CLASSIC GREEN BEANS AU GRATIN



Classic Green Beans Au Gratin image

This classic au gratin recipe is one of my favorites. Perfect next to your holiday ham or turkey, this green bean casserole has a creamy, rich cheese sauce that enhances, but doesn't cover up, the green beans, so they are still the star of the show. Even though your family's probably expecting the same old green bean casserole you've been making for decades (the one with condensed soup, a ton of cheese, and way too many bread crumbs or French-fried onions), once they try this one, it might become a new holiday trend!

1 tablespoon unsalted butter, softened
1 ¼ pounds fresh green beans
freshly ground black pepper to taste
kosher salt to taste
2 teaspoons Dijon mustard, or more to taste
1 ½ cups heavy cream
2 ounces Comté cheese, grated
2 tablespoons freshly grated Parmigiano-Reggiano cheese
2 tablespoons unsalted butter, melted
⅓ cup dry bread crumbs
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Generously grease a casserole dish with 1 tablespoon butter. Bring a generously salted pot of water to a rolling boil over high heat.
  • Remove stems from beans by trimming with a knife or snapping them off with your fingers. Cut beans in half.
  • Add beans to the boiling water, stir, and cook until just barely tender, 5 to 6 minutes, testing often to make sure you don't overcook them.
  • Remove beans with a strainer and immediately place in a bowl of cold water to stop the cooking process.
  • Once beans have cooled to the touch, use your hands to drain and transfer them into the prepared casserole. It's okay if they're still a bit wet.
  • Season beans with pepper, kosher salt, and Dijon mustard; mix until beans are well coated. Pour in cream, scatter Comté cheese over top, and sprinkle with Parmigiano-Reggiano.
  • Combine melted butter and bread crumbs in a small bowl. Stir until well combined and mixture resembles wet sand. Spoon and sprinkle bread crumbs over the casserole, then dust with cayenne.
  • Bake in the center of the preheated oven until browned and bubbly, 15 to 20 minutes.
  • Let cool for 10 minutes before serving.

A green bean gratin we have served for years on Thanksgiving. It beats regular green bean casserole by a thousand!

10 slices bacon
1 cup water
2 cups frozen cut green beans
3 tablespoons all-purpose flour
½ cup heavy cream
¾ cup shredded sharp Cheddar cheese
½ cup dry bread crumbs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a casserole dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes.
  • Meanwhile, bring water to a simmer. Add green beans and cook until tender, 5 to 10 minutes. Drain beans, reserving cooking liquid. Drain bacon slices on paper towels, reserving grease in the skillet. Crumble bacon.
  • Heat 3 tablespoons of the reserved grease. Stir in flour until blended and nutty in color. Add reserved cooking liquid and cream, whisking constantly until smooth and thick, about 5 minutes. Fold in beans and Cheddar cheese. Pour into the prepared baking dish. Cover with bread crumbs.
  • Bake in the preheated oven, uncovered, until hot and bubbling, 30 to 35 minutes. Sprinkle bacon on top before serving.

This green bean casserole makes a wonderful French side dish - made using green beans, Progresso® bread crumbs and chicken broth.

2 bags (12 oz each) frozen cut green beans
1/2 cup butter or margarine
1 small onion, finely chopped (1/4 cup)
2 tablespoons Gold Medal™ all-purpose flour
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 cup sour cream
1 1/2 cups Progresso™ panko crispy bread crumbs
1/2 cup freshly grated Parmesan cheese

Steps:

  • Heat oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook green beans as directed on bag; set aside.
  • Meanwhile, in 3-quart saucepan, melt 1/4 cup of the butter over medium-high heat. Cook onion in butter 4 minutes, stirring occasionally, until tender. Reduce heat to medium. Sprinkle onion with flour; cook 3 minutes longer, stirring constantly. Stir in broth. Heat to boiling. Remove from heat. Stir in black pepper, salt, red pepper and sour cream with wire whisk until blended. Stir in green beans. Spoon mixture into baking dish.
  • In medium microwavable bowl, microwave remaining 1/4 cup butter uncovered on High until melted. Add bread crumbs and cheese; mix until blended. Sprinkle evenly over green bean mixture.
  • Bake uncovered 20 to 23 minutes or until bubbly and topping is golden brown.

1 tablespoon vegetable oil
8 ounces green beans, trimmed
1 tablespoon Worcestershire sauce
1 tablespoon sriracha or other hot sauce
Fresh lemon juice, as needed
2 ounces crumbled blue cheese

Steps:

  • In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

1 1/2 lbs fresh green beans, washed and trimmed
3 ounces blue cheese
1 pint heavy cream (no substitutes)
1/4 cup melted butter (no substitutes)
1/2 cup plain breadcrumbs
1/4 teaspoon fresh ground pepper, to taste

Steps:

  • Pre cook beans in lightly salted water about 5 to 6 minutes.
  • While beans are cooking, mix bread crumbs and butter.
  • Drain beans in bowl lined with paper towels to absorb moisture.
  • Put about 1/3 of the crumb mixture in bottom of lightly sprayed casserole dish.
  • Add green beans, crumbled bleu cheese and heavy cream.
  • Add the rest of crumb mixture and season to taste with pepper.
  • Bake at 350 for about 15 min.until bubbly.
  • Let rest for about 5 minute before serving, as it will be extremely hot and could burn your mouth!

1 tablespoon crumbled blue cheese
1-1/2 teaspoons grated Parmesan cheese

2 tablespoons olive oil
1 pound fresh green beans, trimmed
4 bacon strips, cooked and crumbled

Steps:

  • Place the first eight ingredients in a blender; cover and process until combined. Gradually add oil in a steady stream, processing until smooth; set aside. , Place the beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain and place in a serving bowl. Drizzle with the blue cheese mixture and sprinkle with bacon.

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, cook and stir the beans for 8-10 minutes or until crisp-tender. Add the blue cheese, pecans, pepper and bacon. 1 onion (sliced)

1 (8 ounce) package cremini mushrooms (sliced or quartered)
2 garlic cloves (chopped)
1 teaspoon thyme (chopped)

1 splash sherry wine (or white wine)
1 lb green beans (trimmed and cut into bite sized pieces)
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 cup blue cheese (crumbled)
salt and pepper
1/4 cup panko breadcrumbs
1 handful French-fried onions (home made or canned)

Steps:

  • 1. Melt the butter in a pan.
  • 2. Add the onions and slowly cook until they caramelize, about 20-30 minutes.
  • 3. Add the butter and let it melt.
  • 4. Add the mushrooms and saute until the mushrooms start to caramelize, about 10-15 minutes.
  • 5. Add the garlic, thyme, salt and pepper and saute until fragrant, about a minute.
  • 6. Add the sherry and deglaze the pan.
  • 7. Add the green beans and saute until bright green and just starting to turn tender but still crisp, about 5 minutes.
  • 8. Melt the butter in a small sauce pan.
  • 9. Add the flour and stir until lightly golden brown.
  • 10. Add the milk and simmer until it thickens.
  • 11. Add the blue cheese and simmer until it melts.
  • 12. Add the green beans and mushrooms and toss to coat.
  • 13. Pour the mixture into an 8x8 inch baking dish.
  • 14. Top with the panko bread crumbs and french fried onions.
  • 15. Bake in a preheated 400F oven until the sides are bubbling and the top is golden brown, about 5-10 minutes.
