BRIOCHE ROLLS
Tiny versions of this bread get their rich flavor and light texture from lots of eggs and butter. The dough needs to rise overnight, so plan accordingly.

Yield Makes 2 pounds dough, enough for 32 small rolls

Steps:
- Combine milk, sugar, yeast, and 1/2 cup bread flour in the bowl of a mixer. Mix until just combined. Sprinkle with remaining 3/4 cup plus 2 tablespoons bread flour, the all-purpose flour, and salt to cover; do not mix. Let stand for 45 minutes.
- Using the dough-hook attachment, mix dough to combine. Add 4 eggs, and continue to mix until dough is smooth and does not stick to sides of bowl, about 5 minutes. Mix in remaining egg. Add butter, 1 tablespoon at a time, mixing until incorporated. Continue mixing until dough is smooth and comes together in a ball around the dough hook, about 5 minutes more.
- Coat a large bowl with cooking spray. Transfer dough to bowl, and cover with plastic. Let stand in a warm place until doubled in volume, about 1 1/2 hours.
- Punch down dough, and re-cover. Refrigerate for 1 1/2 hours. Punch down dough again, re-cover, and refrigerate overnight.
- Preheat oven to 425 degrees. Turn out dough onto a lightly floured surface, and punch down. Working in batches (refrigerate remaining dough as you work), evenly divide dough into thirty-two 1-ounce pieces. Punch down each piece using the palm of your hand, and press each into a tight ball using the heel of your hand.
- Butter small Turk's-head or similar shaped cast-iron pans. Place dough balls inside molds (dough should fill three-quarters of each mold section). Loosely cover pans with plastic; let stand in a warm place until dough balls are soft and springy to the touch, about 30 minutes.
- Lightly brush tops with egg wash. Bake for 10 minutes. Reduce heat to 350 degrees, and continue to bake until tops are dark gold (time will vary depending on size of pans). Remove from oven, and immediately remove brioche rolls from pans, by gently tapping, and transfer to a wire rack. Let cool completely.
STRAWBERRY CHEESECAKE FRENCH TOAST ROLL RECIPE BY TASTY

- Make the filling: In a large bowl, use a spatula to combine the cream cheese, powdered sugar, and the vanilla extract. Mix together until fluffy and smooth.
- Lay out a piece of plastic wrap and arrange 4 rows of 2 whole slices of brioche bread. Cut 2 pieces of brioche bread in half and add to the end of each row.
- Beat 1 egg in a small bowl. Brush egg wash on the left side of each piece of bread, except for the farthest left pieces in each row. Overlap the right edges over the egg wash and press to adhere. Brush egg was along the bottom of each row of bread, except for the bottom row. Overlap the top edges of each row over the egg wash and press to adhere.
- Use a spatula to spread an even layer of the filling over the bread. Distribute the strawberries over the filling.
- Using the plastic wrap for help, roll up the bread. Twist the ends of the plastic to seal.
- Freeze for 1 hour.
- In a medium bowl, whisk together the remaining 3 eggs, the milk, sugar, and cinnamon.
- Preheat the oven to 425°F (220°C).
- Remove the roll from the freezer. Remove plastic wrap and transfer to a greased baking sheet. Brush all over with the cinnamon egg mixture.
- Bake for 12 minutes, or until golden brown.
- Remove from oven. Dust with powdered sugar, slice, and serve with a drizzle of maple syrup.

MINI BRIOCHE ROLLS

- Combine the water, yeast, and sugar in the bowl of an electric mixer fitted with the paddle attachment. (If the bowl is cold, start with warmer water so it's at least 110 degrees when you add the yeast.) Mix with your hands and allow to stand for 5 minutes until the yeast and sugar dissolve. Add the eggs and beat on medium speed for 1 minute, until well mixed. With the mixer on low speed, add 2 cups of the flour and the salt and mix for 5 minutes. With the mixer still on low, add 2 1/4 more cups of flour and mix for 5 more minutes. Scrape the dough into a large buttered bowl and cover with plastic wrap. Refrigerate overnight.
- The next day, allow the dough to sit at room temperature for 1 hour. Meanwhile, grease 20 mini brioche tins. Set aside.
- Place the dough in the bowl of an electric mixer fitted with the dough hook, add the softened butter in chunks, and mix for 2 minutes, adding additional flour as needed to make a ball. Turn the dough onto a lightly floured board and divide the dough into 20 (1 3/4-ounce) balls and place them in the tins. Cover the tins with a damp towel and set aside to rise at room temperature until doubled in volume, about 2 hours.
- Preheat the oven to 350 degrees F. When the rolls have risen, brush the top of each with the egg wash and bake for 20 minutes, or until the tops spring back and it sounds slightly hollow when tapped. Turn the rolls out onto a wire rack to cool.

I saw something similar on TV and thought I would like to make my own. This dough rests overnight. this is awesome recipe i also added bacon to some wicked good

Steps:
- Proof yeast and honey and warm water.
- Add the eggs.
- Add 6 Tablespoons of the butter that you have melted.
- Add warmed milk; mix.
- Add flour; dough will be sticky. ( i had to add about 1 cup more flour ,but i used jumbo eggs ).
- Knead until smooth; cover and refrigerate overnight. i put in ice cream bucket and just closed lid
- Next morning:.
- Pat out on a floured board; shape in a rectangle about1/4 inch high.
- Sprinkle with dill weed; sprinkle with cheese. Add ham here if you wish
- Roll up; cut.( i used pizza cutter worked great ) put cut side up let rise until double
- Put in a 9x13 inch baking pan that has been buttered.( i used jelly roll pan, liked that better ,i pam,ed and buttered pan ).
- Bake 20 minutes 375 degrees Fahrenheit.

- In the bowl of a stand mixer, combine the milk, instant yeast, sugar, eggs, butter, 3 1/2 cups flour, and salt. With a dough attachment, mix the ingredients until the flour is incorporated, about 4-5 minutes. If dough is too sticky, add flour 1 tbsp at a time but it's better to be on the sticky side. Cover the dough with plastic wrap and let rest at room temperature for 1 hour or until it has doubled in size.
- Lightly dust your work surface with some flour. Remove dough from mixing bowl and punch down. Roll the dough to about 1/4" thick and a rectangle about 12x16 inches. It doesn't have to be perfect. I use a 9x13 baking dish as reference. Spread the softened butter evenly over the dough. Sprinkle the cheese and seasonings on top and press in so it stays.
- Starting with the long edge close to you, roll the dough into a log, trying to keep tight throughout. With a sharp knife, cut 12 rolls about 1" thick. Place the rolls in a parchment-lined 9x13 baking dish. Cover with plastic wrap and let rise for 20-30 minutes.
- Preheat oven to 350°F. Bake the rolls for 25-30 minutes or until golden brown on top and the middles are done.

- In a large 5 quart bowl or pot, mix together the water, yeast, salt, eggs, honey, and melted butter. Add the flour and use a wooden spoon or sturdy spatula to stir the mixture together until the flour is incorporated. The mixture will be lumpy and will likely be wetter than other bread doughs you've worked with before.
- After 2 hours, place the loosely covered pot in the fridge and refrigerate for 2 hours or up to 5 days.
- When you're ready to make the rolls, generously dust a counter top or other flat surface with flour. Remove about 1/3 of the dough (I'm not real precise here. I've done it with nearly half of the dough. It works just as well, but you'll have mondo sized rolls). Place it on the floured counter. Sprinkle the top of the dough and your hands with flour. Use your hands to press the dough out into a roughly 10 x 16 inch rectangle (Again, I'm not ultra precise here).
