BENNE WAFERS

1 stick (1/2 cup) unsalted butter, at room temperature
1 cup firmly packed light brown sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1/8 teaspoon baking soda
1 large egg
1 cup all-purpose flour
1 cup toasted sesame seeds
Nonstick cooking spray, for your hands

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • In the bowl of a stand mixer or in a large bowl with an electric mixer, cream the butter for about 30 second, so that it is even softer. Add the sugar, vanilla, salt, baking soda and egg and beat until just combined. Add the flour and mix until smooth. Stir in the sesame seeds.
  • Drop the dough by tablespoonful onto the baking sheets, making sure to leave at least an inch between the wafers for spreading. Spray your hands or a spatula with nonstick spray and press the cookies down to keep them from doming.
  • Bake until golden brown and starting to crisp on the edges, 10 to 12 minutes. Allow the wafers to cool for 1 minute on the baking sheets, then transfer them to a wire rack to cool completely.

7 ounces all-purpose flour
3/4 teaspoon aluminum free baking powder
1/2 teaspoon kosher salt
4 ounces unsalted butter, room temperature
3 1/2 ounces vanilla sugar
1 large egg
4 teaspoons vanilla extract
1 tablespoon whole milk

Steps:

  • Position 1 oven rack in the top third of the oven and another in the bottom third. Heat the oven to 350 degrees F.
  • Sift together the flour, baking powder, and salt in a small bowl and set aside. Cream the butter and vanilla sugar in the bowl of a stand mixer on medium speed for 2 minutes, stopping to scrape down the sides of the bowl after 1 minute. Add the egg and incorporate on medium speed for 30 seconds. Scrape down the sides of the mixer bowl. Add the vanilla extract and milk and blend on low speed for 15 seconds. Add the flour mixture and mix on low speed just to incorporate. Chill the batter in the refrigerator for at least 10 minutes before scooping.
  • Scoop the batter in teaspoon-sized balls and arrange them on 2 parchment paper-lined half sheet pans, approximately 35 cookies per pan. Use the heel of your hand to slightly flatten each ball. Bake, 2 pans at a time, rotating the pans halfway through the baking, until golden brown, about 15 to 20 minutes. Remove the pans to a cooling rack to cool completely before removing the cookies from the pan.

1 cup All-Bran® Original
2 eggs, separated
1 cup buttermilk or sour milk
6 tablespoons melted margarine or butter

Steps:

  • 1. In large mixing bowl, stir together flour, sugar, baking powder, soda, salt and KELLOGG'S ALL-BRAN cereal. Slightly beat egg yolks. Add egg yolks, buttermilk and melted margarine to cereal mixture. Stir until well blended.2. In small mixing bowl, beat egg whites until stiff peaks form. Fold into batter.3. Bake in preheated waffle iron according to manufacturer's directions or until steaming stops and waffle is golden brown. Serve hot with syrup or fruit topping, if desired.

1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

Since I live in the South people refer to these cookies as Benne Wafers, they are actually Sesame Seed Cookies. Toasting benne (sesame) seeds develops their flavor and also gives these cookies a slightly crunchy texture.

1 cup sesame seeds
¾ cup butter, melted
1 ½ cups packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the benne (sesame) seeds on an ungreased baking sheet and toast for 10 to 12 minutes, until light brown. Watch closes so that they don 't burn.
  • In a large bowl mix the brown sugar, melted butter or margarine, egg, vanilla extract, flour, salt, baking powder and toasted sesame seeds together until combined.
  • Drop dough by 1/2 teaspoonfuls 1 1/2 inches apart onto a lightly greased baking sheet.
  • Bake at 375 degrees F (190 degrees C) for 4 to 6 minutes, until light brown. Let cookies cool for about 2 minutes before removing from baking sheets to a wire rack to cool completely. Store cooled cookies in an airtight container.

These are excellent on their own or sticking out of a bowl of vanilla ice cream. Originally a French recipe, brandy wafers have been popular in Scotland since the early 1700s. The French recipe calls for port wine instead of brandy - try them BOTH ways!

2 ounces light corn syrup
2 ounces butter
2 ounces flour
2 ounces caster sugar (superfine sugar)
1/2 teaspoon brandy
1/2 teaspoon ground ginger

Steps:

  • Preheat the oven to 450F and grease a baking sheet.
  • Melt the butter, syrup and sugar over a gentle heat and then stir in the flour, ginger and brandy.
  • Keep stirring for about five minutes.
  • Drop small teaspoonsfuls onto the baking sheet, keeping them well apart.
  • Bake for five minutes or until they are a pale golden brown.
  • Using the greased handle of a large wooden spoon, roll the wafers round the handle while they are still hot- take care not to burn yourself!
  • Allow to cool before use.

1/2 cup butter
3/4 cup sugar
1 teaspoon cinnamon
1 cup quick-cooking oatmeal
2 tablespoons flour
1 teaspoon baking powder
1 egg

Steps:

  • Melt butter and stir in remaining ingredients.
  • Butter and flour 2 or 3 cookie sheets.
  • Drop batter from teaspoon onto cookie sheets, 3 inches apart. Bake at 375 degrees about 6 to 8 minutes, until golden brown.
  • Let stand 1 or 2 minutes before removing from cookie sheet. Then remove quickly from cookie sheet with sharp knife and curve over clean broom handle and cool.
  • Store in covered container to keep crisp. These are very fragile cookies.

  • 1. Combine KELLOGG'S ALL-BRAN cereal and milk. Let stand 2 minutes or until cereal softens. 2. In large mixing bowl, stir together flour, salt, onion and caraway seeds. Using pastry blender, cut in margarine until mixture resembles coarse meal. Stir in cereal mixture. Shape dough into ball. Roll out to 1/8 inch thick on floured pastry cloth or waxed paper. Cut into 2-inch circles or shapes. Place on ungreased baking sheet.3. Bake at 350°F about 10 minutes or until lightly browned. Do not overbake. Remove from baking sheet and cool on wire rack. Store in airtight container.
