Black-Eyed Peas with Escarole, Potatoes, and Turkey Sausage image

A Southern-style stew of black-eyed peas, escarole, potatoes, and lean turkey sausage is not only nutritious but especially gratifying on a chilly evening.

Number Of Ingredients 11

1/2 pound black-eyed peas (1 1/4 cups), picked over and rinsed
1 large onion, finely chopped
Two 14 1/2-ounce cans low-sodium chicken broth, or homemade, skimmed of fat
2 cups water
1 pound small white or red potatoes
2 pounds turkey sausage
1 1/2 tablespoons unsalted butter
3 garlic cloves, minced
1 1/4 pound head escarole, trimmed and coarsely chopped
1/4 teaspoon coarse salt
Freshly ground pepper

Steps:

  • Place the peas in a large stockpot, and pour enough water to cover by 2 inches. Soak for at least 6 hours or overnight. Drain and rinse, and return to the pot. Add the onion, broth, and water; bring to a boil, reduce the heat, and simmer until peas are tender, about 30 minutes.
  • Meanwhile, place potatoes in a medium saucepan, and add cold water to cover by 1 inch. Simmer until potatoes are tender, about 25 minutes. Drain and let cool, and cut into quarters.
  • In a grill pan or under a broiler, cook the sausage, turning occasionally, until nicely browned and cooked through, 12 to 15 minutes. Cut into 2-inch pieces.
  • Melt butter in a large nonstick skillet over medium heat. Add garlic, and cook until golden. Add escarole; cook, stirring until tender, 8 to 10 minutes.
  • Add potatoes and escarole to black-eyed peas, and cook over medium heat until mixture returns to a simmer. Divide among six shallow soup bowls, and arrange sausage links on top. Season with the salt and pepper.

1 smoked turkey leg
3 links hot beef link sausage, diced
¼ cup finely chopped onion
1 tablespoon garlic salt
1 teaspoon ground black pepper
1 teaspoon seasoned salt
6 cups water, or as needed
3 (16 ounce) packages frozen black-eyed peas
1 teaspoon white sugar

Steps:

  • Place the smoked turkey leg, sausage, onion, garlic salt, black pepper, and seasoned salt into a large soup pot; pour in water to cover. Bring to a boil over medium heat. Reduce heat and simmer until the meat is tender, about 1 hour.
  • Stir the black-eyed peas into the soup, adding more water as needed to cover peas by 1 inch. Bring to a boil. Again reduce heat and simmer until the peas are tender and have begun to break apart, about 1 more hour.
  • Remove turkey bones and tendons from the turkey meat and discard the bones. Add sugar and simmer until the soup is slightly creamy and thickened, stirring frequently, about 10 minutes

1 pound smoked sausage
1 cup chopped yellow onion (1 medium)
1/2 teaspoon salt
1/4 teaspoon cayenne
4 cloves of garlic
5 sprigs of fresh thyme
4 bay leaves
3 teaspoons finely chopped parsley
8 cups chicken stock
1 pound black-eyed peas
1 tablespoon minced garlic
6 cornbread muffins
1 tablespoon chopped green onions

Steps:

  • In a large pot, over medium heat, render the sausage for 5 minutes. Stir in the onions, salt, cayenne, garlic, bay leaves, thyme and parsley. Saute for 5 minutes, or until the onions are wilted. Stir in the chicken stock, peas and garlic. Bring the liquid up to a simmer and cook for 1 1/2 hours, or until the peas are tender. Spoon the peas and sausage in the center of a shallow bowl. Garnish with green onions. Serve with cornbread muffins.

Okay, I've comepletely changed this recipe, so it is no longer from the Southern Living 1986 Annual Recipe book. Please ignore the rating, it comes from the recipe that was originally here. The recipe you will find here now is how I usually fix black-eyed peas, although the amounts are guesstimates, since I rarely measure ingredients unless I am trying a new recipe. This recipe goes well with cornbread, rice or stewed tomatoes. You can leave out the sausage if you like.

This is based on a favorite recipe from a friend, but modified to be lower in fat: (1) uses Italian turkey sausage instead of regular Italian sausage; (2) halved the amount of sausage used in the original recipe; (3) cooked sausage in water instead of frying in oil as per the original recipe; (4) replaced cheddar with 2% milk sharp cheddar cheese. Even with these modifications, this dish packs plenty of flavor -- I don't miss a thing from the original recipe.

2 (15 ounce) cans black-eyed peas
1/2 lb hot Italian turkey sausage
1/2 cup chopped onion
1 (15 ounce) can diced tomatoes, drained
salt, to taste
pepper, to taste
reduced-fat sharp cheddar cheese, shredded, for topping
hot pepper sauce, to taste

Steps:

  • Cook sausage in a little water in a large skillet over low-to-medium heat. Break up sausage with a spoon; continue cooking and stirring until sausage is no longer pink. Drain any remaining water (if needed).
  • Add onion to sausage in skillet. Continue cooking over low-to-medium heat until onion is tender; about 5 minutes.
  • Open cans of diced tomatoes and black-eyed peas. Drain canned tomatoes and one can of black-eyed peas, but do not drain the second can of peas.
  • Add tomatoes (drained) and black-eyed peas (one drained, one with liquid) to the sausage and onion mixture in skillet. Simmer, covered, for 30 minutes over low heat.
  • Salt and pepper to taste, if desired.
  • Sprinkle shredded cheddar cheese over skillet mixture.
  • Serve with hot pepper sauce on the side, so each person may spice up his/her individual serving.

1 pound Andouille sausage, diced
½ cup unsalted butter
1 teaspoon cayenne pepper
salt and freshly ground black pepper to taste
2 (15 ounce) cans black-eyed peas, rinsed and drained
4 cups chicken stock
1 cup heavy cream
1 (10 ounce) package frozen whole okra

Steps:

  • Heat olive oil in a large pot or dutch oven over medium heat. Stir in onion, celery, shallot, and garlic. Cook for 2 minutes.
  • Add diced sausage to the pot and cook for 2 to 3 minutes. Remove some of the sausage for garnish and set aside. Add butter, cayenne pepper, salt, and pepper; cook for 3 to 4 minutes. Add peas and cook for 3 to 5 minutes. Pour in chicken stock, bring to a simmer, reduce heat to low, and simmer for 15 minutes.
  • Stir in heavy cream. Remove 1/2 of the soup and puree in a blender. Return pureed black-eyed pea mixture to the pot and continue cooking on low, stirring well, for 3 to 5 minutes.
  • Meanwhile, add okra to a cast iron skillet and cook over medium-high heat until they are well charred, 3 to 4 minutes. Add okra to black-eyed peas and serve garnished with reserved sausage pieces.

1 small onion, chopped

1 cup beef broth
1/4 teaspoon garlic powder
