A co-worker couldn't decide on her favorite for her birthday treat, brownies or chocolate chip cookies, so she said I should just pick one. On the way home I thought this up and couldn't find it on Allrecipes so I created it. These go quickly; I usually make a double batch in a jelly roll pan.

½ cup butter, softened
½ cup light brown sugar
¼ cup white sugar
½ teaspoon vanilla extract
1 large egg
1 ¼ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 cup semisweet chocolate chips
1 cup white sugar
½ cup butter, melted
1 teaspoon vanilla extract
2 eggs
⅓ cup cocoa powder
½ cup all-purpose flour
¼ teaspoon baking powder
⅛ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat softened butter, light brown sugar, 1/4 cup white sugar, and 1/2 teaspoon vanilla extract together in a large bowl until creamy. Add 1 egg; beat until light and creamy, about 2 minutes.
  • Whisk 1 1/4 cups flour, 1/2 teaspoon salt, and baking soda together in a bowl. Gradually stir flour mixture into butter mixture until dough is combined. Stir chocolate chips into dough. Spread dough into the bottom of the prepared baking dish to cover completely.
  • Stir 1 cup white sugar, melted butter, and 1 teaspoon vanilla extract together in a bowl; add 2 eggs and beat well. Mix cocoa powder into butter mixture until well-combined. Stir 1/2 cup flour, baking powder, and 1/8 teaspoon salt into cocoa mixture until batter is combined. Pour brownie batter over cookie dough and spread to cover completely.
  • Bake in the preheated oven until a toothpick inserted into the center of the brookies comes out clean, 20 to 25 minutes. Cool completely before cutting into bars.

1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

These brookies are a fudgy brownie and chewy chocolate chip cookie all in one. The combination of these two beloved baked goods makes for a dessert like no other. And the process of making this recipe is so simple and results in a heavenly treat.

5 oz. (140g) Dark Chocolate (60%-70%)
¼ cup Unsalted Butter
2 Eggs (at room temperature)
¼ (55g) cup Brown Sugar
¼ (50g) cup Granulated Sugar
½ tbsp. Vanilla Extract
½ tsp. Baking Powder
⅓ cup (41g) All Purpose Flour
4 tbsp. Dutch Cocoa Powder
Pinch of Sea Salt
½ cup Unsalted Butter
⅓ cup (67g) Granulated Sugar
⅓ cup (73g) Brown Sugar
1 Egg (at room temperature)
½ tsp. Vanilla Extract
1 cup (120g) All Purpose Flour
1 tsp. Baking Soda
Pinch of Sea Salt
1 1/2 cup chocolate chips

Steps:

  • Preheat the oven to 350ºF. Line a 8 x 8 inch brownie tray with parchment paper.
  • To make the brownie batter: Melt the dark chocolate and butter - either place a metal bowl over boiling water (making sure that only the steam touches the bottom of the bowl) and melt the chocolate and butter together. Or melt butter in the microwave until bubbling and add in chocolate, whisk until completely melted.
  • In another bowl, mix the eggs, white and brown sugar, and vanilla extract and whisk these ingredients until they're well combined. Then mix in the chocolate and butter mixture.
  • Sift the baking powder, flour, cocoa powder, and a pinch of sea salt and combine with wet ingredients - mix until just combined, don't overmix.
  • To make the cookie dough: Add the butter, granulated sugar, and brown sugar to a mixing bowl. Use a hand or stand mixer and mix it until it is creamy and pale yellow in color.
  • Add in the egg, vanilla extract, and mix until well incorporated.
  • Sift in the flour, baking soda, and salt. Mix with a rubber spatula until fully combined, don't overmix
  • Place half of the brownie batter on the bottom of the brownie tray and scoop the cookie dough into balls and put on top. Fill the spaces left between the cookie dough balls with the other half of the brownie mixture. Add the chocolate chips on top and use a rubber spatula to combine everything by making swirls.
  • Bake for 35-40 minutes, or until you insert a toothpick in the center and it comes out dry. Cool tray on a wire rack before cutting. Enjoy!
