1 12 ounce package semisweet chocolate pieces
¾ cup creamy peanut butter
2 cups finely chopped pecans, toasted, or finely chopped roasted peanuts
1 ½ cups sugar
12 large marshmallows
½ cup butter
1 5 ounce can evaporated milk
1 10 ounce package cherry- or peanut butter-flavored pieces

Steps:

  • Line a 13x9x2-inch baking pan with heavy foil, allowing foil to extend over sides of pan; grease and set aside.
  • In a medium saucepan combine chocolate pieces and peanut butter; heat and stir over low heat until melted. Stir in nuts. Spread 1/2 of the mixture (about 1-1/4 cups) in prepared pan. Transfer to refrigerator. Let remaining chocolate mixture stand at room temperature.
  • In another medium saucepan combine sugar, marshmallows, butter and evaporated milk. Cook and stir over medium heat until mixture comes to a boil; cook 5 minutes more, stirring constantly. Remove from heat. Stir in cherry or peanut butter pieces until melted. Cool 10 minutes. Carefully spread over chocolate layer in pan. Chill 20 minutes.
  • Carefully spread on remaining chocolate mixture. Cover and chill at least 1 hour. Lift from pan using foil. Cut into small pieces. Store in an airtight container in the refrigerator. Makes 120 pieces.

Bing bars. A great Christmas candy to make. A good friend of mine gave me this recipe and is now a favorite in my family. Very popular in the mid west, but sometimes hard to find the cherry chips in other locations. May have to ask your grocer to order them in.

2 cups sugar
2/3 cup evaporated milk
1/8 teaspoon salt
12 large marshmallows
1/2 cup butter
1 (8 ounce) bag cherry chips
1 teaspoon vanilla
1 (12 ounce) bag semi-sweet chocolate chips
3/4 cup chunky peanut butter
1/4-1/2 cup chopped salted peanuts

Steps:

  • Mix sugar, milk, salt, butter, & marshmallows in heavy pan. Cook over med-high heat, stirring frequently. Bring to boil.
  • Boil 5 minutes, stirring constantly.
  • Remove from heat, add cherry chips & vanilla. Mix well. Ensure chips are melted.
  • Pour into greased 9x13 pan, store in refrigerator while you complete the next steps. This will help the cherry mixture to set up.
  • Melt chocolate chips & peanut butter over low heat. Add additional chopped nuts. (I like to use the salted Spanish nuts).
  • Spread over cherry mixture.
  • Let cool & cut into squares.

A homemade candy that tastes just like the nostalgic Midwest candy - a soft Bing cherry flavored filling surrounded by layers of chocolate covered peanuts.

2 cups granulated sugar
2/3 cup evaporated milk
1/2 cup + 1 tablespoon unsalted butter, (divided)
pinch of salt
1 teaspoon vanilla extract
12 large marshmallows
1 6 oz. pkg. cherry flavored baking chips
1 12 oz. pkg. good quality semi-sweet chocolate or baking chips
3/4 cup creamy peanut butter
10 oz. finely chopped or crushed salted peanuts

Steps:

  • Line a 9" x 13" pan with foil, extending over sides of pan and grease well with baking spray.
  • In a medium-sized saucepan, combine sugar, evaporated milk, 1/2 cup butter and salt. Bring to a rolling boil over medium heat; once boiling, cook 5 minutes, stirring constantly.
  • After 5 minutes, remove from heat. Add in vanilla extract, followed by the marshmallows and cherry chips. Stir until marshmallows and cherry chips have melted and mixture is smooth.
  • Meanwhile, in a microwave safe bowl, combine chopped chocolate or chocolate baking chips, 1 tbsp butter and peanut butter. Microwave on 50-60% power until chocolate is melted, then stir until mixture is smooth. Stir in chopped peanuts.
  • Pour half of the chocolate mixture into prepared pan. Then, pour all of the cherry mixture over the first layer of chocolate. Pour remaining chocolate mixture on top, spreading until the cherry mixture is completely covered.
  • Let cool completely before cutting candy into pieces. Store in an airtight container.

HOMEMADE BIG HUNK CANDY BARS



Homemade Big Hunk Candy Bars image

These soft and chewy Big Hunks are better than the store bought and so easy to make!

Number Of Ingredients 7

16 ounces peanuts (I used lightly salted)
3 (7 ounce) jars Kraft Marshmallow Creme
2 1/4 cups light corn syrup
2 1/4 cups sugar
1 1/2 teaspoons vanilla
6 Tablespoons butter (slightly melted)
1/4 teaspoon salt

Steps:

  • Grease a large cookie sheet with butter or shortening. Then spread the peanuts all over the greased cookie sheet.
  • In a large mixing bowl put the marshmallow creme, and then set aside.
  • In a large saucepan combine the corn syrup and sugar over medium high heat and stir constantly using a wooden spoon until it comes to a boil. Clip the candy thermometer on the side of the pan and heat it to 290 degrees F (soft crack stage). Do Not Stir During The Time It Reaches 290 degrees! (Trust me on this - do not stir while it's reaching the 290 degrees)
  • Then remove from heat and let stand for 2 minutes (do not stir during this time - let it set undisturbed).
  • Without scraping sides of the pan, pour into the marshmallow cream bowl and stir with a wooden spoon until smooth. Then add in the butter, vanilla, and salt and stir with wooden spoon until the butter is incorporated.
  • Pour into the prepared pan and spread evenly over the peanuts.
  • Let it set at room temperature until set, about 3 hours. You can put it in the fridge to set up faster. You can cut them up and wrap in waxed paper. After cutting them in squares we turned them upside down so you could see the side with the peanuts.

2 cups sugar
1/2 cup butter
1 pinch salt
12 large marshmallows
2/3 cup evaporated milk
5 ounces cherry chips
12 ounces semi-sweet chocolate chips
2/3 cup creamy peanut butter
1/2 cup finely chopped peanuts

Steps:

  • Combine sugar, butter, salt, marshmallows and evaporated milk to a boil, and boil for 5 minutes. Stir constantly as this mixture can scorch easily. Remove from heat, stir in cherry chip until melted and pour into a buttered 9 x 13 pan. Chill until set. Melt chocolate chips and peanut butter, either in microwave or on the stovetop, stir in peanuts. Pour over cherry mixture and chill again until set.

This is a homemade version of the Twin Bing® candy bars from the 60s. They are rich and sweet and a small piece is a nice treat. These really are like candy, so cut in small pieces. A 1-inch square is sufficient! Store in a cool place in an airtight container, separating layers with waxed paper.

⅔ cup evaporated milk
½ cup butter
12 large marshmallows
¾ cup cherry baking chips
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
¾ cup peanut butter
2 teaspoons butter, divided
10 ounces crushed peanuts

Steps:

  • Bring sugar, evaporated milk, and 1/2 cup butter to a rolling boil over high heat in a pot. Remove from heat. Add marshmallows, cherry chips, and vanilla extract; stir until fully incorporated. Set aside to cool.
  • Melt chocolate chips in a microwave-safe bowl in a microwave. Add peanut butter and 1 teaspoon butter; mix until smooth. Mix in crushed peanuts until fully coated.
  • Pour 1/2 of the chocolate mixture into a buttered 9x13-inch pan, making sure to completely cover the bottom. Pour cherry filling mixture on top of chocolate and spread to cover. Top with remaining chocolate mixture. Let cool completely, about 30 minutes. Cut into bars.

  • Combine milk and lemon juice. Fold in cherries. In another bowl, beat cream until stiff peaks form. Gently fold cream and pecans into cherry mixture., Spread into an ungreased 11x7-in. dish; sprinkle with wafer crumbs. Freeze, covered, until firm. Remove from freezer 15 minutes before cutting. May be frozen up to 2 months.
