4 ounces mushrooms, sliced
2 cups cheddar cheese, grated
1 (2 7/8 ounce) can French fried onion rings

Steps:

  • Butter a casserole dish. Put a layer of asparagus on bottom then add soup.
  • Next add mushrooms and half the cheese. Add second layer of asparagus and end with a layer of cheese.
  • Bake at 350 degrees for 30 minutes or until bubbly. Sprinkle onion rings on top and return to oven for 5 minutes more.
  • Serve hot.

Two bunches fresh asparagus
4 tablespoons butter
4 tablespoons all-purpose flour
1 cup milk
Pinch salt
5 ounces Cheddar, grated
4 hard-boiled eggs
1/2 cup saltine cracker crumbs (about 10 crackers)

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the asparagus to a large pot of boiling water, keeping the bundles together with rubber bands or string. Cook for a couple of minutes; the asparagus should be bright green and still crunchy. List the bundles out of the water and slice off the tough ends of the asparagus. Drop the trimmed ends back in the boiling water and lower to a simmer.
  • Run the asparagus tops under cold water to stop the cooking.
  • Melt the butter in a medium saucepan. Whisk in the flour to make a roux. Cook for 1 minute, then whisk in the milk and 1 cup of the asparagus cooking liquid. Add the salt and continue cooking until the sauce thickens, about 5 minutes. Add the grated Cheddar and cook, stirring, until melted, about 1 minute.
  • Arrange the asparagus in the bottom of a 9-by-12-by-2-inch baking dish, alternating the stem ends so each serving includes both heads and stems. Thinly slice the hard-boiled eggs and arrange them over the asparagus. Pour the cheese sauce over the eggs and asparagus and sprinkle with the cracker crumbs. Bake until lightly browned and bubbles appear around the edges, about 20 minutes.

Steps:

  • Heat oven to 400°F. Heat asparagus, ham, milk, soup and 3/4 cup of the cheese to boiling in 3-quart saucepan, stirring constantly. Boil and stir 1 minute. Spread in ungreased 2-quart casserole.
  • Stir Bisquick mix, milk and remaining 1/4 cup cheese in small bowl until blended. Pour evenly over ham mixture.

This is something I've been wanting to make for a while. I just whipped it up last night for ze boyfriend and we were both happy with how it turned out. Measurements aren't listed perfectly, so you can also wing it. For best results, get all ingredients from Trader Joe's®.

1 teaspoon butter, or as needed
1 bunch fresh asparagus, trimmed and cut into thirds
¾ cup heavy whipping cream
salt and ground black pepper to taste
1 (8 ounce) wedge Brie cheese, cut into small chunks
¼ cup bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook orecchietta pasta in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain and transfer pasta to a casserole dish.

1 cup chopped carrots
1 cup chopped onions
1 cup chopped celery
1 pound ground beef

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish (such as Pyrex®) with cooking spray.
  • Heat oil in a pan over medium-high heat. Add carrots, onions, and celery and saute until onions are translucent, 5 to 7 minutes.

2 bunches asparagus (about 2 pounds), cut into 2-inch pieces (about 6 cups)
4 thick-slices bacon (about 4 ounces), chopped (about 1 cup)
2 tablespoons unsalted butter
1/4 cup finely chopped onion (from 1/2 a small onion)
Pinch of freshly grated nutmeg
1/8 teaspoon cayenne pepper
Coarse salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
2 cups whole milk
4 large hard-boiled eggs, halved lengthwise
1 cup butter crackers (such as Ritz), coarsely crushed (about 2 ounces)
1 cup shredded gruyere cheese (about 2 1/2 ounces)

Steps:

  • Preheat oven to 350 degrees with rack in the upper third. Bring a pot of salted water to a boil; prepare an ice bath. Add asparagus and cook until just tender and bright green, 2 to 3 minutes. Transfer to ice bath; drain.
  • Return pot to medium heat. Add bacon and cook, stirring occasionally, until crisp, about 10 minutes; remove bacon with a slotted spoon to a paper towel-lined plate. 3 tablespoons unsalted butter
1/2 medium sweet onion, chopped
1/2 lb fresh asparagus, washed and cut in 1 inch pieces
1 (4 ounce) can mushroom stems and pieces, drained
2 tablespoons flour
1 (14 1/2 ounce) can low sodium chicken broth
3 ounces cream cheese
1 (7 ounce) can albacore tuna in water, drained
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper
salt, to taste
1 (7 1/2 ounce) can refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 450 degrees.
  • Melt 2 TBS of the butter in a 10" or 12" skillet over medium heat.
  • When butter stops foaming, add chopped onion and cook until it starts to soften.
  • Add prepared asparagus and 1 TBS of the chicken broth.
  • Cover and steam 5 minutes or until asparagus is tender-crisp and liquid has evaporated.
  • Add the remaining 1 TBS of butter.
  • When melted, add 2 TBS flour and cook while stirring for 1 minute.
  • Slowly add chicken broth a few TBS at a time, stirring constantly to blend in flour and make a smooth sauce.
  • Add remaining ingredients (EXCEPT for biscuits) and cook until cream cheese is melted and sauce is smooth.
  • Adjust seasonings to taste.
  • Place tuna and vegetable mixture in a lightly oiled 3 quart casserole.
  • Put in preheated oven and cook 10 minutes or until bubbling.
  • Remove from oven and top with refrigerator biscuits.
  • Return to oven and bake for 10 additional minutes or until biscuits are golden brown.
  • Allow to cool 5 - 10 minutes before serving.

Mrs. Bice was a member of my grandparent's church when I was growing up. I remember this casserole from the funeral lunches the UMW would prepare for the family before or after the service. Mrs. Bice's original recipe calls for 3 cans of asparagus spears, but I prefer fresh or high quality frozen cooked. You need enough to cover the bottom of your pan completely. Asparagus lovers like me say "the more the better!" This was always served as a side dish, but I often make it as a meatless main dish.

Number Of Ingredients 8

1 -2 lb fresh asparagus
2 cups Ritz cracker crumbs, divided
3 cups shredded cheddar cheese, divided (I like sharp cheddar)
3 -4 hard-boiled eggs, chopped fine
1 (4 ounce) jar pimentos, drained
1/3 cup butter
1/3 cup flour
2 1/2-3 cups milk (or you can use half milk and half chicken broth)

Steps:

  • Steam or cook asparagus as desired. I always leave the spears whole, but it may be easier for serving to cut them in half.
  • Sprinkle 1 cup Ritz cracker crumbs in bottom of prepared 13"x9" casserole.
  • Sprinkle 1 1/2 cups cheese over crumbs.
  • Layer all asparagus over cheese.
  • Sprinkle chopped eggs over asparagus.
  • Prepare cream sauce:.
  • Blend flour and butter over medium heat until it makes a paste.
  • Add liquid, seasoning with salt and pepper to taste.
  • Cook, stirring constantly, until bubbly and thick, adding more liquid as needed.
  • Spread cream sauce over eggs.
  • On top of sauce, sprinkle pimento, remainder of cheese, topping with remaining Ritz cracker crumbs.
  • Bake at 350 about 40 minutes until bubbly and cheese is turning light brown.
