Bobby Flay's Buttermilk Biscuits with Sausage and Gravy

Number Of Ingredients 13

1 pound ground pork
2 cloves garlic
smashed and chopped to a paste
1 teaspoon onion powder
2 tablespoons finely chopped fresh sage
1 tablespoon finely chopped fresh thyme
2 tablespoons canola oil
Salt and freshly ground black pepper
2 cups whole milk
2 tablespoons unsalted butter
2 tablespoons flour
1 teaspoon kosher salt
8 Black Pepper Biscuits

Steps:

  • For the sausage: Combine pork, garlic, onion powder, sage, thyme and oil in a large bowl and season with salt and pepper
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld
  • Mixture can be prepared 8 hours in advance and refrigerated
  • For the gravy: Put milk in a small saucepan and bring to a simmer over medium heat
  • Melt the butter in a small saucepan over medium heat, whisk in the flour and cook for 1 minute, do not allow the flour to color
  • Slowly whisk in the warm milk, increase the heat to high and continue whisking until the sauce begins to thicken and the raw taste of the flour has been cooked out, about 5 minutes
  • Season with salt and pepper
  • Keep warm
  • Form the sausage mixture into 8 patties
  • Heat a large, nonstick pan over high heat and cook the patties until golden brown on both sides and just cooked through, about 5 minutes per side
  • Slice each biscuit in half, put a sausage patty on the bottom of each biscuit, drizzle with the gravy and replace the tops
  • Serve 2 sausage biscuits per person

12 ounces hot bulk sausage
12 ounces mild bulk sausage
4 tablespoons flour
1/2 gallon milk
Salt
Pepper
Biscuits, store bought or homemade

Steps:

  • In a large pot, add sausage and cook until browned and cooked through. Drain grease and add flour to sausage. Cook over medium-high heat until the sausage is well-coated with the flour. Add milk and stir until desired thickness and add salt and pepper, to taste. Serve with biscuits.

2 cups all-purpose flour, sifted, plus more for surface
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 stick cold unsalted butter, cut into small pieces, plus more for serving
1/2 cup buttermilk
1/2 cup heavy cream
Freshly ground black pepper, optional
Honey, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment or waxed paper.
  • In a bowl combine the dry ingredients and blend thoroughly. Cream in the butter with your fingers or a fork, until the mixture resembles coarse crumbs. Add the buttermilk a little at a time and, using your hands or a fork, work it in just until it's thoroughly incorporated and you have a smooth ball of dough. Don't overwork or over-handle the dough.
  • On a lightly floured surface, press the dough out into a round that is about 1-inch thick. Using a round cookie cutter or the rim of a drinking glass, press out (2 1/2-inch) rounds; you should get about 7 biscuits. If you like, you can re-roll the leftover dough to make more, but the texture of these will be denser than the others.
  • Place the dough rounds on the prepared baking sheet and brush the tops with heavy cream. Grind fresh pepper over top of biscuits, if desired. Bake until golden on top and brown on the bottom, about 12 to 15 minutes. Serve warm with butter and a drizzle of honey.

1 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces, plus more for greasing
1 1/2 cups cold buttermilk
1/2 cup heavy cream
2 teaspoons freshly ground black pepper, not super fine and not coarse, somewhere in between
2 tablespoons melted butter

Steps:

  • Preheat the oven to 450 degrees F. Grease a baking sheet with butter or line with parchment paper.
  • Combine the flour, baking powder, baking soda and salt in a large bowl. Combine until the ingredients are incorporated. Cut in the butter using your fingers or a pastry cutter until the mixture resembles coarse meal. Add the buttermilk and gently mix until the mixture just begins to come together.
  • Scrape the dough onto a lightly floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4-inch thick. Cut into 2-inch squares or use a 2-inch round cutter to cut out biscuits. Press together the scraps of dough, and repeat the process. Place the biscuits on the prepared baking sheet. Brush the tops with cream and sprinkle with the black pepper. Bake the biscuits until lightly golden brown, 12 to 15 minutes. Brush the tops with the melted butter. Cool on a baking rack.
