BEEF BRISKET INJECTION MARINADE
The best marinade recipe to inject your beef brisket with. Elevate the quality of your barbecued meat with soy sauce and Worcestershire sauce to guarantee a tender and juicy smoked brisket!

Steps:
- Heat water in a small saucepan to medium heat. Be careful not to bring it to a boil or simmer.
- Add beef base and stir into warm water. Add other marinade ingredients and stir to dissolve.
- Once all ingredients have dissolved, transfer marinade to a small mixing bowl.
- Transfer trimmed brisket to shallow cooking pan. Load meat injector with marinade, ensuring that all holes on the needle are submerged in the marinade.
- Find the grain direction on your brisket. Inject the marinade in line with the grain for better distribution. Be sure that all holes on the needle are inserted in the flesh of the meat, and slowly withdraw the injector while you push the needle plunger.
- Repeat across the entire surface of the meat in a grid-like pattern, with 1-2 inches between each insertion.
- Pour any leftover marinade over the meat. Transfer brisket to smoker for cooking.

CAJUN INJECTOR CAJUN ROAST BEEF

- Attach needle to Cajun Injector® by turning clockwise until snug. Do not over tighten needle.
- Pour marinade (2 oz. per pound of meat) into separate container and draw into injector.
- Place roast into 2-3 inch deep pan and inject marinade at points every 1-2 inches apart. After injecting, pour generous amounts of marinade over roast along with Cajun Injector Cajun Shake.
- Cover with foil and bake at 350 degrees F until desired temperature is reached. (You can cook this outside on the pit also). A whole rib-eye or prime rib done this way is wonderful as well!
6 HOUR TRI-TIP MARINADE

- To make the marinade, mix all of the ingredients except for the beef in a large mixing bowl. Place the trimmed tri-tips in a plastic container and pour the marinade over. Let stand in the refrigerator for at least 6 hours.
- Heat grill to medium temperature.
- Place tri-tips on grill at a 45-degree angle to establish grill marks and cook about 35 minutes, or until cooked to desired doneness. Remove the tri-tips from the grill and let rest about 2 to 5 minutes before slicing. Serve with your favorite side dishes.
PRIZE WINNING MARINADE FOR BEEF
I combined my sister-in-law's marinade recipe with my friend's barbecue cooking method. I then submitted this recipe into to a radio station as part of a contest and I ended up winning the grand prize of a Jenairre stove! It's so versatile that it works both with cheap cuts of beef and expensive too. I won't cook beef roast any other way. Enjoy!

- Using a food processor, crush peppercorns until fine.
- Add garlic to processor and crush.
- Add soy sauce, Worcestershire sauce and lemon juice and blend.
- Pour mixture into giant zip lock freezer bag and add the meat to be marinated (even the cheapest cuts of beef will taste like prime rib!).
- Seal bag.
- Refrigerate for 48 hours (turn bag every time you open the fridge door).
- Reserve the marinade for later use.
- Barbecue the meat as you would normally however, I prefer to cook the meat very VERY slowly using an indirect cooking method--only ONE side of the barbecue is lit and turned down to low.
- The meat is placed on the one side of the barbecue which is off, over a pan of water, which sits on the barbecue rocks.
- Note: Total barbecue time depends on the size of beef roast.
- Relax while your dinner cooks.
- Put marinade on the stove and bring to a boil.
- Add just enough marinade to some sour cream, to make a sauce to drizzle over the cooked meat.
- Sit back and enjoy the compliments.
GARLIC LEMON PEPPER INJECTABLE MARINADE
My father loves injectable marinades but they are expensive and hard to find so I went on a search to see what recipes I could find for him.

- In a gallon-size resealable plastic bag, combine the first eight ingredients. Cut roast in half; add to marinade. Seal bag and turn to coat; refrigerate overnight., Place roast and marinade in a 5-qt. slow cooker. Cover and cook on low for 8-10 hours or until meat is tender.
