BLACKENED RED SNAPPER SOFT TACOS WITH LIME-CILANTRO DRESSING
Steps:
- Whisk sour cream, 1/2 cup cilantro, and lime juice in medium bowl. Season with salt and pepper. DO AHEAD: Dressing can be made 1 day ahead. Cover and chill. Whisk cumin, salt, and chipotles in small bowl to blend. Brush spice mixture over both sides of fish fillets; sprinkle with salt and pepper. Heat vegetable oil in heavy large skillet over high heat. Add fish and cook until blackened on both sides and opaque in center, about 3 minutes per side. Transfer fish to cutting board and cut or break into small pieces. Heat another heavy large skillet over high heat. Lightly brush 1 side of each tortilla with melted butter. Working in batches, place tortillas, buttered side down, in skillet. Cook until soft, about 20 seconds per side. Arrange tortillas, buttered side up, on platter. Divide fish among tortillas. Top each with about 2 tbsps each green cabbage and red cabbage. Sprinkle with chopped tomatoes and remaining 1/2 cup cilantro. Drizzle with lime-cilantro dressing and serve.
BLACKENED SHRIMP STREET TACO WITH RED SNAPPER CEVICHE
Steps:
- For the red snapper ceviche: In a bowl, mix together the snapper, lime juice, red onion, cilantro, jalapeno, garlic and tomato. Season with salt. Chill until ready to serve.
- For the taco mix: Sprinkle the shrimp with the Blackening Spice. Heat the oil in a large skillet over high heat. Add the shrimp and sear for 2 minutes on each side. Let stand.
- In a bowl, combine the cabbage, radishes, cilantro, lime juice and a pinch of salt. Toss well and set aside.
- For the "mock"-amole: Puree the peas in a food processor. Add the lime juice, red onions, red peppers, cilantro, Sriracha and cumin; pulse until well mixed. Season with salt and pepper.
- To assemble: Heat the tortillas in a dry skillet until soft. Stack two tortillas on each serving plate, spread with "mock"-amole and top with shrimp and cabbage slaw. Serve the ceviche on the side. Garnish with lime wedges.
- Mix all the ingredients together in a bowl until well blended. Store in an airtight container.

PAN-FRIED BLACKENED RED SNAPPER
This is a recipe that I came up with one night after finding some red snapper in the freezer. It can also be done with catfish, flounder, perch, or pretty much any white fish. Remember that the thinner the fillet, the shorter the cook time.

Steps:
- Place half of the jalapeno rings, half of the ginger and the cilantro stems in the cavity of the fish. Place the fish in a 14-by-9-by-2-inch oval dish. Coat both sides of fish with the lime juice. It is fine for the tail to hang over the edge of the dish. Scatter the remaining jalapeno, ginger and cilantro leaves around the fish.
- Cover the dish tightly with microwave plastic wrap, making sure the tail is well covered and plastic adheres to dish. Cook at 100 percent power in a high-power oven for 11 minutes. Prick plastic to release steam.
- Remove from oven and uncover. Sprinkle the salt into the broth made by the fish. Serve immediately, spooning the broth over the fish.

- Combine sour cream, cilantro, lime juice and jalapeños in a food processor or blender; process until smooth. Toss onions and cabbage with the cilantro lime sauce. (the slaw can be made up to a day ahead. Refrigerate until ready to use.)
- preheat oven to 350ºF Stack tortillas and wrap them in foil. Heat them in the warm oven for 5-10 minutes.
- Turn on your hood vent. Heat a large dry cast iron skillet over medium-high heat until hot. (if you don’t have a cast iron skillet, heat your grill) Lay fish out on a platter or on waxed paper. Brush a little oil on each side and sprinkle the top of each fillet with 3/4 teaspoon of spice mix. Place 2 fillets, spiced-side down, in the pre-heated skillet. Then sprinkle the top side of each fillet with 3/4 teaspoon of spice mix. Cook for 2 1/2 – 3 minutes per side, or until spices are blackened and fish is cooked through. Transfer fish to a platter and tent with foil to keep warm. Wipe the pan clean to avoid a burnt taste. (blackened is not the same as burnt!) Repeat with the other two fillets.
