Beefy Steak Tacos is a recipe we always make the day after we grill. It is a great way to use up that left-over steak. Easy to make, flavorful, and company worthy! The two textures of beef kicks it up a big notch! Enjoy!

1 1/2 - pounds lean ground beef
1 1/2 - cups of left-over grilled steak, small diced
1 - cup of water
1 - tablespoon a-1 sauce
1 - tablespoon worcestershire sauce
1 - teaspoon minced garlic
1/4 - teaspooon cumin
- taco seasoning to taste
- salt and pepper to taste
- ................................
12 - white or yellow corn tortillas
- olive oil for frying
- .....................................
- top tacos with:
1 - cup cheddar cheese grated
2 - large tomatoes, diced
1 - head romaine lettuce, cut fine
1 - white onion, diced fine
2 - tablespoons cilantro, chopped fine
- guacamole, sour cream
- la victoria green hot sauce to taste

Steps:

  • BEFORE YOU BEGIN: Do your prep work first and then it goes together really fast. I use a divided dish for the vegetables and cheese and then assemble the tacos after the tortillas are fried.
  • PREPARE INGREDIENTS: Wash the romaine lettuce. I cut it as fine as possible with a sharp knife, looks like it is shredded. Dice the onion fine. Dice tomatoes. Chop the cilantro fine, and mix with the tomatoes. Put the vegies and the cheese in the divided dish and set it in the refrigerator.
  • Grate the cheese. Dice the cooked steak into small pieces.
  • COOKING THE MEAT: You will need a large pan for the taco meat and steak and a medium pan to fry the tortillas. Place the ground beef in the pan over medium heat. When it starts to brown, I use a metal potato masher to make it all the same size. When the meat is lightly browned, add the taco seasoning mix, cumin, garlic, worcestershire sauce, A-1 sauce, and stir. Then add the salt and pepper and pepper flakes if you want it. Add one cup of water, stir, and let it simmer uncovered until the liquid is reduced. When it is reduced, add the steak. Adding it later keeps it from becoming tough. Keep it hot while you fry the tortillas. You can add a couple of spoons of water to keep it moist. Don't let it dry out (it is now ready to eat) . By the time the meat has reduced, you should have the taco shells fried.
  • FRYING THE TACO SHELLS: Fry the tortillas in hot oil, folding to make a shell until golden brown and then drain on paper towels. I cook the shells according to my family's preference. Some like them soft, others like them crispy. The boxed shells just don't taste the same to us.
  • When the shells are fried, assemble the tacos with the meat first, onion, tomato/cilantro mixture, lettuce and cheese, and taco sauce if desired. We like ours piled high with the vegies. Serve with guacamole and sour cream and a side of refried beans. Enjoy!

1 ½ pounds flank steak
8 small corn tortillas (or flour tortillas, warmed)
toppings as desired
2 limes (juiced)
1 orange (juiced)
2 tablespoons olive oil
2 cloves garlic (minced)
2 tablespoons soy sauce
¼ cup cilantro (packed)
1 teaspoon cumin

Steps:

  • Combine marinade ingredients in a blender and pulse until smooth. Pour over flank steak and marinate at least 1 hour or overnight.
  • Preheat a grill or grill pan to medium-high heat. Cook about 4-5 minutes per side (125 to 130°F for medium-rare).
  • Rest steak about 5-7 minutes before cutting. Cut steak into 1/2" slices across the grain and then cut into bite sized pieces
  • Serve in warmed tortillas with desired toppings such as pico de gallo, guacamole, sour cream and cilantro.

We slice skirt steak and cook it quickly at a high temperature to save time and keep the meat tender. Make sure you save the super flavorful collected juices from the steak and onions to drizzle on your tacos.

1 pound skirt steak
1 tablespoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon sugar
Kosher salt and freshly ground black pepper
Eight 6-inch corn tortillas
1 tablespoon vegetable oil
1 medium red onion, halved and cut into 1/4-inch-thick slices
Sour cream, guacamole, salsa verde, pico de gallo and shredded Mexican-blend cheese, for serving

Steps:

  • Cut the steak along the grain into 3-inch pieces, then slice each piece across the grain into 1/3-inch-thick strips. Toss the steak in a medium bowl with the chili powder, oregano, sugar, 3/4 teaspoon salt and a few grinds of pepper.
  • Heat a large nonstick skillet over high heat. Meanwhile, wrap the tortillas in a clean dishcloth, and microwave at 100 percent for 1 minute. Let sit, wrapped in the dishcloth, until ready to serve.
  • When the skillet is hot, add the oil. Add the seasoned steak in an even layer. Don't stir for 2 minutes, then give the steak a good stir and let cook until browned, about 1 1/2 minutes more. Transfer the steak to a medium bowl. Immediately add the onions to the skillet, and stir until brown and slightly softened, about 1 1/2 minutes; transfer to the bowl with the steak, and stir to combine.
  • Set up a taco bar with the steak and onions, wrapped tortillas, sour cream, guacamole, salsa verde, pico de gallo and cheese.

2 teaspoons chili powder
1-½ teaspoons ground cumin, divided
1 can (15 ounces) reduced sodium black beans, rinsed, drained, divided
1 tablespoon vegetable oil
8 small corn or flour tortillas (5 to 6-inch diameter), warmed
Thinly sliced lettuce, sliced avocado, chopped tomato, salsa, crumbled queso fresco and cilantro leaves (optional)
1 pound beef Bottom Round Steaks, cut ¼ inch thick

Steps:

  • 1.Combine ½ cup salsa, chili powder and 1 teaspoon cumin. Place beef steaks and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  • 2.Combine 1 cup beans, remaining ½ cup salsa and ½ teaspoon cumin in medium microwave-safe bowl. Mash with fork into chunky paste. Cover and microwave on HIGH 1 to 2 minutes or until hot, stirring once. Keep warm.
  • 3.Meanwhile, heat 1-½ teaspoons oil in large nonstick skillet over medium-high heat until hot. Remove steaks from marinade; discard marinade. Cooking in batches, place steaks in skillet (do not overcrowd) and cook 2 to 3 minutes for medium rare (145°F) doneness, turning once. (Do not overcook.) Remove steaks from skillet; keep warm. Repeat with remaining steaks and oil.
  • 4.Spread bean mixture evenly on tortillas. Cut steaks into 4 pieces each and divide evenly among tortillas. Top beef with remaining beans and toppings, as desired. Fold tortillas in half to serve.

This recipe was created for a Cinco De Mayo work potluck taco bar that was a big hit. The coffee in the recipe adds a hint of smokiness and assists with tenderizing the meat as it cooks. Serve with warm tortillas and your favorite toppings. For less heat, omit jalapenos.

1 large yellow onion, sliced into thin rings
1 (3 pound) boneless beef chuck roast, trimmed
2 (14.5 ounce) cans chili-seasoned diced tomatoes
1 (14 ounce) can beef broth
1 cup cold coffee
1 (4 ounce) can diced green chiles
2 jalapeno peppers, sliced
4 cloves garlic, chopped
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Layer half the onion rings into the bottom of a slow cooker. Place chuck roast on top of onions.
  • Pour diced tomatoes, beef broth, and coffee into the cooker over the roast; stir in diced green chiles, jalapeno peppers, garlic, chili powder, cumin, salt, and black pepper. Spread remaining onion rings over the mixture.
  • Cover the cooker and cook on Low until beef is very tender, 6 to 10 hours.
  • Transfer chuck roast to a bowl and shred meat. Return meat to sauce. Remove onions and serve with meat.

2 tablespoons all-purpose flour
1 tablespoon Worcestershire sauce
1-1/2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
2 tablespoons lime juice
Hot pepper sauce
Flour tortillas
Shredded cheddar cheese, picante sauce and sour cream, optional

Steps:

  • In a Medium or Large Ziploc® Zip 'n Steam™ Bag, combine steak, flour, Worcestershire sauce, chili powder, garlic powder, oregano and salt. Seal bag and shake gently to combine ingredients. Pat steak into single layer. Place bag in microwave., Cook on full power for 4 minutes (Medium bag) or 3-1/2 minutes (Large bag). If needed, microwave for additional 30-second intervals until steak is well done. Allow bag to stand for 1 minute before handling. Gently shake bag to distribute seasonings and carefully open., Add lime juice and hot pepper sauce if desired. Spoon beef mixture onto tortillas. When I first found this recipe, I knew it was going to be good, but what I didn't know was that it was going to be amazing! There are very few ingredients in this Mexican style steak, just follow the recipe, don't change or add anything. It makes the most wonderful gravy, and the meat is fork tender! I am so pleased to share this recipe with you! Enjoy!

- 1 1/2 pounds lean chuck steak, 1 inch thick, with all fat removed
- garlic powder to shake
- 2 tablespoons extra virgin olive oil
- one 10 ounce can enchilada sauce, old el paso brand
1 15 ounce can of hormel tamales in sauce
- a little sherry to deglaze the skillet
- 1/2 cup water

Steps:

  • 1. Note: Follow recipe as written. Don't add salt.
  • Trim and remove all fat from the steak. Make sure steak is the same thickness, not more than 1 inch thick.
  • Lay steak on a cutting board and sprinkle with garlic powder, and flatten with mallet, turn steak over and do the other side.
  • In a medium skillet with a tight fitting lid, brown steak in olive oil, get a nice sear on both sides. Make sure the steak just fits in the skillet. Deglaze the skillet with a little sherry and stir the meat around in it.
  • Drain tamales, reserving the sauce. Unwrap tamales and cut in thirds, set aside. You will add them at the end.
  • Combine reserved tamale sauce, 10 ounces of enchilada sauce (measure it) and 1/2 cup of water, whisk and pour over steak in skillet.
  • Cover and simmer until meat is tender, about 1 hour or a few minutes more until it is fork tender.
  • When the steak is tender, add tamale pieces and warm through..
  • Use the wonderful gravy to spoon over potatoes and steak. Enjoy!
  • Cook's Tip: The big surprise to me was what happened with the gravy. It becomes dark and rich and the flavor is divine! It also thickens beautifully with no help from me! A definite keeper in this house.
