Beer battered onion rings - my mother-in-law taught me this. You can actually use this batter for a lot of things, like zucchini, eggplant, jalapenos, etc.

2 cups all-purpose flour
1 egg, beaten
2 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoons dried oregano
salt and pepper to taste
1 cup beer
3 large onions, sliced into rings
1 cup oil for frying

Steps:

  • In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt and pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.
  • In a heavy frying pan heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip onions in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

This is my favorite recipe for fried jalapeno strips... but it works equally as well for fried onion rings (or petals) and, if you're so inclined, it's an excellent coating for fried pickles. Try them all at once, if you like. This recipe makes plenty of batter. Serve with Spicy Ranch Dipping Sauce.

30 jalapeno peppers, washed, seeded and cut into 'spikes'
1 (16 ounce) jar dill pickles, sandwich slices drained
2 onions (cut into either rings or petals)
1 egg
1 (12 ounce) can beer
1 1/2 cups self-rising flour
1 teaspoon seasoning salt
vegetable oil (for frying)

Steps:

  • Slice onion and jalapeno as desired, and pat dry pickles onto paper towels.
  • In a large bowl, whisk together egg, beer, flour and seasoned salt.
  • Heat oil in heavy skillet or a fry-cooker, following manufacturer's directions.
  • Dip vegetables into batter, allowing excess batter to drip off.
  • Fry in batches, about 3 or 4 minutes per batch, or until lightly browned.
  • Drain onto paper towels. Serve immediately.

Beer batter onion rings are perfectly crisp and crunchy, slightly sweet, and have a subtle kick of beer flavor.

1 1/4 cup all purpose flour
1 cup red ale (can also use lager or ale)
1 Tbsp Worcestershire sauce
salt
black pepper
1 large onion
3-4 cups canola or vegetable oil (for frying)

Steps:

  • In a medium mixing bowl, whisk flour with salt and pepper and then pour in beer and Worcestershire sauce. Whisk it all together until smooth.
  • Taste the batter to make sure you have enough salt.
  • Cover and set aside for about 30 minutes (if you have the patience).
  • Slice the onions into thick rings that are between 1/4-inch and 1/2-inch thick. Pat them dry with a paper towel to soak up excess onion juice.
  • Preheat the oil in a large skillet, deep pan, or in a fryer, on medium-high heat. (Do not use a shallow pan so that you minimize the splatter.) Make sure to preheat to and maintain the oil at 350° and 365°.
  • Line a large wire rack with paper towels to soak up the excess oil after frying and place it on the counter nearby.
  • Dip the onion rings into the batter and carefully add them to the hot oil. Fry until they are golden brown and flip. Give them a couple more minutes to fry until golden brown on the other side.
  • Fry them in batches and don't overcrowd the pan/pot.
  • Use metal tongs of a metal slotted spoon to take out the fried onion rings and place them onto the prepared wire rack to soak up excess oil.
  • Give it a couple of minutes to cool down and serve.

This recipe could be used for anything you would use a beer batter for....I made it up for onion petals, and it was an instant success! You could substitute any dark beer for the Killian's, but why would you want to?

1 large red onion
1/4 cup killians red beer
1/2 cup flour
1/2 teaspoon baking powder
1 egg
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper (to taste)
salt and pepper
sunflower oil (for frying)

Steps:

  • Cut off ends of onion and cut into quarters.
  • Julienne the quartered onions and separate into"petals".
  • Put remaining ingredients in blender and process until smooth, scraping down sides a couple of times.
  • Put beer batter into a bowl, add the onion petals and stir to coat.
  • Remove batter coated petals to a cookie sheet and put in fridge to rest for about 1/2 hour.
  • Deep fry petals in fairly hot sunflower oil (about 375º) until golden, about 2 minutes per batch.
  • Serve with your favorite dipping sauce.

2 teaspoons baking powder
2 teaspoons seasoned salt, plus extra for sprinkling at the end
2 teaspoons freshly ground black pepper
3 bottles beer
6 large eggs
Vegetable oil, for frying
6 large yellow onions, very thinly sliced with a mandoline

Steps:

  • Special equipment: a mandolin; a deep-frying thermometer
  • Mix the flour, baking powder, seasoned salt and pepper in a large bowl. In a pitcher, mix together the beer and eggs. Pour the liquid into the dry ingredients and mix.
  • In a large heavy-bottomed pot, heat enough vegetable oil to come halfway up the sides of the pot until a deep-frying thermometer inserted in the oil registers 375 degrees F.
  • In batches, dip the onion strings into the batter, then plunge them into the hot oil and cook until golden, 2 to 3 minutes. Drain on a paper towel and repeat with the rest of the onions. Sprinkle with seasoned salt.

3/4 cup mayonnaise
3 tablespoons sun-dried tomatoes
1/4 cup red bell peppers, roasted
1 tablespoon lime juice
1 1/2 teaspoons pepper, fresh cracked
2 teaspoons salt
3 tablespoons white wine
1 tablespoon garlic, minced
2 yellow onions, sweeter the better, Vidalia or Texas sweets
2 cups buttermilk
2 cups all-purpose flour, divided
1 teaspoon garlic, granulated
12 ounces beer, medium body
3 tablespoons grated Parmesan

Steps:

  • In a Dutch oven heat oil to 350 degrees F.
  • In a food processor combine sour cream, mayonnaise, sun-dried tomatoes, red bell peppers, lime juice, 1/2 teaspoon pepper, 1 teaspoon salt, white wine and minced garlic, cover and refrigerate for 1 hour.
  • Cut onions 1/2-inch thick, remove dark exterior of onions, separate into rings and soak in buttermilk for 1 hour.
  • Combine 1 cup of flour, remaining salt, pepper, and garlic, mix thoroughly. In a medium bowl combine beer and 1 cup of flour, mix thoroughly.
  • Remove onion rings from buttermilk, shake off excess, dredge in flour, shake off excess, then dip in beer batter. Drop some onion rings in oil and continue process, being sure not to crowd rings as they will stick together. When golden, remove and let drain on paper towels.
  • Garnish with Parmesan.

1 bottle light- or medium-bodied lager (12 ounces), cold
2 1/2 cups all-purpose flour (spooned and leveled)
Coarse salt
5 cups vegetable oil
2 1/2 to 3 pounds shrimp, firm fish fillets (such as cod), or desired vegetables (such as onions or pepperoncini), cut into pieces if necessary
2 cups buttermilk (if using onions)

Steps:

  • In a medium bowl, whisk eggs until smooth, then whisk in beer. Add 1 1/2 cups flour and 1 1/2 teaspoons salt and whisk until combined. Place 1 cup flour in a shallow bowl. Place a wire rack on top of a rimmed baking sheet; set near stove.
  • In a wide 6-quart pot fitted with a deep-fat or candy thermometer, heat oil to 375 degrees over medium. (The oil should bubble rapidly when a pinch of flour is added.)
