Blackberry Sauce image

A shiny, deep colored sauce that is especially good over ice cream, bread pudding, shortcake, pound cake or anything your heart desires. Nothing could be easier, more natural or more delicious! This is a no cooking! This sauce can be made in the time it takes to use your food mill! From Room for Dessert.

1 pint blackberry (2 cups)
3 tablespoons sugar (more or less depending on your personal taste)
1/4 teaspoon lemon juice

Steps:

  • Puree the berries through a food mill or in a food processor and press them through a fine-mesh sieve to remove their seeds.
  • Whisk in the sugar and lemon juice, whisking until the sugar dissolves.
  • Taste for sweetness and adjust, if necessary.

1 16-ounce bag frozen unsweetened blackberries, thawed
3/4 cup sugar
2 tablespoons fresh lemon juice
1 to 2 tablespoons brandy (optional)

Steps:

  • Puree all ingredients in processor. Strain into medium bowl, pressing on solids to extract as much liquid as possible. Cover and refrigerate until cold. (Can be made 2 days ahead. Keep refrigerated.)

1 tablespoon sugar
1 tablespoon butter, softened
1 1/2 cups powdered sugar
1 egg white

Steps:

  • Wash blackberries and put them in a bowl with the granulated sugar.
  • Mash the berries with a fork to bring the juices out.
  • In another bowl, mix together thoroughly the butter and powdered sugar.
  • Stir in the egg white, stiffly beaten, and add the berries just before serving.
  • You can serve this over custards, ice creams, cakes-- your favorite desserts!

When blackberries have reached your desired stage (they can be cooked until just soft or cooked longer if you wish them to break apart) add the cornstarch slurry. Mix; the sauce should start to thicken immediately. Remove from heat. The sauce will be thicker once cooled.
  • Mix together lemon juice and water. In a small cup, add the cornstarch. Slowly while stirring, add in the lemon juice water mixture. If this mixture sits, the cornstarch will thicken on the bottom of the cup. Just stir together before using.
