1 (2-pound) bag frozen chopped broccoli cuts, thawed and drained
1 cup light mayonnaise
4 eggs
1½ teaspoons kosher salt
¼ teaspoon coarse black pepper
1 pinch cayenne pepper

Steps:

  • 1. Preheat oven to 375° F. 2. Liberally coat a 9-inch round baking dish with non-stick cooking spray. 3. In a large bowl, place broccoli, mayonnaise, eggs, salt, black, and cayenne peppers, and mix well. 4. Pour broccoli mixture into prepared baking dish. 5. This quick dairy-free broccoli casserole is a must at every event I host or attend. Based on the Jewish version of a crustless quiche (kugel), it utilizes basic ingredients and easy to put together before popping it into the oven. So easy, I could do it with a new baby in the house.

1 tablespoon vegetable oil
1 onion, sliced
4 eggs
1 cup mayonnaise
3 tablespoons all-purpose flour
salt and pepper to taste
2 (16 ounce) bags frozen chopped broccoli, thawed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Set aside.
  • Beat eggs with mayonnaise, flour, salt, and pepper in a large bowl. Stir in broccoli and onion. Pour into the prepared baking dish.
  • Bake in the preheated oven until broccoli is tender, about 90 minutes.

Gefen Cornflake Crumbs for sprinkling

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine all ingredients (except cornflake crumbs), mixing well.
  • Divide between two 10- by 16-inch pans. Sprinkle cornflakes crumbs on top.
  • Bake for one hour and 10 minutes.

  • Boil water. Add frozen broccoli. Cover pot and simmer . When broccoli is soft enough to mash with a fork, drain. Mash with a fork.
  • In the bowl of a stand mixer , mix together the eggs, mayonnaise, onion, and broccoli. Add the wheat flour, garlic powder, and salt.
  • Pour mixture into the pan. Bake for 40 to 45 minutes or until a knife inserted into its center comes out clean.

Steps:

  • Preheat oven to 350°F.
