BRANDY SOAKED CHERRIES
Because fresh cherries are not always available, I used dark sweet cherries I froze from last season. Frozen cherries are easily available in stores. Of course using fresh cherries in this recipe is ideal when using them in cocktails to ensure firmness. Fresh cherries also make for the best presentation when preparing them as a gift. These frozen cherries are on the softer side and will be used in my dessert recipes.

Steps:
- Wash and pit fresh cherries.
- In a saucepan combine 2/3 cup sugar, 1/2 teaspoon vanilla extract and 3 1/2 cups Brandy or preferred liquor. Simmer on low to medium low till sugar is dissolved. Take precautions when using liquor around the stove as it could ignite. Remove from heat as soon as sugar is dissolved.
- Pack pint jars with cherries and pour Brandy over them. Seal and let sit a least a week before using.
SPICED BRANDIED CHERRIES
This recipe calls for heating the liqueur to hasten the maceration time, and further impregnate the cherries with booze.

- In a small saucepan, combine sugar and spices with a cup of water. Bring to a simmer, stirring until sugar dissolves. Let simmer for 5 minutes.
- Turn off heat and add cherries and brandy to pot. Let cool, then store mixture in a jar in refrigerator for at least 2 days before eating, and up to several months. These are great over ice cream.

Steps:
- In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
- Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
- Store in refrigerator 4 to 6 weeks before serving.

- Mix cherries, brandy, and 1/3 cup white sugar in a bowl; let soak for 1 hour.
- Preheat the oven to 450 degrees F (230 degrees C). Spray a 9-inch pie pan with cooking spray.
- Remove cherries from brandy mixture using a slotted spoon and transfer to the prepared pie pan. Pour brandy mixture into a blender; add remaining 1/3 cup sugar, milk, flour, eggs, vanilla extract, lemon zest, salt, and allspice to the blender. Pulse mixture until batter is smooth; pour over cherries.
- Bake in the preheated oven for 5 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until golden and puffy, 45 to 50 minutes. Cool slightly and dust with confectioners' sugar to serve.

- Combine butter, corn syrup and salt; blend until smooth.
- Add confectioners' sugar and mix well.

- Combine cherries and brandy and microwave uncovered on high 45 seconds; set aside. Combine chocolate and margarine/butter. Microwave on high 1-1/2 to 2 minutes, or until melted, stirring every 30 seconds; set aside.
- Beat eggs and sugar with electric mixer on high about 5 minutes, till thick and lemon colored. Beat in chocolate mixture, milk and vanilla. Beat in flour. Stir in undrained cherries and nuts.
- Pour in 9 x 1" round baking pan; place on a baking sheet. Bake at 350 F for 35-40 minutes (45-50 to springform pan). Cool on wire rack 10 minutes. Remove from pan and cool completely.
- GLAZE: Combine chcolate with margarine/butter; microwave on high 1-1/2 to 2 minutes, or till melted, strirring twice.
- Spread 1/4 cup of Glaze evenly over top and sides of cake. Chill 10 minutes. Frost top and sides of glaze with remaining glaze. Chill till set. Let stand at room temperature 10/15 minutes before serving.
