Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Cut off enough from the bottom of the onion for it to sit flat. Scoop out 1/3 of the flesh starting from the top of the onion. Fill the core with blue cheese.
  • Wrap the onion in aluminum foil and grill, blue cheese-side-up, until tender, about 40 minutes.

1 carton (8 ounces) reduced-fat spreadable chive and onion cream cheese
1 cup (4 ounces) crumbled blue cheese
4 green onions, chopped
2 garlic cloves, minced
3/4 cup bacon bits, divided

Steps:

  • Remove stems from mushrooms and set caps aside; discard stems or save for another use. In a small bowl, combine the cream cheese, blue cheese, onions, garlic and 1/4 cup bacon bits. Stuff into mushroom caps, a scant tablespoonful in each., Place in a greased 15x10x1-in. baking pan. Sprinkle with remaining bacon bits. Bake, uncovered, at 375° for 18-22 minutes or until mushrooms are tender.

Steps:

  • Preheat broiler. Remove stems from mushrooms; chop stems. Cook and stir stems and onions in butter in small skillet on medium heat until tender.
  • Add blue cheese and cream cheese; mix well. Spoon evenly into mushroom caps; place on rack of broiler pan.
  • Broil 2 to 3 min. or until golden brown. Serve warm.

1/4 cup olive oil
1 small onion, finely chopped
4 cloves garlic, finely chopped
16 large button mushrooms, stems removed and finely chopped
2 cups fresh bread crumbs
1/4 finely chopped fresh parsley
Dash of hot pepper sauce
4 ounces Gorgonzola cheese, crumbled

Steps:

  • Use side burners or preheat grill. Heat oil in a medium saucepan over medium high heat. Add onions and garlic and cook until soft. Add mushroom stems and cook until golden brown. Remove from heat and add bread crumbs, parsley, hot pepper sauce and cheese. Mix until well combined (if mixture looks too dry, add more olive oil.) Season the mixture with salt and pepper to taste. Fill the mushroom caps with the mixture and brush the entire mushroom with more olive oil. Grill over medium heat until tender.

3 green onions, chopped (just greens)
2 slices bacon, crisped & crumbled fine
1/8 cup crumbled reduced-fat blue cheese

Steps:

  • Preheat oven to 375.
  • Wash the mushrooms and remove the stems from caps. Place on a paper towel to dry.
  • In a small bowl mix together the cream cheese, green onion, bacon pieces, and blue cheese.
  • Stuff all mushrooms with about 1/2 a tablespoon, or less, cheese mixture.
  • Transfer all mushrooms to a shallow baking dish and bake for aproximately 20-25 min (very light brown on top).

24 large mushrooms, cleaned and stemmed
3 tablespoons butter
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup chopped fresh parsley leaves
1 (8 ounce) package cream cheese, softened and cut into pieces
1/2 cup blue cheese, softened and cut into pieces*
1 tablespoon fresh squeezed lemon juice
2 tablespoons cream sherry (optional) or 2 tablespoons port wine (optional)
salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Remove stems from mushrooms; chop finely and set aside.
  • In a large frying pan over medium heat, melt butter.
  • Add chopped mushroom stems, onions, and garlic.
  • Saute approximately 5 to 6 minutes or until onions are translucent.
  • Reduce heat to low; add parsley, cream cheese, blue cheese, lemon juice, and cream sherry or port.
  • Stir until cheeses are melted and well blended.
  • Remove from heat.
  • Season to taste with salt and pepper.
  • Spoon cheese mixture into the mushroom caps, filling generously.
  • Place stuffed mushroom caps on a baking sheet with sides.
  • Bake approximately 8 to 10 minutes until mushrooms are cooked and cheese is melted.
  • Remove from heat and place mushrooms on a large serving plate or platter. Serve immediately.
