4 plum tomatoes, peeled, seeded and diced
2 tablespoons olive oil
2 to 4 garlic cloves, crushed
1 teaspoon balsamic vinegar
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 tablespoon minced fresh marjoram or 1 teaspoon dried marjoram
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1 tablespoon minced fresh parsley
1/8 teaspoon salt
1/8 teaspoon pepper
4 ounces uncooked bow tie pasta

Steps:

  • In a small bowl, combine the tomatoes, oil, garlic, vinegar, herbs, salt and pepper. Cover and let stand at room temperature for 30 minutes. , Cook pasta according to package directions; drain. Return pasta to the pan; stir in tomato mixture. Cover and let stand for 2-3 minutes or until slightly heated. Toss and serve immediately.

1 pound bowtie pasta
1 tablespoon extra virgin olive oil, such as Colavita
2 cloves garlic, minced
2 medium zucchini, thinly sliced
2 yellow crookneck squash, thinly sliced
2 medium tomatoes, chopped
½ cup basil, chopped
½ cup crumbled feta cheese
¼ cup shredded Parmesan cheese
1 lemon, juiced
½ teaspoon Kosher salt
Freshly ground black pepper

Steps:

  • 1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain well and set aside. 2. Heat oil in a large sauté pan over medium-high heat. Add garlic, zucchini, and squash and sauté 3 to 5 minutes or until just tender. Remove from heat and stir in tomatoes. 3. In a large bowl, combine cooked squash and tomatoes with pasta, basil, cheese, lemon juice, salt and pepper and toss well to combine. Serve warm or refrigerate until cool and serve chilled.

Yesterday, after a weekend of brisket, chocolate cake, and innumerable other naughty delights, suddenly all I wanted was a cold, healthy salad.

12 oz. weight Farfalle (bowtie) Pasta
2 tbsp. Extra Virgin Olive Oil
1 whole Lemons (more To Taste)
Salt
Freshly Ground Black Pepper
2 whole Zucchini, Cut Into Small Wedges Or Diced
10 oz. weight Grape Tomatoes, Halved Lengthwise
1/3 c. Minced Fresh Parsley
6 oz. weight Crumbled Feta Cheese

Steps:

  • Cook pasta until done. Drain and rinse in cold water until completely cool. Add olive oil and lemon juice, then add salt and pepper to taste (do not undersalt). Toss to combine. Add zucchini, tomatoes, parsley, and feta, and toss to combine. Add more of what you think it needs; I like to go heavy on the feta! Squeeze in a little more lemon juice/drizzle more olive oil if it needs more moisture.Cover in plastic wrap for at least a couple of hours. Pasta is best when chilled for a few hours before serving. *Note: Add grilled shrimp, grilled chicken, or grilled flank steak if you need a little protein.

1 lbs Chicken, boneless thigh or breast, small diced
1/2 lbs Pasta, tubular pasta such as penne or farfalle
1 Zucchini, diced to half moons
1 Cup Cherry Tomatoes
1/4 Bunch Fresh Herbs, such as parsley or basil, optional, for serving.
1 tbsp Cooking Oil
1 tsp Garlic, 1-2 cloves, minced
1/2 tsp Salt and Black Pepper, half and half
1/2 Cup Basil Pesto, to make fresh, check recipe link in notes.
1/2 Cup Cream, half and half
1/2 tsp Chili Flakes
1 tbsp Lemon, juice
1/3 Cup Parmesan Cheese, grated
1/4 Cup Water, use Chicken Stock for more flavor

Steps:

  • Bring pot of water to rolling boil. Season with salt. Add pasta and cook boiling until pasta is al-dente (about 10-12 minutes) For best results, check pasta package for al-dente cooking time.
  • Heat oil in a large heavy bottom skillet to medium-high heat. Add garlic and chili flakes. Cook stirring often for 20-30 seconds or until garlic is fragrant. Don't let garlic burn. Add diced chicken. Sprinkle generous pinch of salt on chicken before stirring. Stir cook chicken for 2-3 minutes or until chicken is no longer pink and develops some color. Transfer chicken to a plate.
  • In, now empty, same pan on medium heat, add basil pesto. You don't need more oil since pesto has oil in it. Cook pesto for 30 seconds to 1 minute or until it is fragrant. Add cream half and half, water (or stock if using). Bring to boil then lower heat to medium. Mix in half of the parmesan cheese. Add chicken back into the sauce with cherry tomatoes and zucchini. Cook for 3-5 minutes or until Pesto Sauce thickens and chicken is fully cooked. Once sauce thickens, mix in lemon juice and salt. Taste and adjust salt and black pepper.
  • Add cooked and drained pasta to chicken with pesto. Sprinkle remaining parmesan cheese on the top of pasta. Now, coat the pasta in the sauce. Add 2-3 tbsp of the chopped fresh herb of your choice. Serve Chicken Pesto Pasta while still hot. Enjoy.

four ripe medium tomatoes, preferably new jersey beef steaks, chopped
1/2 cup torn fresh basil leaves
1/3 cup extra virgin olive oil
one garlic clove, finely chopped
salt and pepper
1 pound bow ties, farfalle
eight ounces fresh mozzarella, cut into small dice

Steps:

  • 1. in a large pasta serving bowl, mix the tomatoes, basil, oil, garlic, and salt and pepper to taste. Let stand at room temperature up to two hours.
  • 2. Bring at least 4 quarts of salted water to a boil in a large pot. Add the pasta, stir well and cook over high heat, stirring frequently, until the pasta is al dente, tender yet firm to the bite.
  • 3. Drain the pasta and toss it with the sauce. Add the mozzarella and toss again. Serve at once. Serves 4 to 6.

  • Cook the pasta in a large saucepan of salted, boiling water until 'al dente'; 8 - 10 minutes.
  • Meanwhile, prepare the courgette by peeling into thin strips using a vegetable peeler. Heat the oil in a large saute pan set over a medium heat until hot.
  • Add the garlic and fry for 30 seconds. Add the courgette and continue to fry for a further 3 - 4 minutes until softened.
  • Drain the pasta, reserving half a cup of the cooking liquid, and add to the courgette. Toss well, loosening with a little of the cooking liquid.
  • Season to taste with salt and pepper. Spoon the pasta into bowls and garnish with the yeast, thyme, and saffron threads on top.

1 pound farfalle

Steps:

  • Cut zucchini crosswise into 1/8-inch-thick slices and in a colander toss with salt. Let zucchini stand to drain 45 minutes. Pat zucchini dry.
  • While zucchini is draining, cut basil into thin strips and bring a 6-quart pasta pot three fourths full with salted water to a boil for farfalle. Cook pasta in boiling water until al dente and ladle out and reserve 1 cup pasta cooking water. Drain pasta in colander.
  • While pasta is cooking, in a deep 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sauté zucchini, stirring occasionally, until golden and tender, about 7 minutes. Reduce heat to low and stir in half of basil. Stir in pasta and butter and gently toss until butter is melted. Stir in 1/2 cup reserved pasta water and gently toss (adding more pasta water as needed if mixture becomes too dry). Stir in 1/2 cup Parmigiano-Reggiano, remaining basil, and salt and pepper to taste.
  • Serve pasta with additional cheese.
