4 garlic cloves, thinly sliced
4 (4- to 6-inch) sprigs fresh thyme
2 (6- to 8-inch) sprigs fresh rosemary

Cover pot with lid and transfer to oven. Braise until meat is very tender, 2 1/2 to 3 hours.

BRAISED BEEF WITH GRAVY-LIKE SAUCE AND VEGETABLES

Braised Beef with Gravy-Like Sauce and Vegetables image

Provided by Victor

Categories     Dinner

Time 4h

Number Of Ingredients 17

2 1/2 lbs beef ((e.g. chuck, shanks or brisket, cut into 2-inch pieces))
2 Tbsp olive oil
4 Tbsp butter
3 cups button mushrooms ((rinsed, whole))
4 carrots ((medium, peeled and cut into large pieces))
2 leeks ((white and light green parts only, sliced 1/4" thick))
1 vidalia onion ((large, peeled and chopped))
4 shallots ((peeled and cut in halves))
2 garlic cloves ((minced))
2 garlic heads ((optional))
1/3 cup all purpose flour
4 cups beef broth ((or beef stock, heated))
2 Tbsp red wine vinegar
Kosher salt ((to taste))
1/2 tsp black pepper ((plus more to taste))
1/4 tsp nutmeg
Chopped fresh herbs ((for garnish))

Steps:

  • Start preheating the oven to 350F.
  • If you like garlic and want to add a couple of full heads, it's a creamy deliciousness once cooked, do as follows. Remove as much loose skin as you can. Cut off about a quarter to one third from one end. Garlic heads will go in the braising pan later, while some of the cut off pieces can be used in this recipe in place of the two required garlic cloves and the rest can be saved for other uses.
  • Heat the olive oil with two tablespoons of butter in a braising pan over medium-high heat. Add the beef and brown on all sides. Remove the meat from the braising pan and set aside.
  • Add the onions, mushrooms, shallots, carrots and leeks. Saute until the vegetables are slightly softened, about 4-5 minutes. Add the minced garlic and continue sauteing for another minute.
  • Add the remaining two tablespoons of butter and let it melt, while constantly stirring. Turn the heat down to low. Have the broth ready. Add the flour and stir briskly until it is fully incorporated. Pour in the broth, turn the heat up to medium high and let the liquid mixture come up to a boil. Reduce heat to medium and simmer, constantly stirring, until the mixture starts to thicken. It shouldn't take long, less than a minute. Remove from heat.
  • Add the pepper and nutmeg, stir, then salt to taste. Stir in the red wine vinegar. The sauce may taste a little too tart right after you add the vinegar, but it will be perfect by the time it's done cooking.
  • Nestle beef pieces and garlic heads, if using, in the sauce, spreading them out evenly. If using, place the garlic bulbs cut side up. Garlic smell can be quite strong, so add those bulbs only if you love garlic and have a good ventilation in the kitchen. If you place it cut side down, the sauce will get infused with garlic too much.
  • Cover and braise in the oven at 350F for 3-4 hours. I think the beef only gets better if cooked a little longer.
  • Serve with freshly made mashed potatoes, garnish with chopped fresh herbs, and enjoy.

Provided by Rachael Ray : Food Network

Time 5h5m

Yield 5 to 6 servings

Number Of Ingredients 12

Extra-virgin olive oil, for sauteing and drizzling
4 onions, very thinly sliced
6 cloves garlic, very thinly sliced
3 pounds chuck, bottom round or top sirloin steak
Sea salt and freshly ground black pepper
4 to 5 starchy potatoes
1 (32-ounce) can Italian tomatoes, sliced or roughly crushed
2 tablespoons chopped fresh thyme
2 sprigs fresh rosemary, leaves picked and finely chopped
Parmigiano-Reggiano, for grating
A few fresh basil leaves, torn
1 loaf ciabatta, for serving

Steps:

  • Preheat the oven to 325 degrees F.

  • Heat a large Dutch oven over medium-high heat. Add a thin layer of oil to the pan. Pat the meat dry and season very liberally with salt and pepper. Brown the meat to a deep brown all over, 12 to 15 minutes.
  • Peel the potatoes and very thinly slice them lengthwise into planks. Slice the tomatoes working over a bowl to catch their juices.
  • Arrange 1/2 the onions over top of the meat, season with salt, pepper and 1 tablespoon thyme. Arrange 1/2 the potatoes over the onions and dress the potatoes with a liberal drizzle of extra-virgin olive oil, about 1 tablespoon, salt, pepper, rosemary, and a handful freshly grated cheese. Top the potatoes with 1/2 the tomatoes and their juices, and season with salt and pepper. Scatter a few leaves of torn basil. Repeat the layers. Do not add basil to the top layer of tomatoes.
  • Cover the pan and roast the meat in the oven until very tender, 4 hours. Cool and store for make-ahead meal.
  • To reheat: Reheat, covered, in a preheated 325 degree F oven until warmed through, 45 minutes to 1 hour. Take off the lid of the pot, drizzle the top of the meat with oil, sprinkle with cheese, and broil to lightly crust the top. Cut down through the layers of the potatoes, tomatoes, and onions to portion the meat, serve in shallow bowls with crusty bread and pan juices.

SUNDAY STASH BRAISED BEEF

Sunday Stash Braised Beef image

This simple braise is a weeknight savior. Make a big batch and stash it in the fridge or freezer to turn into stews, tacos, hashes, sandwiches, soups, and more.

Provided by Anna Stockwell

Categories     Beef     Beef Rib     Steak     Garlic     Vinegar     Stock     Sunday Stash     Kid-Friendly     Small Plates

Yield 10-12 servings

Number Of Ingredients 9

5 lb. boneless beef short ribs or Denver steaks
1 Tbsp. plus 2 tsp. kosher salt
1 Tbsp. freshly ground black pepper
1 Tbsp. (or more) canola or vegetable oil
5 garlic cloves, crushed
2 Tbsp. tomato paste
1/2 cup red or white wine vinegar
1 1/2 cups (or more) beef or chicken stock
4 dried bay leaves

Steps:

  • Season beef on all sides with salt and pepper. Let sit at room temperature at least 45 minutes or up to 1 hour.
  • Preheat oven to 275°F. Heat 1 Tbsp. oil in a large Dutch oven over medium-high. Working in batches and adding more oil if needed, sear meat until browned on all sides, 4-5 minutes per side. Transfer to a plate.
  • Add garlic and tomato paste to hot pot and stir to coat. Cook over medium-high heat, stirring, until fragrant, 1-2 minutes. Add vinegar and scrape up browned bits from bottom of pot. Stir in stock and bay leaves, then nestle short ribs back into pot. The liquid should just cover the meat; if it doesn't, add more stock or water until it does. Transfer to oven and braise until meat falls apart easily when shredded with a fork, 3 1/2-4 hours. Let cool in liquid.
  • Do Ahead: Beef can be cooked up to 5 days ahead. Store in braising liquid (to keep it from drying out) in an airtight container and chill, or freeze up to 2 months. Before reheating, break off and discard fat cap that forms on top.
  • Cooks' Note: To cook in a slow cooker, transfer to a slow cooker instead of oven and cook on high for 4 hours or on low for 8 hours.

  • Beef Pot Roast. Despite its name, beef pot roast might be the defining braised meat dish: tender, moist, and flavorful. Beef pot roast is the quintessential dish to try when learning about this technique.
  • Veal Osso Buco. This classic osso buco recipe is made by braising veal shanks. Osso buco, the term for "hollow bone" in Italian, is a tough cut of veal with plenty of connective tissue, so the slow cooking method helps to break them apart, leaving the meat juicy and tender.
  • Braised Chicken. Braising chicken gives you not only a tasty meal, but is also a good way of ending up with a delicious chicken broth that you can use to cook other chickens, risottos, or as a soup base.
  • Braised Short Ribs. Braising is one of the most delicious ways of eating ribs, but plan ahead because you need time. Although the preparation and cooking only take 4 hours, the secret of this dish is to cool off the meat once it's done, refrigerate it overnight, and then heat it up again the next day over low heat.
  • Braised Oxtail. Oxtail is an odd cut of meat, full of cartilage and thick at one end while skinny at the other. Braising it breaks down the toughness of the cartilage and leaves tender and juicy pieces of meat – and a delicious amount of pan drippings from the gelatin it releases while cooking, perfect for making a tasty sauce.
  • Braised Lamb Shanks. For these incredible braised lamb shanks you'll need a large Dutch oven or brazier that's big enough to accommodate the meat and stock, and safe for both stovetop and oven.
  • Braised Pineapple Pork Roast. Pork shoulder is an excellent cut of meat to braise. The long cooking time will leave the meat tender and juicy, while the vegetables and pineapple juice that we use for braising impart tons of marvelous flavor.
  • Braised Beef Chuck Stew. Beef chuck is a tough and budget-friendly cut of beef so this recipe is perfect for a large dinner party, just double or triple the amounts.
  • Braised Brussels Sprouts with Bacon. Brussels sprouts are little cabbages, which means they can be tough. Braising softens them so that they're nice and tender, but it also leaves them with some crunch and bite, so they're not soggy on your plate.
  • Braised Belgian Endives. Endives have a sharp and bitter taste when raw, and they're a great addition to salads or a beautiful appetizer when stuffed with creamy matured cheeses.

BRAISED BEEF - 9 SIMPLE STEPS - HOW TO BRAISE BEEF

From homecookbasics.com

  • Season the beef. Generously salt the chuck roast with kosher salt. Skip the iodized salt as it has no use in the kitchen. You want to cover all sides of the beef with the salt.
  • Prepare the vegetables. One of the best things you can do before you start cooking is to get everything ready beforehand. This way you’re not running around doing things when you could be tending to your dish.
  • Brown the beef. What you are shooting for is creating the Maillard reaction with the beef. This is going to bring all kinds of flavor to the dish. This is done by browning your meat and that is why braised beef is so good.
  • Saute the vegetables. Add your already prepared vegetables to the pan and stir them around a bit. Your goal here is to start to coat them with some of the fond that was left from the beef.
  • Deglaze the pan. I hope you were successful not letting the bits on the bottom of the pan burn. Add some of the chicken, beef, or vegetable stock you are using and stir it around.
  • Season the vegetables. I like to add salt and fresh cracked pepper at this point to the veggies. I really don’t add pepper to the beef. The beef is more of a base for the meals I’m going to be cooking during the week and it will often be flavored then.
  • Add the braised beef back to the pan. Place the beef back into the pan. Spread the beef over the vegetables. I tend to try to tuck it in nicely so that the bottom of the chuck roast is touching the bottom of the pan.
  • Slow cook the beef. Add the cover to the pan and slow cook the beef on the stovetop or in the oven. If you’re cooking it on the stovetop than you want to get it to a temp where you see a very light simmer.
  • Let the beef rest. After it has gone long enough and the meat will pull away very easily then you are done. Internal temp usually will be around 190° at this point.
