Yield Makes about 2 cups

Number Of Ingredients 10

2 tablespoons vegetable oil
1 medium onion, finely chopped
2 large garlic cloves, minced
1 12-ounce bottle chili sauce
3/4 cup beer
1/4 cup unsulfured (light) molasses
3 tablespoons cider vinegar
3 tablespoons bourbon whiskey
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon hot pepper sauce (such as Tabasco)

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and garlic; sauté until tender, about 8 minutes. Reduce heat. Add chili sauce, beer, molasses, vinegar, bourbon and Worcestershire sauce. Simmer until reduced to 2 cups, stirring occasionally, about 25 minutes. Stir in hot pepper sauce. (can be made up to 1 month ahead. Cover; chill.)

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons granulated sugar
2 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/4 cup lemon juice
1 cup catsup
1/2 cup celery, chopped
1 teaspoon dry mustard
salt
pepper

Steps:

  • Melt butter or margarine in skillet.
  • saute onions and celery until tender.
  • Add remaining ingredients and cook about 15 to 20 minutes until flavors blend.
  • Makes 1 1/2 cups of barbecue sauce.

Steps:

  • Combine all ingredients in a small saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until thickened, about 10 minutes. Sauce can be refrigerated in an airtight container up to 1 week.

2 tablespoons vegetable oil
1 large onion, diced
2 cloves garlic, minced
2 tablespoons chili powder
1/2 fresh jalapeno pepper, minced
8 ounces dark beer
4 ounces Bourbon
1/2 cup cider vinegar
1/4 cup brown sugar
1 cup tomato puree
3 tablespoons Worcestershire sauce
3 tablespoons molasses
2 tablespoons brown mustard
2 tablespoons lemon juice
2 tablespoons lime juice
1 tablespoon ground black pepper
1 teaspoon liquid smoke

Steps:

  • In non reactive saucepan heat oil over medium low heat.
  • Add onion and cool slowly until translucent.
  • Add garlic, chili powder and jalapeno and cook until fragrant, about 5 minutes.
  • Add beer, bourbon, vinegar and sugar and cook until reduced by half, 5 to 10 minutes.
  • Add remaining ingredients, stirring well.
  • Simmer for 10 minutes.
