Fresh herbs and good quality extra virgin olive oil makes a good bread dipping sauce.

1 tbsp minced fresh basil
1 tbsp minced fresh parsley
1 tbsp minced garlic
1 tbsp minced fresh oregano
1 tbsp fresh thyme
1 tsp black pepper
1/2 tsp kosher salt
1/4 tsp red pepper flakes
2 tsp olive oil

Steps:

  • Place all ingredients except the olive oil into a small food processor and puree until finely chopped, scraping down the sides when necessary. (Or, use a really sharp knife and chop until very finely minced).
  • Add the small amount of olive oil and pulse until incorporated.
  • Mix 1 teaspoon of spices to 2 tablespoons of extra virgin olive oil. Store unused portions in the refrigerator.
  • Serve with bread of choice.

Steps:

2 teaspoons parmesan cheese
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried parsley flakes
1/2 teaspoon onion powder
1/4 teaspoon thyme
1/4 teaspoon tarragon (optional)
10 tablespoons olive oil, for mixing

Steps:

  • Grind spices until fine (either in the palm of your hand or in a spice grinder).
  • Add cheese to spices and mix well.
  • Store in a spice container until ready to use.
  • In a small bowl add 2 tbls of olive oil to one teaspoons of spice mix.
  • Mix well.
  • Let set for at least five minutes.
  • Break off chunks of Italian or peasant bread and dip!
