FRESH TOMATO MARINARA SAUCE
A rich, flavorful sauce that is healthy. Great for use in pasta, lasagna, and other casseroles. My favorite way to eat it is to pour over raw zucchini 'pasta' for an extra-fresh and tasty meal that's very healthy, too! A great recipe for using up extra-ripe tomatoes from your garden. Double the batch and freeze half; it freezes well.

Steps:
- Heat olive oil in a stockpot over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes; add tomatoes, garlic, and bay leaf. Bring the liquid from the tomatoes to a boil, reduce to medium-low, and simmer mixture until tomatoes are softened, about 30 minutes.
- Stir red wine, honey, basil, oregano, marjoram, salt, black pepper, fennel seed, and crushed red pepper into the tomato mixture; bring again to a simmer and cook until herbs have flavored the sauce, about 30 minutes more.
- Stir balsamic vinegar into the sauce.

QUICK MARINARA SAUCE

- Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 5 minutes. Add the tomatoes with about half of their juices (discarding the rest), the herb sprigs and basil and bring to a boil. Reduce heat and simmer, uncovered for about 25 to 30 minutes or until thickened.
- Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste. Serve or store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.

- Heat olive oil in a saucepan over medium heat; cook and stir onion and garlic until fragrant, about 2 minutes. Add mushrooms, red bell pepper, and parsley; cook and stir until mushrooms are slightly softened, about 2 minutes. Add oregano, sugar, basil, rosemary, sage, red pepper flakes, salt, and black pepper; stir to combine, 2 minutes.
- Stir tomato sauce into seasoned onion-mushroom mixture; cook over low heat until flavors have combined, 30 minutes.
- Transfer half the sauce to a blender; blend until smooth. Return to saucepan with the remaining sauce; stir to combine.

BILL'S EASY FRESH MARINARA SAUCE
Summertime is a time when really good tomatos are avalible. It is also the time of year you want to stay away from hours in front of a hot stove. This recipe is really quick and above all FRESH. The recipe is for 2 or 3 people but I see no reason you can't double it. It is a little spicey but the freshness makes this a great sauce. Make sure you get great tomatoes, it makes a big difference. - Chop tomatoes.
- finely chop onion , bell pepper, garlic, and fresh herbs. Put olive oil and onions, bell pepper and garlic in iron skillet and cook over med high heat for 5 or so minutes. add tomatoes and all spices and cook covered for 15-20 minutes.add the tomato paste and cook till thickened. serve over half a box of cooked pasta . Add a grated fresh italian cheese and enjoy with a fresh salad. Did you notice I said fresh? I hope you enjoy this. Have a happy summer.

FRESH MARINARA SAUCE
We searched the zaar recipes, tried one but still thought the original one we use to make 17 years ago was the best so posting for quick access. This recipe comes from a Sunset Cookbook - Canning and Freezing and Drying, Pickling and Smoking 1975/1981. Roma tomatoes work best but your quick ripening garden harvest of all kinds will work too.

- Immerse tomatoes, a few at a time, in boiling water for about 1 minute. Lift out with a slotted spoon and plunge into cold water. Peel off and discard skins. Coarsely chop tomatoes to make 11 to 12 cups total.
- Heat oil in 5 qt or larger pot over medium heat.
- Cook garlic, onions, and carrots stirring occasionally until soft.
- Stir in tomatoes, basil, oregano, salt and pepper. Bring to a boil. Reduce heat and simmer rapidly, uncovered and stirring occasionally for about 1 1/2 hours or until sauce is very thick and reduced to about half.
- Let cool. Pour into freezer containers or freezer bags and freeze for up to 4 months.
- Serve over pasta sprinkled with parsley and grated parm or romano cheese. Try spaghetti squash for low carb.
- Spoon hot marinara sauce over individual servings of cooked steak or ground beef patties. Try over hot or cold seafood.
- Great with vegetables like hot whole green beans, or sliced zucchini.
- A great way to add vegies into your diet. Increase the amount of carrot, we have also added chopped celery.

BASIC MARINARA SAUCE
This is a light version of my Sunday gravy (can't give up the family recipe, top secret). Though this version is much faster than the 3-4 hours most Sunday gravies take. I NEVER measure herbs for gravy but this is about right for the amount of tomatoes used here. Hope you enjoy!

- On low light, put tomatoes in saucepan.
- In a frying pan, fry garlic in extra virgin olive oil, just enought to coat the pan. Once they start to sizzle, add to tomatoes and stir. If using the onion, saute in olive oil as well and add to tomotoes and stir.
- Add wine to frying pan and scrape pan with a wood spoon. Once wine starts to boil, about 30 seconds, add to tomatoes and stir.(Be careful, do this on a low light or shut the gas off).
- Once the gravy starts to bubble, add and stir oregano, then the basil, then season with salt and pepper.
- Simmer on low light for about 45 minutes, stirring frequently.
- The sky is the limit, serve over any pasta you wish. Can be used in lasagnas and parmigianas too.Leftovers can be frozen for up to 3 weeks.
EASY MARINARA SAUCE
We built this recipe from a lot of trial and error and a little experimentation with the wine selection. It has a sweet flavor with just a little zing to keep things interesting. Great for all types of italian dishes. We even used it for Italian sausage bombers.
