Time 2h10m

Yield 6 to 8 servings

Number Of Ingredients 13

1 1/2 cups all-purpose flour
2 tablespoons sugar
Pinch kosher salt
1/2 cup (1 stick) unsalted butter, cold, in chunks
1 large egg, separated
2 tablespoons ice water, plus 1 teaspoon
4 large eggs
1 1/2 cups sugar
1 cup fresh lemon juice (about 5 lemons)
1/4 cup heavy cream
1 lemon, zested
Pinch kosher salt
1 pint blueberries

Steps:

  • To make the pastry, pulse the flour, sugar, and salt together in a food processor. Add the butter and pulse until the dough resembles cornmeal. Add the egg yolk and 2 tablespoons ice water and pulse again until the dough pulls together. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.
  • Roll the dough out on a lightly floured surface into a 12-inch circle. Roll the dough up onto the pin and lay it inside a 10-inch tart pan with a removable bottom. Press the dough into the edges of the pan and fold the excess dough inside to reinforce the rim. Cover the tart pan with plastic wrap and put it into the refrigerator for another 30 minutes to rest.
  • To bake the shell, heat the oven to 350 degrees F.
  • Put the tart pan on a baking sheet and prick the bottom of the dough with a fork. Cover the shell with a piece of parchment paper and fill it with pie weights or dry beans. Bake for 25 minutes. Remove the parchment and weights. Lightly beat the egg white with 1 teaspoon water and brush it onto the bottom and sides of the tart shell; set aside to cool.
  • Whisk together the eggs, sugar, lemon juice, cream, zest, and salt. Add the blueberries to the cooled tart shell and pour the filling over the blueberries. Bake for 20 to 25 minutes. The curd should jiggle slightly when done. Cool to room temperature, remove from the tart ring, and serve.

CLASSIC LEMON TART WITH COCONUT-ALMOND CRUST

Classic Lemon Tart with Coconut-Almond Crust image

Provided by Valerie Bertinelli

Categories     dessert

Time 4h15m

Yield 4 to 6 servings

Number Of Ingredients 17

1/4 cup desiccated coconut
1 1/2 cups all-purpose flour
1/4 cup almond flour
1/2 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, at room temperature
1/3 cup sugar
1 teaspoon almond extract
1 large egg
1 stick (1/2 cup) unsalted butter
1 cup sugar
1/4 teaspoon salt
3 large eggs plus 1 yolk
Zest of 3 lemons plus 1 cup lemon juice
1 cup heavy whipping cream
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt

Steps:

  • For the coconut-almond crust: Preheat the oven to 350 degrees F. Place the coconut on a baking sheet and toast in the oven until golden brown, about 3 minutes. Let cool. Set aside 2 tablespoons of the coconut for garnishing the tart.
  • Combine the remaining 2 tablespoons cooled toasted coconut, the all-purpose flour, almond flour and salt in a medium bowl; set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes. Add the almond extract and egg and beat until combined, scraping down the sides of the bowl as needed. Add the flour mixture and beat on low speed until all of the dry ingredients are just incorporated, about 30 seconds. Form the dough into a disc and press it evenly into the bottom and up the sides of a 10-inch nonstick tart pan with removable bottom; if necessary, use a piece of plastic wrap to help keep the dough from sticking. Refrigerate the tart shell until firm, about 1 hour, or freeze for 30 minutes.
  • Preheat the oven again to 350 degrees F.
  • Line the tart shell with aluminum foil and fill with pie weights. Place the tart shell on a baking sheet and bake until the edges of the crust are barely golden, about 15 minutes. Carefully remove the foil and weights and continue to bake until the crust is golden brown all over, about 20 minutes. Cool completely, then gently remove the tart shell from the pan and onto a plate.
  • For the lemon curd filling: Melt the butter in a large microwave-safe bowl, using the butter paper to make sure the butter does not splatter, usually about a minute on 40 percent power. Then, add the sugar and salt and whisk together. Add the whole eggs and egg yolk and whisk again. Add the lemon zest and juice and whisk well. Microwave for 1 minute. Remove carefully and whisk. Continue to microwave in 1-minute intervals, whisking after each minute, until the mixture is thick. It usually takes between 2 to 5 minutes, depending on the microwave. Note that the mixture will get thin before it gets thick.
  • Carefully remove the bowl from the microwave and push the curd through a fine-mesh sieve into another bowl. Press a piece of plastic wrap directly onto the surface of the curd and refrigerate until set, at least 2 hours.
  • For the whipped cream: Place the whipping cream, sugar, vanilla and salt in the bowl of a stand mixer fitted with the whisk attachment and whip until soft peaks form.
  • To assemble the tart: Pour the lemon curd into the tart shell and spread evenly. Place the whipped cream in a piping bag fitted with a plain tip and pipe a border around the edge of the crust. Sprinkle with the reserved toasted coconut. Allow the tart to chill in the refrigerator for at least 2 hours before slicing.

EASIEST AND BEST -BLUEBERRY-COCONUT TARTS

Easiest and Best -Blueberry-Coconut Tarts image

I made 1/2 the recipe first. But, I forgot and added 1 cup of coconut. Followed the recipe directions and prebaked shells for 10 min. Try to prick the shells on the bottom before baking. I forgot and nothing serious happened. Baked the tarts for 20 min. The filling was quite firm. We enjoyed them. I think I'll use double coconut all the time. I got 15 tarts. I had condensed milk left over so the next day I made more, 13 tarts this time. I didn't like the look of the mixture after the blueberries were mixed in yesterday, very blue looking. I even used frozen blueberries. You could add some flavoring if desired, taste the filling and see if you want to add anything more. Today I pre-baked the shells for 5 min. I put a few blueberries in the bottom of each shell, depending on size, I used 5-8 in each shell. These I baked for 15 minutes and they were a little runny in the middle. We liked them, there isn't any left. I think I'll try frozen raspberries next time. I'm posting the recipe the way it came to me.

BLUEBERRY-LEMON TART

Blueberry-Lemon Tart image

Yield Makes one 9-inch tart

Number Of Ingredients 12

1 disk Pâte Sablée (page 654)
1/2 cup sugar
3 tablespoons all-purpose flour, plus more for dusting
2 pinches of salt
1 cup low-fat buttermilk
2 large eggs, separated, room temperature
1/2 teaspoon pure vanilla extract
1 tablespoon freshly grated lemon zest
2 teaspoons fresh lemon juice
Pinch of cream of tartar
2 cups blueberries, picked over
1 tablespoon honey

Steps:

  • Preheat the oven to 375°F. Place a 9-inch cake ring on a rimmed baking sheet lined with parchment. Roll out the dough between sheets of parchment to an 11-inch circle (1/8 inch thick). Refrigerate 15 minutes. Peel off the parchment; press the dough into the ring. Trim flush with the top edge of the ring. Refrigerate until cold, about 30 minutes.
  • Prick the dough all over with a fork. Line the tart shell with parchment, and fill with pie weights or dried beans. Bake until the crust starts to turn golden, 20 to 25 minutes. Remove the parchment and weights; continue baking until pale golden, about 5 minutes more. Let cool on a wire rack.
  • Whisk together 1/4 cup sugar, the flour, and a pinch of salt; set aside. Whisk the buttermilk and yolks in a small saucepan over medium-low heat; gradually whisk in the sugar mixture. Cook, whisking constantly, until thickened, 5 to 7 minutes. Stir in the vanilla, zest, and juice. Transfer to a medium bowl set in an ice-water bath. Let cool completely, stirring occasionally.
  • Meanwhile, put the whites and cream of tartar in the bowl of an electric mixer fitted with the whisk attachment. Add a pinch of salt. Beat on low speed until foamy. With the mixer running, gradually add the remaining 1/4 cup sugar. On medium-high speed, beat until stiff, glossy peaks form.
  • Gently fold the pastry cream and 1 cup berries into the meringue. Pour the mixture into the tart shell, making swirls and peaks. Bake until golden, 40 to 45 minutes. Let cool on a wire rack. Remove the cake ring.
  • Meanwhile, heat the remaining cup berries and the honey in a medium skillet over medium-low heat, stirring gently, until just warm, about 2 minutes. Spoon the glazed berries over the tart.

LEMON-BLUEBERRY TART

Lemon-Blueberry Tart image

This glorious lemon-blueberry tart, filled with a tangy lemon curd, is topped with whipped creme fraiche and a garnish of candied lemon zest. Martha made this recipe on episode 706 of Martha Bakes.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Number Of Ingredients 10

6 lemons, scrubbed
2 cups granulated sugar
Superfine sugar, for coating
All-purpose flour, for dusting
Easy Pate Sucree for Tarts
Lemon Curd for Lemon-Blueberry Tart
1 cup creme fraiche
2 tablespoon confectioners' sugar
1 cup blueberries, washed and picked over
3 tablespoons apricot jam

Steps:

  • Make the candied lemon zest: Using a vegetable peeler, remove zest from lemons in vertical strips. Use a knife to remove any white pith; cut zest into thin strips as thinly as possible. Bring 4 cups water to a boil in a medium saucepan. Add zest; blanch for 1 minute, drain, and rinse under cold water. In another medium saucepan, combine sugar and 2 cups water; bring to a simmer. Cook until sugar dissolves completely, about 2 minutes. Add lemon zest. Simmer until translucent, about 30 minutes. Drain zest and let cool on a wire rack. Place superfine sugar in a small bowl, add zest, and toss to coat. Using a fork, shake to remove any excess sugar. Store in an airtight container for up to several weeks.
  • Lightly flour a clean work surface. Roll out pate sucree to a 13-inch round and fit dough into the bottom and 2 inches up the sides of an 8-inch springform pan. Trim excess dough around the perimeter with a paring knife. Freeze until firm, about 40 minutes.
  • Preheat oven to 425 degrees. Place pan on a baking sheet. Carefully line pastry with parchment paper, pressing it into the corners and edges, and weight with beans, rice, or pie weights. Bake about 20 minutes. Remove the paper and weights and continue baking until crust is light golden-brown, about 15 minutes more. Transfer to a cooling rack. Reduce oven temperature to 375 degrees. Spread lemon curd in tart shell and return to oven until curd is bubbling, 30 to 40 minutes. Transfer to a cooling rack and let cool to room temperature. Chill until firm, about 6 hours.
  • Whisk together creme fraiche and confectioners' sugar in a medium bowl until stiff peaks form. Dollop mixture onto cooled tart.
  • Place blueberries in a small bowl. In a small saucepan, warm apricot jam over medium-low heat, 3 to 4 minutes. Using a fine sieve, strain jam directly over blueberries. Toss blueberries until coated with jam. Pile blueberries on top of tart. Garnish with 1 tablespoon candied lemon zest (reserve remaining for another use) and serve.

BLUEBERRY-LEMON TART WITH TOASTED COCONUT

Blueberry-Lemon Tart with Toasted Coconut image

All you really need for a good dessert is some good jam and a little pastry in your freezer. This follows the same principle as the Cherry Almond Tart (page 163), but makes use of Blueberry Lemon Jam (page 10). You can substitute another homemade or store-bought jam of your choice.

Number Of Ingredients 4

1 (4 by 4-inch) square frozen store-bought puff pastry, preferably all-butter (such as Dufour brand), defrosted
1/4 cup Blueberry Lemon Jam (page 10)
2 tablespoons unsweetened, large coconut flakes
2 tablespoons low-fat Greek-style yogurt, whisked smooth

Steps:

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • On a lightly floured countertop, roll out the pastry to about 6 inches square. Pierce the dough every 1/2-inch with a fork; this helps the pastry rise evenly. Mound the jam in the center of the dough. Lightly moisten the edges of the dough with water and pull and fold up the sides to the edges of the jam, forming pleats so the dough cradles the jam. Scatter the coconut flakes on top.
  • Transfer the tart to the prepared baking sheet and bake for 20 to 25 minutes, until it has puffed and turned golden brown. Remove from the oven and let cool for a few minutes.
  • Transfer to a dessert plate, spoon on the dollop of yogurt, and eat.
