HAM, EGG AND CHEESE SANDWICH ON ENGLISH MUFFIN



Ham, Egg and Cheese Sandwich on English Muffin image

Number Of Ingredients 10

4 heirloom tomatoes, halved and seeded
Olive oil, to drizzle
Kosher salt and freshly ground black pepper
Fresh thyme leaves, to season
4 English muffins, split
8 slices Swiss cheese, thinly sliced
8 slices Black Forest ham, thinly sliced
2 to 3 tablespoons butter, to coat
8 large eggs
1 tablespoon finely diced fresh chives

Steps:

  • Preheat the oven to 375 degrees F. Put the tomato halves on a baking sheet, cut-side up, drizzle with oil and season with salt, pepper, and thyme. Roast the tomatoes until soft, about 30 minutes. Remove the tomatoes to a plate. Wipe the baking sheet with paper towels and place the English muffin halves on the baking sheet and toast in the oven until lightly golden brown, about 5 minutes. Top each with a slice of the cheese, return to the oven and toast until the cheese is melted, about 2 minutes. Remove and let sit while you make the eggs.
  • Heat a nonstick pan over medium heat. Add the ham slices and cook until slightly crisp and warmed through. Remove the ham to a plate. Add a few tablespoons of butter to the pan, whisk 8 large eggs in a bowl, season with salt and pepper and cook over low heat until soft curds form and stir in the chives.
  • Top each muffin half with a slice of ham. Top the bottom half with some of the eggs and 2 tomato halves. Combine halves to make 4 sandwiches. Serve immediately.

The recipe I adapted gave the yield at 24. There were some adjustments made to the original recipe; i.e., the addition of cheese and onions. I baked these in silicone muffin pans and the yield was 18.

1 lb bulk pork sausage
1 small onion, chopped
1 (4 ounce) can green chilies, diced, undrained
1 cup canned shoe peg corn, drained
4 cups biscuit mix
3/4 cup milk
1/2 cup water
1 egg, beaten
1/2-2/3 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 425 degrees and spray 24 muffin cups with non-stick cooking spray.
  • Over medium heat, brown the sausage in a skillet; drain and set aside.
  • In a large bowl, combine the biscuit mix, milk, water, chilies and egg; mix well.
  • Stir in the corn and drained sausage; gently mix in grated cheese.
  • Fill the prepared muffin tins 2/3 full and bake in preheated oven for 15 to 18 minutes.
  • Cool 5 minutes; remove from pan and place of a wire rack to cool.
  • Serve warm or allow to cool completely, place in a zip-lock bag and freeze.
  • To reheat: Defrost overnight in refrigerator, wrap in foil and place in cold oven; set temperature for 350 and allow oven to come to temperature, warm for 8 to 10 minutes or until heated through.

Steps:

  • Preheat the oven to 350 degrees. Grease a 12-cup muffin pan and set aside.
  • Cook the sausage in a skillet over medium-high heat until no pink color remains. As the sausage cooks, break it up using a potato masher or large fork so that it is crumbly and loose. Drain as much fat as possible from the cooked sausage.
