BOURBON MEATBALLS

1 cup panko bread crumbs
¼ cup whole milk
1 pound ground beef
1 pound ground pork
2 whole eggs
¼ cup minced onion
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
2 cups brown sugar
2 cups ketchup
1 cup bourbon
2 tablespoons Worcestershire sauce
½ teaspoon hot sauce (we use Chalula because it is flavorful but mild)

Steps:

  • In a small bowl, mix panko and milk and set aside.
  • In a large bowl mix beef, pork, eggs, onion, salt, pepper, garlic powder and the panko-milk mixture.
  • Use a one-ounce scoop and scoop out 42 balls.
  • Line the balls up on your cutting board and slice each in half.
  • Place a piece of parchment over a sheet tray and preheat oven to 350 degrees F.
  • Keep your hands wet and roll each ball round, total of 84 and line up on a sheet tray.
  • Bake ten minutes. This is just enough so that they keep their shape before adding to the sauce.
  • While meatballs are baking, in a medium to large pan, add brown sugar, ketchup, bourbon, Worcestershire sauce and hot sauce and whisk over medium heat until it starts to bubble. Hold on low until the meatballs come out of the oven.
  • Add the partially cooked meatballs to the sauce, bring to a simmer and cover. Lower heat to low and cook 25 minutes.
  • Alternately you can cook uncovered for the 25 minutes, stirring every so often. This will yield a thicker sauce.
  • Serve as an appetizer, or as a meal with rice, noodles or mashed potatoes.

Using pre-made frozen meatballs and store-bought barbecue sauce is definitely the fastest way to make these delicious sweet, tangy, and tasty cocktail treats. But if you have a great recipe for homemade meatballs and the time to make them, by all means use them here. There's no need to brown the meatballs first if you're making them from scratch, just don't crowd them together too much in the pot.

1 lb frozen meatballs ((or use homemade meatballs))
2 cups barbecue sauce ((store bought or homemade))
1/4 cup bourbon
1/4 cup honey
Chopped chives (for serving)

Steps:

  • Place all the ingredients in the Instant Pot inner pot and gently stir them together. Secure the lid, ensuring the valve is turned to the Sealing position. Press the Pressure Cook button and set the time to 5 minutes.
  • When cooking is complete, turn the valve to the Venting position to release the pressure. Open the lid and stir the mixture in order to coat all the meatballs.
  • Serve the meatballs from the Instant Pot, which should be set to the keep warm function.

1 1/4 cups pecan halves
1/3 cup unsweetened cocoa powder
1/3 cup confectioners' sugar
1/4 cup bourbon
1/4 cup dark corn syrup
1 teaspoon pure vanilla extract
Pinch kosher salt
6 ounces bittersweet chocolate, chopped
1 tablespoon coconut oil or vegetable shortening
25 pecan halves

Steps:

  • For the bourbon balls: Pulse the vanilla wafer cookies and pecan halves in a food processor until the mixture turns to fine crumbs. Add the cocoa powder, confectioners' sugar, bourbon, corn syrup, vanilla and salt, then pulse until the mixture is thoroughly combined and holds together when squeezed.
  • Scoop the mixture into 1-inch balls (each about 1 tablespoon; about 25 total) on a parchment-lined baking sheet. Roll each ball between the palms of your hands so they're smooth and compact. Transfer to the refrigerator to chill and firm up slightly, about 10 minutes.
  • For the coating: Meanwhile, put the chocolate and oil in a medium microwave-safe bowl. Microwave on high, stirring halfway through, until completely melted and smooth, about 1 1/2 minutes.
  • Working one a time, use 2 forks to gently lower each bourbon ball into the chocolate mixture, turning to make sure the entire ball is coated.   • In a medium bowl, combine and mix all ingredients except your meatballs. Place your frozen meatballs into your crock pot, and pour the whiskey sauce in on top.   • Combine the first three ingredients and simmer for 5 minutes, until blended.

  • CROCK POT: For the crock pot, prepare sauce as above. Put meatballs (they can be frozen meatballs) into crock pot, pour sauce over and cook on low for 8 to 12 hours.
