BRIOCHE WITH CHOCOLATE CENTRES
This is a really delicious and different sweet bread. You'll feel like you are eating something from a classy french bakery. Simple and delicious. Worth the extra effort. Prep time doesn't include time for dough to double in size. Recipe was discovered in Donna Hay's "dining" cookbook

BRIOCHE
A fresh brioche can be served with jelly or other preserves to accompany tea or coffee, or with pate or hors d'oeuvre. The tops of the small ones can easily be pulled away, giving space for a sweet or savory filling. Brioche dough can also be used for wrapping other ingredients such as beef for boeuf-en-croute, a salmon filling for a koulibiaca, or a spicy garlic sausage.

Steps:
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, stir together the flour sugar and salt. Make a well in center of the bowl and mix in the eggs and yeast mixture. Beat well until the dough has pulled together, then turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
- Flatten the dough and spread it with one third of the butter. Knead this well. Repeat this twice to incorporate the remaining butter. Allow the dough to rest for a few minutes between additions of butter. This process may take 20 minutes or so. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, cover with plastic wrap, and refrigerate 6 hours or overnight. It needs time to chill in order to become more workable.
- Turn the dough out onto a lightly floured surface. Divide the dough into two equal pieces, form into loaves and place into prepared pans. Cover with greased plastic wrap and let rise until doubled in volume, about 60 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease two 9x5-inch loaf pans (see Cook's Note to make rolls). Beat the egg yolk with 1 teaspoon of water to make a glaze.
- Brush the loaves or rolls with the egg wash. Bake in preheated oven until a deep golden brown. Start checking the loaves for doneness after 25 minutes, and rolls at 10 minutes. Let the loaves cool in the pans for 10 minutes before moving them to wire racks to cool completely.

Steps:
- Butter a large bowl; set aside. Stir together warm water, 1 teaspoon sugar, and the yeast in a small bowl. Let stand until foamy, about 5 minutes.
- Put 4 cups flour, remaining 1/4 cup sugar, and the salt into the bowl of an electric mixer fitted with the paddle attachment. Add yeast mixture; mix on medium speed until combined. Add 8 eggs, 1 at a time, mixing well after each addition; mix until well combined, about 2 minutes. Replace paddle with dough hook. Mix on medium speed 2 minutes.
- Add butter, 1 tablespoon at a time, mixing until combined after each addition. Mix until dough is smooth, shiny, and elastic, about 10 minutes. If dough is very sticky and wet, add up to 1/2 cup flour (only the bottom quarter of the dough should stick to the bowl); mix until combined. Transfer dough to buttered bowl. Cover with a clean kitchen towel, and let rise at room temperature until almost doubled in bulk, about 1 1/2 hours. Punch down dough; cover with plastic wrap, and refrigerate overnight (at least 12 hours).
- Butter two 8 1/2-by-4 1/2-by-2 1/2-inch loaf pans; set aside. Transfer dough to a lightly floured work surface. Divide dough in half. Roll out each half into a 7-by-15-inch rectangle. Sprinkle chocolate over rectangles. Starting from a short side, tightly roll each into a log; pinch seam to seal. Place each log, seam down, in a buttered pan. Cover with a clean kitchen towel; let rise at room temperature until dough reaches rim of pans and no longer feels cool, about 3 hours.
- Preheat oven to 375 degrees. Lightly beat remaining egg; brush tops of loaves with egg. Sprinkle with sanding sugar. Bake until tops are deep golden brown, about 35 minutes (cover with foil after 20 minutes if browning too quickly). Run a knife around edges of pans to loosen, and turn out onto a wire rack; let cool completely.
BRIOCHE WITH CHOCOLATE CHIPS ABM
Posting so I don't lose this one. So rich, so good, so easy with an automatic bread machine. This was given to me by a French work colleague who got it from a friend off of a French ABM recipe site. If the chocolate chips aren't frozen, or even if they are, they melt easily and you may wind up with chocolate swirl brioche, which is still good. Sometimes it works out ok for me and sometimes it doesn't. Put in the order your machine needs and use the sweet bread setting.

Steps:
- Put all in the bread machine in the order needed for your machine.
- The original recipe calls for 2 packets of vanilla sugar and 3 Tbsp sugar.
- Freeze the chocolate chips to stand a chance of them not melting and giving you swirl bread.
- Use the sweet bread setting on your machine, time to cook will vary, for me, 3 hours and 20 minutes.

- In a bowl, combine the egg yolks, granulated sugar, and corn starch. Heat the milk with 1 1/2 tablespoons of cream, then pour it over the egg yolks and mix quickly; bring everything over low heat and continue to stir for a few minutes, until you obtain a smooth crème anglaise thick enough to coat a spoon once lifted out of the mixture.
- Remove it from the heat and melt in the chopped chocolate, then transfer the creme into a bowl, seal with plastic wrap, and chill in the refrigerator for 1 hour. Prepare a mixture of 4 tablespoons of Maraschino liqueur and 4 tablespoons of water. Cut the brioche into cubes and brush them with the liqueur mixture.
- Whip the rest of the cream with 1 tablespoon of powdered sugar, then incorporate the sour cream. Distribute some of the brioche into 4 glasses, cover it with a bit of the chocolate crème, then continue adding layers of brioche and whipped cream until you use up all the ingredients. Top with 3 chopped raspberries each and serve.
