3 tablespoons unsalted butter, plus more for greasing
1 1/2 cups finely crushed herb garden crackers or other flat bread crackers
1/2 cup grated Parmesan
4 tablespoons melted butter
1 1/2 pounds fresh broccoli florets, chopped
3 tablespoons all-purpose flour
1 1/2 cups milk
1 1/2 tablespoons ketchup
1 1/2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon ground black pepper
Pinch cayenne pepper
5 ounces cream cheese, cut into pats
5 tablespoons crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish with butter or nonstick cooking spray.
  • In a bowl, mix the crushed crackers, Parmesan and melted butter. Place the broccoli in the baking dish.
  • In a pot, melt the remaining 3 tablespoons butter. Add the flour and stir together. Continue to stir while cooking for about 3 minutes. Whisk in the milk, stir to break up the flour, and heat the mixture to a soft boil, stirring constantly. Once the milk thickens, add the ketchup, Worcestershire, salt, sugar, pepper and cayenne. Add the cream cheese and blue cheese. Whisk until blended smoothly. Pour the cheese sauce over the broccoli. Pour the cracker mix over the casserole. Bake, uncovered, for 30 minutes.

2 pound Velveeta Cheese
Fresh or Frozen Broccoli, Fresh 1 1/2 pounds [not much stalk]; Frozen 2 packages florets - I
do not use Frozen
2 Can Campbell's Cream of Celery Soup {original recipe - not the lite/fat free soup}
2 Can Rotel "Original" {I do not use the "mild" or "hot" rotel}
3 to 4 Cups Cooked Instant Rice, I use "Minute Rice"

Steps:

  • Instructions: 1. Prepare the Instant Rice in accordance with the instructions on the box. Set aside 2. Steam the Fresh Broccoli or cook the Frozen Broccoli according to instruction. Set aside. 3. Open the Can of Celery Soup and Rotel. 4. In a large pan, pour in the Celery Soup and Rotel. Cut the Velveeta Cheese into small hunks and with a wooden spoon, mix the cheese into the rotel and soup. 5. Turn the heat under the pan to Medium and stir sufficiently to keep the mixture from burning. You want to melt the cheese into the mixture and it will be hot when you have finished. As soon as this has been accomplished, Remove from the Heat. 6. Pour the Cooked/Steamed Broccoli on top of the mixture and Gently stir it into the mixture. 7. Add Cooked Rice - slowly and Gently stir into the mixture until your mixture is thickened sufficiently to serve. 8. Pour Mixture into a serving dish [I use pyrex casserole dishes or corning ware]. If you have extra broccoli, sometimes I place a few pieces on top for decor. Note. You will not be placing this in the oven. When you are ready to serve, Place desired amounts in the microwave and heat. 9. Storage for leftovers. I am strictly guessing on the rice, as I always make a little extra rice - be careful of putting too much rice as it will dry your dish out. I found this recipe in a cookbook given to me for Christmas called "Irish Cooking". The casserole is really simple to make, and it has an almost quiche-like texture to it. The original recipe called for regular cottage cheese, but we actually had FAT FREE on hand. I don't think it took away from the flavor of the dish at all. This dish might also be nice served at brunch or breakfast.

1 (10 ounce) package yellow rice
1 (16 ounce) package frozen chopped broccoli
1 (16 ounce) jar process cheese sauce

Steps:

  • In a saucepan bring water to a boil. Add rice, reduce heat, cover and simmer for 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • While the rice is cooking, place frozen broccoli in large skillet. Heat stove to low-medium and defrost broccoli When the broccoli is 90% defrosted add processed cheese sauce to the broccoli and let melt. When rice has completed cooking add broccoli-cheese mixture and rice to 9x13 baking dish and mix well.

6 tablespoons butter
1/2 lb Velveeta cheese
1 (1 lb) package Ritz crackers or 35 Ritz crackers
2 drops Worcestershire sauce

Steps:

  • cook broccoli until it comes apart and color is nice and green, drain.
  • Arrange in a 9x9 or 8x8 greased pan.
  • Top with cubed cheese.
  • Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.

4 cups chopped broccoli
1 (10 ounce) can of cream of chicken soup
1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
1/4 cup of butter melted (1/2 stick)
2 large eggs, slightly beaten
1/2 medium onion finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed

Steps:

  • Preheat oven to 350*F
  • Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
  • Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
  • Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  • Add 3/4 cup of cheese to broccoli mixture and mix well.
  • Pour entire contents into an 8x8" square baking dish.
  • Top with remaining 3/4 cup of cheese and Ritz crackers.
  • Bake for 30 minutes or until cheese is melted and top is golden.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese

1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.
