FETA BURGERS
A Greek-inspired twist on burgers. Great with cole slaw or a kale salad. I devised this recipe when I had a bunch of mint, parsley, and feta cheese on hand.

Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper together in a large bowl until evenly mixed; shape into 6 patties.
- Cook the burgers until they are beginning to firm, and are hot and slightly pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

FETA-STUFFED HAMBURGERS
This is a great hamburger for the grill. Feta cheese gives it a rich and creamy taste.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Steps:
- To make the burgers, combine the ground beef, egg, dried basil and oregano, breadcrumbs, ketchup, garlic, onion and feta in a large bowl and shape into 4 burger patties.
- Grill or sauté in a pan lightly coated with cooking spray. Cook on 1 side for 7 minutes, then turn over and cook 3 to 5 minutes or just until beef is done.
- Combine all the sauce ingredients in a food processor and purée until smooth.
- Serve the burgers with the sauce.

FETA CHICKEN BURGERS

- Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to an airtight freezer container; return to freezer. To use, broil frozen patties as directed, increasing time as necessary.

FETA CHEESEBURGER FOR 1
This is not a burger that you can BBQ as it is a bit fragile. It tastes wonderful, but can be a bit messy. Use either beef or lamb (I love the lamb). You can increase this recipe for as many burgers as you want to make. I add additional cheese slices as well as the feta interior. I like to serve the burger with Recipe #13613. Enjoy

Steps:
- Make two equal sized patties.
- Mix chili sauce, ketchup, Worcestershire, tarragon, vinegar, garlic, chili, oregano, salt and pepper; mix well.
- Pour this sauce on one side of your hamburger.
- Add feta cheese.
- Place other patty on top and seal edges well.
- Squeeze a bit of lemon juice over patty.
- Fry hamburger patty on high heat for about 2 minutes on one side. Flip and turn the heat to medium. Be careful, this patty is a bit fragile. Cook another 2 minutes.
- Lower heat to low. Add mushrooms to the pan. Cover the pan and continue cooking until patty is well done, about 10 minutes.
- Meanwhile, toast the bun on the inside. Place patty on bun; garnish hamburger with tomato, onion, lettuce and mustard--or any of your favorite toppings. Serve.
