HAM 'N' CHEESE BOW TIES

Steps:
- In a large saucepan, saute garlic in butter for 1 minute. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Stir in mustard and Colby cheese; cook and stir until cheese is melted. Add pasta and ham; stir until coated., Transfer to a greased 2-qt. baking dish. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

BOW TIE PASTA (FARFALLE) PUTTANESCA WITH ROASTED PEPPERS

Steps:
- Bring 4 quarts of water to a boil. Add salt and pasta. Cook for about 8 to 10 minutes until al dente. Drain and rinse with cold water. Drain well and set aside. In a small mixing bowl, whisk together the olive oil, vinegar, garlic, capers, and anchovy paste. Mix the olives, yellow pepper, red pepper, and arugula with the pasta. Toss with the olive oil and anchovy mixture. Add salt and pepper to taste. Serve on platter with shaved Parmesan cheese.

BOW TIE PASTA WITH NEW POTATOES AND OLIVES
Steps:
- Combine the olive oil and white wine in the bottom of a mixing bowl; season highly with salt and pepper. Add scallions, romaine lettuce and peppers.
- Scrub the potatoes clean with a vegetable brush. If they are large, cut them in half or quarters. Boil in a quart of water, partially covered, until they are just tender, about 15 to 20 minutes. Drain and refresh under cold water, pat dry. Cut them into bite-sized chunks and add them to the mixing bowl. Toss them while still warm with olive oil and wine.
- While the potatoes are cooking, boil the pasta until al dente, also drain, refresh briefly under cold water and pat dry. Toss with the potatoes, etc. Serve at room temperature. Garnish each portion with black olives and some goat's cheese if you wish.
CHICKEN WITH BROCCOLI, SUN-DRIED TOMATOES AND BOW TIE PASTA

Steps:
- Cook pasta, drain, and toss with butter.
- While pasta is cooking, heat oil in a large saucepan.
- Add chicken, garlic, seasonings, and sun-dried tomatoes. Cook until chicken is nearly cooked through and lightly browned.
- Add wine and allow to reduce slightly. Add chicken broth, then broccoli florets. Cover and let steam for 3-4 minutes, stir, then cook till broccoli is tender, but still bright green.
- Add bow ties and toss so that juices coat pasta.
- Serve with Parmesan cheese if desired.

BOW TIE PASTA WITH BEEF

Steps:
- In a large sauce pan, melt the butter at medium high heat.
- Add the chopped onion and sauté for a few minutes.
- Add the stewing beef and brown the beef on all sides.
- Season the beef with salt and pepper and add water to the sauce pan until the beef is completely covered.
- Cover, reduce the heat and simmer for 1 1/2 to 2 hours.
- After 2 hours, add more water so that the sauce pan is filled half way.
- Bring to a boil.
- Add the pasta to the broth and cook until pasta is tender.
- When the pasta is tender, add the beef stock concentrate, Knorr Veloutine and continue to simmer for a few minutes until the broth thickens.
- Add salt and pepper if necessary.
- Serve just like this, or over mashed potatoes.
