- Preheat the oven to 350 degrees F (175 degrees C).
- Mix flour, butter, and powdered sugar together until a dough forms. Press dough into a 9-inch tart pan with a removable bottom.

- Preheat oven to 400°F and spray 10-inch springform pan with non-stick cooking spray.
- Combine flour, salt and sugar.
- Cut in the butter with pastry blender or fork.
- Mix in the vinegar.
- Pat crust onto bottom of springform pan and 1 inch up side.
- For filling combine sugar, flour and cinnamon.
- Add 2 1/2 cups blueberries.
- Place evenly on top of crust.

- Preheat oven to 375 degrees. In a food processor, combine flour, sugar, salt, and butter; process until large moist crumbs form (dough should hold together when squeezed).

- Pulse flour, confectioners' sugar, and a pinch of salt in a food processor to combine. Add butter, and process until the mixture resembles coarse meal, about 10 seconds. With processor running, add cold water, 1 tablespoon at a time, until a dough forms (do not process more than 20 seconds).
- Cut dough in half; shape each half into a disk. Wrap in plastic wrap; refrigerate at least 30 minutes, or up to 1 day. - To prepare the graham cracker shells cream the butter and sugars together until smooth, about 1 minute. Add the honey and beat until well combined.
- Sift together the flours, salt and cinnamon. Add to the butter mixture in two batches, scraping sides of bowl between additions. Mix until well combined. Form into a disk, wrap in plastic wrap, and chill until firm, at least 1 hour.
- Preheat oven to 325*F. Roll out the chilled dough on a lightly floured surface to 1/4 inch thick.Using a 3 inch cutter, cut out 16 circles of dough and press them into greased 2 inch tart pans. Prick dough all over with a fork and chill for 20 minutes.
- Bake until golden brown, 18 to 20 minutes. Transfer to a wire rack to cool. (they can be made up to 1 cay ahead and frozen for up to 3 months).
- For the pastry cream, combine 3/4 cup of the milk and 3 TBS of sugar in a medium saucepan. Bring to a simmer over medium heat. Meanwhile, in a large bowl whisk together the egg yolks, cornstarch and the remaining 2 TBS sugar. Whisk the remaining 1/4 cup milk into the egg yolk mixture. Remove the milk mixture from the heat and add a little of the hot mixture to the egg yolk mixture, whisking constantly to keep the egg yolks from cooking. Pour the egg yolk mixture into the hot milk mixture, whisking constantly as you pour.
- Return to the heat and bring to a boil, stirring constantly. Let cook for 1 minute or so until it thickens. Add the cream cheese and vanilla, whisking until smooth. Strain through a cheesecloth lined sieve into a clean bowl. Cover the surface with plastic cling film and chill. Once chilled, whisk until smooth and fold in the whipped cream.
- To make the blueberry compote mix together 1 cup of the blueberries with the sugar in a medium saucepan. cook over low heat until the berries have all popped and broken down. (about 5 minutes) Strain the cookied berries into a bowl, discarding the solids. Add the remaining berries to the syrup and toss to combine.
- To assemble spoon the pastry cream into each tart shell and top with about 2 TBS of the blueberry compote. Serve soon after assembling.
- You can also make two large tarts. (use 9 inch tart pans.) Prick and bake as above increasing time to 25 minutes.

- Preheat oven to 425 degrees F
- Take half of the pie dough -- enough for one crust -- and roll it so that it is slightly larger than your pie plate (I use a 9" pie plate).
- Place in an ungreased pie plate and press into the corners and up the sides. Trim any very long edges (not all the way!) and fold remaining overhang under itself to form a thick edge (this helps to prevent burning).
- In a large bowl, stir together blueberries, sugar and corn starch and pour into bottom crust.
- Roll out second half of pie dough (one crust) and place over top of the blueberries, trim and crimp the edges as desired, or you can make a lattice crust as shown above if desired. If you use a full top crust, be sure to poke holes in the top to allow the steam to escape.
- Whisk together egg and water and brush over the top crust (this is optional -- it just helps the crust to brown nicely).
- Bake at 425 degrees F for 20 minutes until light golden brown. Cover with foil, reduce heat to 350 degrees and continue baking until filling is thick and bubbly, about 30-50 minutes (frozen berries will take longer).
- Let rest at room temperature or chill for 2-3 hours before serving for cleaner slices that are still slightly saucy. Let chill overnight in the refrigerator for perfectly clean slices.

- Roll out pie crusts onto a well-floured surface.

- Preheat oven to 400 degrees. Roll out the pie crusts and form to each of the 6 4.5" mini tart pans, pressing off any excess crust from the edges. Set prepared crusts aside on a baking sheet.

- For the butter crust: place the flour, sugar, and salt into a food processor, along with the ice cold butter. Pulse for a few minutes until mixture resembles fine crumbs. Slowly add in the cold water and continue mixing until dough comes together to form a ball, about 30 seconds. Turn dough out onto lightly floured work surface and knead the dough into a smooth ball; don't overwork the dough. Cover with plastic wrap and place into refrigerator for at least 1 hour.
- Preheat the oven to 350F. Meanwhile, prepare the filling. In a large bowl, toss together the blueberries, sugar, cornstarch, cinnamon and lemon juice. Stir until berries are coated.
- Roll out the chilled dough into large rectangle; the dough needs to be on the thin side. Use a 2 1/2 inch cookie cutter or glass/cup to cut out small circles. Drop dough circles into mini-cupcake tins; I used a 24-count pan. Using your fingers or the bottom of a shot glass, press the dough into the bottom and sides of tin. Top with a generous and overflowing amount of blueberries.
- Bake the mini tarts at 350F for 25-30 minutes, or until the edges of the tarts turn a golden brown color. Remove the tarts from the pan, using a spoon, onto a cooling rack to cool completely.
- Once cooled, drizzle the top with melted white chocolate. I used the microwave to melt mine and placed the chocolate into a zip-lock bag, then cut off a tiny tip off the edge.
