A French seafood stew made of fish, shellfish, onions, tomatoes, white wine, olive oil, garlic, saffron and herbs. You can leave the shrimp and lobster in the shell for more flavor to be added to the stew. If you do make recipe #147961 do add the shells from the lobster and crab. I do favor the Alternative method in that recipe. This can be made the day before. All the fish is optional and interchangeable.

1/2 cup dry sherry
1/2 teaspoon saffron
1 lb flounder or 1 lb trout, boned and fillet
1/2-1 lb scallops (cleaned and shelled) or 1/2-1 lb crabmeat (cleaned and shelled)
10 small clams
10 mussels
2 small squid, cleaned and sliced into rings
1/4 cup olive oil
1 large onion, diced
2 shallots, minced
1 carrot, diced
1 cup fennel bulb, thinly sliced
6 garlic cloves, minced
28 ounces tomatoes, diced with liquid
2 cups clam juice (or Recipe #147961) or 2 cups chicken broth (or Shrimp Stock (2 Methods))
1 tablespoon tomato paste
2 teaspoons salt
1 teaspoon thyme
1/2 teaspoon basil
2 tablespoons fresh parsley
pepper
garlic-infused olive oil
parsley
red pepper flakes

Steps:

  • Add saffron to sherry set aside.
  • Cut fish into bite size pieces.
  • Scrub clams and mussels.
  • In a large stock pot heat oil. Saute onions, shallots, carrot, fennel, and garlic in oil on low heat until lightly golden.
  • Add all liquids and seasonings including the saffron infused sherry.
  • Bring to just a boil. Lower heat and simmer 15 minutes. Add all seafood adding squid last, mix and simmer 10 minutes.
  • Serve hot in large bowls.
  • Top with garnishes.
  • Serve with crusty bread, and a tossed salad.

2 tablespoons unsalted butter
2 shallots, finely chopped
1 pound pink shrimp, peeled and deveined
1 tablespoon finely chopped fresh chives
1/2 lemon, juiced
Salt and freshly ground black pepper
Bouillabaisse Sauce, recipe follows
1 baguette, sliced on the bias into 6 pieces, toasted
Bouillabaisse Relish, recipe follows
Saffron Aioli, recipe follows
1/2 cup olive oil
3 cups finely diced fennel
1 cup finely diced onion
5 cloves garlic, finely diced
3 cups peeled, seeded and finely diced Roma tomatoes
1 cup peeled and finely diced red pepper
2 tablespoons chopped fresh thyme
1 cup dry white wine
2 cups fish stock
2 cups 1-inch cubed white fish, such as cod, halibut or fluke
2 tablespoons chopped fresh basil
1 teaspoon Piment d'Espelette
Salt and freshly ground black pepper
1 tablespoon olive oil
1/4 cup finely diced carrot
1/4 cup finely diced celery
1/4 cup finely diced fennel
2 tablespoons finely diced onion
1 tablespoon finely chopped basil
Salt and freshly ground black pepper
1 large pinch saffron threads
3 cloves garlic, peeled and finely chopped
1 large egg
Freshly ground black pepper
1 cup olive oil
1 tablespoon lemon juice
Salt

Steps:

  • Melt the butter in a large saute pan over medium-high heat. Add the shallots and cook until translucent, about 3 minutes. Add the shrimp and saute until cooked through, about 3 minutes. Add the chives and lemon juice, and season with salt and pepper. Place a spoonful of the Bouillabaisse Sauce on a plate. Place a piece of baguette on top of the sauce, and then a large spoonful of the cooked shrimp. Top with the Bouillabaisse Relish. Finish with a spoonful of the Saffron Aioli.
  • Heat the oil in a large saucepan over medium-high heat. Add the fennel, onions and garlic and cook, stirring frequently to prevent sticking, for about 10 minutes. Then add the tomatoes, peppers and thyme. Continue to cook and stir for 8 minutes. Add the white wine and cook until it has reduced by half. Then add the fish stock. Increase the heat and bring to a boil. Add the fish and decrease the heat to a simmer. Cook for 5 minutes. Add the basil and Espelette, then turn off the heat and let cool slightly. Place the sauce into a blender and blend until smooth. Season with salt and pepper.
  • Heat the olive oil in a small skillet over medium heat and saute the carrot, celery, fennel and onions until soft, about 5 minutes. Add the basil. Season with salt and pepper.
  • In small saucepan, heat the saffron threads and 1 tablespoon water to a boil and set aside to cool. Put the garlic in a small bowl with the egg and some pepper and whisk until combined. Slowly whisk in the olive oil, in drops at first and increasing the amount added as the sauce thickens. Add the lemon juice, saffron water and season with salt and pepper.

1/2 cup olive oil
1 bulb fennel, stems trimmed, cored and sliced
1 large onion, peeled and sliced
1 small leek, white and light green parts only, sliced
1 large tomato, peeled, seeded, and chopped
3 garlic cloves, peeled and chopped
1 tablespoon tomato paste
Cayenne pepper
1 teaspoon saffron threads
2 medium russet potatoes, peeled, diced
1 1/2 quarts fish stock
1 bouquet garni (see Cook's note)
Kosher salt and freshly ground black pepper
3 pounds assorted seafood (firm white fish such as monkfish or bass, and shrimp, mussels, cockles, or lobster), cleaned and cut into bite-size chunks
2 tablespoons flat-leaf parsley, chopped
1 tablespoon chervil, chopped
Garlic and Saffron Mayonnaise (Rouille) , for serving

Steps:

  • 1. In a large, heavy-bottomed stockpot over medium-high heat, heat the olive oil. Add the fennel, onions, and leeks and cover with a tight-fitting lid. Cook the vegetables, stirring occasionally, until just beginning to tenderize, about 5 minutes. Add the tomato and garlic, re-cover the pot, and continue cooking until the tomatoes begin to break down, 2 to 3 minutes.
  • 2. Add the tomato paste, cayenne, saffron, potatoes, fish stock, and bouquet garni. Season with salt and pepper and bring the liquid up to a boil. Cover the pot, reduce the heat to medium, and simmer until the potatoes are cooked, 10 to 15 minutes.
  • 3. Add the seafood in order of firmness and cooking time, with the denser fillets of fish going into the pot first, followed by shellfish and then shrimp. Simmer the soup, stirring very minimally to preserve the whole pieces of seafood, until the shellfish have opened and fish fillets have cooked through, 5 to 10 minutes total, depending on the seafood being used.
  • 4. To serve, remove and discard the bouquet garni. Carefully remove the fish and shellfish, arranging them on a large serving platter or in warm bowls. Ladle the broth and potatoes over fish and garnish with the herbs. Serve warm.

Bouillabaisse With Orange Zest, Fennel and Saffron image

This Mediterranean fish stew is more difficult to spell than to prepare, and it is traditionally neither an idée fixe nor the centerpiece of a grande bouffe, but a spur-of-the-moment combination of the day's catch. Trying to duplicate the real bouillabaisse is an exercise in frustration, as the traditional combination of fish is not found in American waters. But creating an admirable local version is no more difficult than making clam chowder. Though some will argue that bouillabaisse must contain fish stock, any time you add a few pounds of fish to a simmering stew there is enough fish essence to make stock superfluous. If additional liquid is needed, water will do just fine.

1 tablespoon olive oil
2 medium onions, roughly chopped
Zest of 2 navel or other oranges
2 teaspoons fennel seeds
Big pinch saffron, optional
1 dried chile, or cayenne to taste
1 28-ounce can of tomatoes, including juice
1 to 1 1/2 pounds monkfish, catfish, or blackfish, cut into 1-inch cubes
3 pounds hard-shell (littleneck) clams, cockles or mussels, well washed
1 to 1 1/2 pounds shrimp or scallops, cut into bite-size pieces if necessary
1 to 1 1/2 pounds cod or other delicate white-fleshed fish, cut into 6 large chunks
1 tablespoon minced garlic
1 cup roughly chopped parsley

Steps:

  • Put olive oil in a casserole or large saucepan over medium heat. Add onions and cook, stirring occasionally, until softened, about 5 minutes. Add zest, fennel, saffron and chili, and cook for about a minute. Add tomatoes, and turn heat to medium-high. When mixture boils, reduce heat to medium, and cook 10 to 15 minutes, stirring occasionally, until it becomes sauce-like.
  • Add monkfish and raise heat to medium-high. When mixture boils, reduce heat to medium-low and cook, stirring occasionally, until the monkfish begins to lose its rubbery quality, 10 minutes or so.
  • Add clams, raise heat to high, and stir; when mixture boils, reduce heat to low, cover, and cook until clams begin to open, 5 to 10 minutes. Add shrimp and white fish, stir, and cover. Cook, stirring gently once or twice, until white fish is just about done (a thin-bladed knife will pierce it with little resistance), about 5 minutes. (If mixture is very thick, add a cup or so of hot water.) Stir in garlic, and cook 1 minute more. Stir in parsley and serve, with crusty bread.

1/4 cup sun-dried tomatoes (not packed in oil)
1 cup boiling water
1 cup fat-free mayonnaise
2 teaspoons Worcestershire sauce
1/4 cup fresh basil leaves, coarsely chopped
2 teaspoons Italian seasoning
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1-1/2 pounds lean ground beef (90% lean)
3/4 cup shredded part-skim mozzarella cheese
6 whole wheat hamburger buns, split
Additional fresh basil leaves, optional

Steps:

  • In a small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a food processor, combine mayonnaise and tomatoes; cover and process until blended. Chill until serving., In a large bowl, combine the Worcestershire sauce, basil, Italian seasoning, garlic, pepper and salt. Crumble beef over mixture and mix well. Shape into 12 thin patties. Place 2 tablespoons cheese on six patties; top with remaining patties and press edges firmly to seal., On a greased grill, cook burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with mayonnaise mixture and, if desired, additional basil.
