This is our family version/replacement of the traditional green bean casserole that everyone always brings. I am seriously in trouble if this is not on the holiday table!

4 cups chopped fresh broccoli
1 (10.75 ounce) can cream of mushroom soup
1 cup shredded Cheddar cheese
¼ cup mayonnaise
2 cups dry bread crumbs
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Put broccoli in a large microwave-safe bowl with a small amount of water in the bottom; cook in microwave until tender, about 5 minutes. Drain liquid from bowl. Stir mushroom soup, Cheddar cheese, and mayonnaise with the broccoli until evenly mixed; pour into prepared casserole dish.
  • Mix bread crumbs and melted butter together in a separate bowl; spread evenly over the broccoli mixture.
  • Bake in preheated oven until the surface is bubbling, 20 to 30 minutes.

1 cup uncooked white rice
5 tablespoons margarine
1 cup chopped onions
1 cup chopped celery
1 (10 ounce) package chopped frozen broccoli, thawed and drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) jar processed cheese spread with jalapeno

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Melt margarine in a medium skillet over medium heat. Saute onions and celery until tender.
  • In a 2 quart casserole dish combine onions, celery, cooked rice, broccoli, mushroom soup and processed cheese spread; mix well.
  • Bake in preheated oven for 35 minutes.

This recipe was handed down to my son-in-law by his mother who got it from her mother. I think you will like it.

1 package(s) frozen broccoli (10-14 oz size)
1 large egg, slightly beaten
1/2 cup(s) mayonnaise
1 small onion, finely diced
1 can(s) cream of mushroom soup
1/4 cup(s) melted butter
1 cup(s) italian bread crumbs (i make my own)
1 cup(s) grated cheese (your favorite)

Steps:

  • Cook broccoli about 5 minutes in microwave at full power with about ¼ cup water (or buy steamable packages) Drain well Mix broccoli, egg, mayonnaise, onion, soup and cheese and pour into a greased 2 quart casserole dish Mix bread crumbs with melted butter and sprinkle over broccoli Bake at 350º for 30 minutes
  • TO MAKE BREAD CRUMBS: Cut stale bread into 1/2" cubes and place in a single layer on cookie sheet Spray generously with Olive Oil cooking spray, sprinkle with garlic powder and Italian seasoning mix. Stir with hands to mix well and make sure powder and seasoning adhere to bread cubes Bake in 350º oven for approximately 10 minutes until golden brown Pour into food processor and process until bread crumbs are consistency of your choice (I like mine a little coarse for this dish).
  • You can substitute crushed Rritz crackers for the bread crumbs for a slightly crunchier topping.

3 tablespoons butter
1 onion, chopped
2 (10 ounce) packages chopped frozen broccoli, thawed
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
2 eggs, beaten
½ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt
1 ½ teaspoons lemon juice
12 buttery round crackers, crushed fine
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 3 tablespoons butter in a medium skillet over medium-high heat. Saute onion until golden.
  • In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayonnaise, eggs, garlic salt, pepper, seasoned salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter.
  • Bake uncovered in preheated oven for 45 minutes, until heated through and browned on top.

On the day before Thanksgiving I got a frantic call from my best friend. She needed Paula Deen's Broccoli Casserole recipe! I looked on Zaar and couldn't find it so I am posting it now. She says it is the BEST broccoli casserole. I have to take her word for it since I haven't made it.

2 (10 ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup sharp cheddar cheese, grated
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 eggs, light beaten
2 cups crackers, crushed
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F
  • Spray a 13 x 9 inch baking dish with cooking spray.
  • In a large bowl, combine broccoli, mayonnaise, cheese, soup and eggs.
  • Mix well.
  • Place the mixture in pan.
  • Top with crushed crackers and pour the melted butter evenly over crackers.
  • Bake for 35 minutes or until set and browned.
