin pan in refrigerator.
- In 10- to 12-inch skillet over medium-high heat, stir-fry beef with salt and pepper just until no longer pink. Remove from skillet to plate; cool.
- In same skillet, cook mushrooms until tender and water has released from mushrooms and mostly evaporated. Add onion and carrot; sprinkle with dash of salt. Cook until onion is tender and translucent. Add vermouth; scrape up browned bits from bottom of skillet. Continue to cook until liquid is mostly evaporated. Remove mixture from skillet to cool.
- In large bowl, mix beef, cooked vegetables and thawed peas. Stir in sour cream to coat. Taste for seasoning; add more salt or pepper to taste. Scoop heaping spoonsful of beef mixture into pie crust-lined cups. Top with lids; use fork to seal edges.
- In small bowl, beat egg and milk with whisk until blended. Brush over tops of pies. Cut vent holes in tops; sprinkle each with a little salt and pepper.
- Bake 25 to 30 minutes or until pies are golden brown. Cool about 5 minutes before removing from muffin cups. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place beef cubes into a large bowl. Season with kosher salt and black pepper. Add flour and paprika and toss until evenly coated.
- Heat oil in an oven-safe Dutch oven over medium-high heat. Sear the beef cubes in batches until dark brown, about 4 minutes per side. Flip or stir gently with a wooden spoon until all edges are dark brown, 2 to 3 minutes more. Remove beef and set aside.
- Add onions to the beef fat with more salt and pepper; cook and stir until they begin to caramelize, about 10 minutes. Add garlic and stir until aromatic and soft, about 30 seconds. Stir in tomato paste and cook until it turns brown and begins to caramelize and stick to the bottom of the pan. Deglaze with red wine, scraping up the flavorful browned bits on the bottom. Let the wine reduce until almost dry again, about 3 minutes.
- Add dried thyme, dried rosemary, herbes de Provence, and bay leaves. Add 2 cups beef broth and Worcestershire, stir, and bring to a boil. Add the seared beef cubes back into the stew liquid. Remove from heat and cover the pot.
- Braise in the preheated oven until meat is almost tender, about 1 1/2 hours. Remove from the oven. Add carrots, potatoes, and more beef broth if needed. Cover and return to the oven to braise until meat and vegetables are tender, about 30 minutes longer.
- Discard bay leaves. Stir in peas, fresh rosemary, and fresh thyme. Serve hot.

- Preheat oven to 375°F. Brush 6 muffin cups (the deeper the better) with melted butter. With a rolling pin, slightly flatten slices of potato bread (trimming off the crusts if desired). Press into prepared cups and brush with more butter.
- Melt 1 tablespoon butter in a small skillet over medium heat. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Remove from heat and stir in corned beef and baby spinach.
- Divide filling evenly among cups. Crack 1 large egg into each and season with salt and pepper. Bake until egg whites are almost set, 15 to 20 minutes. Let stand 5 minutes before serving.
