BLOODY MARY SHRIMP COCKTAIL

1 cup ketchup
1/2 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon soy sauce
1/2 teaspoon vodka
1/2 lemon, zested and juiced
Kosher salt and freshly ground black pepper
16 peeled and deveined cooked extra-large shrimp (about 1 pound), tail on
1/2 celery stalk, finely diced, plus 16 small celery stalks with leaves, for garnish

Steps:

  • Mix together the ketchup, horseradish, Worcestershire sauce, soy sauce, vodka and lemon zest and juice. Season with salt and pepper.
  • Transfer the sauce to 16 shot glasses, then top each with a shrimp and a sprinkle of diced celery. Place a celery stalk with leaves into each glass.

3 tbsp olive oil
1 shallot, finely chopped
1 fat garlic clove, thinly sliced
½ tsp celery seeds
14-16 large raw king prawns, heads removed but tail left on, deveined
2 tsp cornflour
¼ tsp cayenne pepper
¼ tsp black pepper
50ml vodka
100ml passata
3 tbsp tomato ketchup
few shakes of Tabasco sauce, depending on how hot you like it
celery sticks and good crusty bread, to serve

Steps:

  • Heat the oil in a large frying pan or wok. Add the shallot and fry for 1-2 mins until softened. Add the garlic and celery seeds, and sizzle for 1 min more, then turn the heat up to high. Toss the prawns with the cornflour, cayenne and black pepper. Add to the pan and stir-fry for 1 min until turning pink, then add the vodka (stand back as it may catch fire) and bubble until most of the liquid has evaporated.
  • Add the passata, ketchup, Tabasco and a good pinch of salt. Give everything a stir and cook for 1 min more, then transfer to a serving dish. Scatter with celery leaves and place in the centre of the table with celery sticks and chunks of bread for mopping up the sauce.

For shrimp
1 pound medium shrimp in shell, peeled and deveined
1 1/2 cups thinly sliced celery (3 to 4 ribs)
1 cup thinly sliced scallions (about 6)
For sauce
1/2 cup ketchup
1/4 cup vodka (preferably Absolut Peppar)
1/4 cup fresh lemon juice
2 tablespoons bottled horseradish (not drained), or to taste
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
Equipment: Chinese soupspoons
Garnish: diced avocado (optional)

Steps:

  • Prepare shrimp:
  • Bring a large saucepan of salted water (2 tablespoons salt for 2 quarts water) to a boil. Add shrimp, then remove from heat and let stand in water until cooked through, about 5 minutes. Drain in a colander and cool to room temperature, about 30 minutes. Cut shrimp into thirds and transfer to a large bowl with celery and scallions.
  • Make sauce:
  • Whisk together all sauce ingredients, 1/4 teaspoon pepper, and 3/4 teaspoon salt, or to taste.
  • Just before serving, stir sauce into shrimp mixture. Spoon 2 shrimp pieces with vegetables and sauce into each soupspoon and arrange spoons on a platter.

4 tablespoons Bloody Mary dry spice mix (such as Lucille's®), divided
2 tablespoons olive oil
1 (8 ounce) can sliced water chestnuts, drained
3 scallions, cut into 1-inch pieces, or more to taste
1 jalapeno pepper, seeded and minced
3 cloves garlic, slivered
32 colossal shrimp, shelled and deveined with tail on

Steps:

  • Combine tomato juice and 2 tablespoons Bloody Mary spice mix in a large jar with a lid and shake vigorously for 15 seconds. Set aside.
  • Heat oil lin a large pan over medium heat. Add water chestnuts, scallions, jalapeno pepper, garlic, and about 2/3 the Bloody Mary-tomato juice mixture. Cook 2 minutes.
  • Place shrimp in a bowl and sprinkle with remaining Bloody Mary spice mix. Add them to the pan with the tomato juice mixture. Cook and stir until shrimp are opaque and curl slightly, 2 to 3 minutes.

6 cups water
1 lemon, halved
1 cup dry white wine
1 bay leaf
1/2 teaspoon peppercorns
Salt
1 bottle of your favorite vodka
1 bottle of a good store bought Bloody Mary mix
1 teaspoon cracked pepper
Hot sauce, to taste
Worcestershire sauce
Olive juice, to taste
Bamboo skewers, soaked in water for 30 to 60 minutes

Steps:

  • 1 pound large shrimp, peeled and deveined
  • Place 6 cups of water in a medium saucepan. Add lemon halves, white wine, bay leaf, peppercorns and salt, to taste. Bring to a boil and add the shrimp. Cook for 1 minute or until the shrimp turn pink. Immediately plunge shrimp into a bowl of ice water to stop the cooking process. Strain the shrimp and place into a bowl in the refrigerator until ready to use. In a large pitcher, mix 1-ounce vodka for every 6 ounces Bloody Mary mix. Season with cracked pepper, hot sauce, Worcestershire sauce, olive juice and shake. Serve in decorative glasses with skewered shrimp as garnish.

salt and black pepper to taste

Steps:

  • Lightly mix the shrimp, tomatoes, red onion, cucumber, and cilantro in a bowl, and pour in the Bloody Mary mix. Squeeze the limes over the mixture, add a dash of hot pepper sauce, and sprinkle with salt and pepper. Toss again, cover the bowl, and refrigerate for 3 to 4 hours, stirring occasionally.

1/4 cup olive oil
3 jalapeno peppers, seeded and minced
5 garlic cloves, minced
2 medium ripe avocados, peeled and cubed

Steps:

  • In a large bowl, combine the first 10 ingredients. Chill until serving. Just before serving, stir in avocado.
