A healthy and vibrant dip, flavoured with nigella seeds and cumin to serve with crudites or flatbreads - it works well in lunchboxes too

250g vacuum-packed beetroot
½ tsp ground cumin
2 tsp chopped mint , plus a few leaves for sprinkling
squeeze lemon juice
3 tbsp half-fat crème fraîche
a few pinches nigella seeds

Steps:

  • Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Sprinkle with mint leaves and nigella seeds.

Yield Makes about 2 cups

Number Of Ingredients 7

1 large (8-ounce) beet, peeled, cut into 3/4-inch cubes
1 cup drained canned garbanzo beans (chickpeas; from 15 1/2-ounce can)
3/4 cup extra-virgin olive oil plus more for chips
1/4 cup slivered almonds
5 garlic cloves, peeled
1 1/2 tablespoons (or more) red wine vinegar
6 7-inch-diameter pita breads

Steps:

  • Cook beet in medium saucepan of boiling salted water until tender, about 12 minutes. Drain; place in processor. Add garbanzo beans, 3/4 cup oil, almonds, and garlic. Blend until smooth. Add 1 1/2 tablespoons red wine vinegar and blend well. Season to taste with salt, pepper, and additional vinegar, if desired. Transfer dip to medium bowl. Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.
  • Preheat oven to 400°F. Brush pita breads on both sides with oil; sprinkle lightly with salt and pepper. Cut each bread into 8 wedges. Arrange wedges on rimmed baking sheets. Bake until lightly brown and crisp, about 12 minutes. Cool chips on sheets.
  • Place dip in center of platter. Surround with chips and serve.

1 large beet, peeled and cutinto 3/4-inch cubes (ora few small)
1 cup drained canned garbanzo beans (chickpeas)
3/4 cup extra virgin olive oil
1/4 cup slivered almonds
5 garlic cloves, peeled
1 1/2 teaspoons red wine vinegar

Steps:

  • Cook beets in a medium saucepan of boiling salted water until tender, about 12 minutes. Drain and place into food processor, add garbanzo benas, almonds, oil and garlic and blend until smooth. Add vinegar and blend, then season to taste with salt and pepper.
  • Serve with pita chips or veggies for dipping.

8 raw baby beetroots , or 4 medium, scrubbed (purple, yellow or a mixture of the two)
1 tbsp za'atar
1 tbsp sumac
1 tbsp ground cumin
400g can chickpeas , drained and rinsed
2 tbsp olive oil
1 tsp lemon zest
1 tsp lemon juice
200g Greek yogurt
1 tbsp harissa paste
1 tsp crushed red chilli flakes
mint leaves , roughly chopped, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Halve the beetroots. Or quarter them if you're using medium ones or bigger. Mix all the spices together. On a very large baking tray or 2 smaller ones, mix the chickpeas and beetroot with the oil. Season well with sea salt and sprinkle the spices over. Mix again. Roast for 30 mins or until crisp at the edges.
  • While the vegetables are cooking, mix the lemon zest and juice and some salt with the yogurt. Swirl the harissa through and thickly spread onto a platter or shallow bowl. Top with the beetroot and chickpeas, and sprinkle with the chilli flakes and mint.
