- Place Brie in an small ungreased cast-iron skillet or shallow 1-qt. baking dish. Combine the butter, almonds and, if desired, brandy; pour over Brie. , Bake, uncovered, at 400° until cheese is softened, 10-12 minutes. Serve with crackers or vegetables.

BAKED BRIE WITH ALMONDS

Steps:
- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
- Place the pastry sheet on a lightly floured work surface and starting from the center of the dough, roll it out into a 10-inch square. Place the brie round in the center of the dough. Fold the dough up and over the cheese, pleating the dough to enclose like a packet or purse. Trim the dough, if needed. Flip the packet over, and place on the prepared baking sheet.
- Whisk together the egg and water; brush the brie packet with the egg mix.
- Bake until golden, about 20 minutes.
- Meanwhile, add the butter to a small saute pan set over medium heat. Swirl and cook until brown and the butter smells nutty, 4 to 6 minutes. Lower the heat, add the almonds and gently swirl the pan to coat with the butter and cook until the almonds are golden, about 4 minutes. Remove from the heat and place in a bowl so they stop cooking.
- Slice the apples and place them in a large bowl filled with water and the lemon juice.
- Remove the brie from the oven, place it on a serving board using a spatula and allow it to cool for 3 minutes. Meanwhile, dry the apple slices, slice the baguette on a bias and place them on the board.
- Pour the almonds over the brie and sprinkle with the thyme. You can also drizzle a little bit of the buttery almonds over the baguette slices. Cool about 3 minutes and serve with the fresh apple slices and sliced baguette.
BAKED BRIE WITH ALMONDS
This easy baked Brie is a great appetizer if you're hosting a small holiday party. This Brie recipe is quick to make, but it'll disappear just as quickly.

- Preheat oven to 350ºF.
- Line a baking sheet with parchment paper and place Brie in the center. Bake for 8-10 minutes. To check if it's ready, gently touch the center of the Brie; it should be very soft.
- With a spatula, carefully transfer Brie to a serving plate, drizzle with honey, and top with honeycomb pieces, Marcona almonds, figs, and rosemary sprigs. Serve with crackers.

Spread the chutney over the Brie; sprinkle with the raisins and almonds. Fold the dough up and over the cheese and fillings, pleating the dough to enclose like a packet or purse. Trim the dough, if needed. Flip the packet over and place on the prepared baking sheet.
- Whisk together the egg and 1 teaspoon water; brush the Brie packet with the egg mixture.
- Bake until golden, about 20 minutes. Remove from the oven and sprinkle with the thyme. Cool for about 3 minutes. Serve with sliced apples and baguettes.
BRIE, ALMOND, & PEAR PASTRIES W/ ORANGE LIQUEUR
Steps:
- Roll out pastry sheets to 1/8 inch thickness and pierce generously with a fork. Cut into 4 in. squares. In a sauce pan, cook the pears on medium heat until they are translucent, about 10 minutes. Stir occasionally. Arrange small amounts of pears, almonds, and brie in the center of each pastry square. Fold the corners of the pastry into a purse and pinch to close using your fingers. Brush the tops of the pastries with the egg. Place the pastries on a baking sheet lined with parchment paper and bake according to the pastry instructions (until golden and flaky). Meanwhile, in a medium sauce pot, bring the Orange Liqueur, bay leaf and ground pepper to a boil. Reduce the heat and simmer until the liquid is reduced to a light syrup (1 cup). Drizzle each pastry purse with the reduced Grand Marnier sauce and serve hot!

ORANGE LIQUEUR PEARS

- Peel the pears but leave the stem intact.
- Trim the base so they stand upright.
- I take a teaspoon and take out some of the core too, as it allows the syrup to get right up inside.
- In a saucepan combine the juice, water, sugar, rind and wine.
- Stir over a low heat until the sugar has dissolved then add the pears and simmer for 20 minutes or until the pears are tender.
- Baste with the syrup from time to time.
- Remove the pears and increase the heat under the pan.
- Reduce until the syrup has reached a more sticky saucy consistency.
- Pour this syrup over the pears and allow them to cool then add the orange liqueur.
- When cold remove the orange rind and serve with a little of the syrup spooned over.

ALMOND & HONEY PASTRIES WITH ORANGE CREAM

- Set aside a quarter of the almonds. Put the rest in a food processor with the icing sugar, half the butter, orange blossom water, cinnamon and egg yolk. Whizz to a paste. Scrape into a bowl and stir in most of the remaining chopped nuts.
- Unroll one sheet of brik pastry at a time, brush all over with melted butter and halve into 2 semi-circles. Shape 1 heaped tbsp of the nut mixture to look like a thin wedge shape along half the pastry edge you've just cut (leaving 2.5cm border on the rounded side), so it looks as if you're cutting the semi-circle of pastry into pieces like a cake. Roll up like a pastry cone, sealing the nut mixture inside, then brush all over with more butter and fold over the open, wide end to seal. Sit on a baking tray, end flap side down to help it stay closed, and repeat until nut mixture is used up. Cover with cling film and chill. Put zest, yogurt, cream and icing sugar in a mixing bowl. Cover and chill.
- Heat oven to 200C/180C fan/gas 6, put the pastries in and bake for 15 mins until golden and crisp. Just before they're ready, beat together the yogurt mixture until thick. Pile pastries onto a serving dish, drizzle with honey and scatter with remaining nuts. Serve with the orange cream and Honeyed orange & grapefruit (see 'Goes well with').

- Preheat oven to 400°F.
- Separate the puff pastry and roll each piece into an 8-inch by 8-inch square.
- Whisk the marmalade and Grand Marnier together and set aside.
- Lay a puff pastry square on a flat work surface and place the brie wheel in the center.
- Using a paring knife, cut around the Brie to form a circle that is the same size as the cheese.
- Reserve the scraps of pastry for decorative shapes and set the circle aside.
- Lay the second sheet of puff on the work surface and trim off the corners, to create a large, rough circle.
- Place the Brie in the center and spoon on the marmalade mixture.
- There should be an opening at the top of the cheese.
- Brush the top edges of pastry with the egg and then lay the reserved circle over the top and press down lightly to seal it.
- Brush the top and sides of the package with more egg wash and decorate the top with pastry shapes.
- Place on a parchment lined baking sheet and freeze for 1 hour before baking.
- Bake for 30 minutes, or until the pastry is golden, and cheese is warmed through, and just beginning to melt.

- Preheat oven to 425 degrees F (220 degrees C).
- Coarsely chop 1/4 cup almonds. Combine chopped almonds, brown sugar, and mustard in a bowl; mix well.
- Cut Brie round horizontally in half. Place 1 half cut-side up in the center of a round baking stone. Spread half of the sugar mixture evenly over Brie. Top with the remaining half, cut-side up, and spread remaining sugar mixture on top. Sprinkle with remaining 1/4 cup sliced almonds.
