My easy and light baked flounder is a fantastic combination of tender flounder fillets and a crispy Panko and Parmesan breadcrumb topping! It's a delicious dinner that you can have in the oven, baked to perfection, and served in 20 minutes!

2 lbs founder fillets ((thawed if from frozen))
1/2 cup Panko breadcrumbs
1/2 cup Parmesan cheese ((grated))
1 1/2 Tbsp olive oil ((extra virgin))
each, salt & pepper ((optional, to taste))
lemon wedges ((optional - zest half your lemon if desired))

Steps:

  • Preheat your oven to 425°F (218°C) and pat the flounder fillets with paper towels to thoroughly dry all surfaces.
  • Place flounder fillets on a baking sheet covered with parchment paper and season with salt and pepper.
  • In a small mixing bowl combine the Panko, Parmesan cheese, and olive oil until the breadcrumbs are slightly moistened. Sprinkle the Panko mixture over the fillets.
  • Bake at 425°F (218°C) for 15 minutes or until the flounder reaches desired doneness.
  • Remove from oven and serve immediately with lemon wedges.

1/4 teaspoon garlic powder
1/4 teaspoon salt ( do not use if adding capers)
1/4 teaspoon paprika
1/4 teaspoon oregano
1 tablespoon capers (optionally)
lemon
oil spray
1 teaspoon butter (optionally)

Steps:

  • Clean fish fillets. Season with salt (only if not using capers, otherwise it will be too salty), black pepper, garlic and onion powder. Add paprika and oregano.
  • Spray air fryer basket with oil. Lay sliced lemon in the basket. Place seasoned flounder fillets on top of lemon. Place capers on top along with butter (if using)
  • Cook at 375 degrees for 7 minutes.

1 cup dry bread crumbs
¼ cup vegetable oil
4 flounder fillets
1 egg, beaten
1 lemon, sliced

Steps:

  • Preheat an air fryer to 350 degrees F (180 degrees C).
  • Mix bread crumbs and oil together in a bowl. Stir until mixture becomes loose and crumbly.
  • Dip fish fillets into the egg; shake off any excess. Dip fillets into the bread crumb mixture; coat evenly and fully.
  • Lay coated fillets gently in the preheated air fryer. Cook until fish flakes easily with a fork, about 12 minutes. Garnish with lemon slices.

6 flounder fillets, about 1/4 inch thick
1/4 cup olive oil

Steps:

  • Combine paprika, parsley, salt, garlic powder, onion powder, cayenne pepper, black pepper, thyme and oregano in a small bowl and mix well. Dip fish fillets in olive oil. Sprinkle both sides of each fillet with the paprika mixture. Heat a cast-iron skillet over high heat until smoking. Arrange fillets in a single layer on the hot skillet. Cook the flounder, turning once, until blackened, about 2 to 3 minutes per side. Serve immediately.

¼ teaspoon salt
3 tablespoons lemon juice, divided
½ cup grated Parmesan cheese
¼ cup butter, melted

3 tablespoons chopped green onions

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with nonstick cooking spray.
  • Season both sides of flounder fillets with salt. Place into the prepared baking dish. Brush 1 tablespoon lemon juice over fillets.
  • Mix remaining lemon juice, Parmesan cheese, melted butter, mayonnaise, and green onions in a bowl; spoon over the fillets.
