SWORDFISH CALABRIAN-STYLE



Swordfish Calabrian-Style image

This is a typical dish of southern Italy. Swordfish is marinated in a lemon and oil mixture, then fried and cooked with fava (broad) beans and white wine.

3 tablespoons olive oil, divided
1 tablespoon fresh lemon juice
salt and ground black pepper to taste
1 ¼ pounds fresh swordfish, cut into chunks
1 small onion, chopped
1 teaspoon all-purpose flour
1 ½ cups dry white wine
1 (19 ounce) can fava beans, drained
1 bunch fresh parsley, chopped

Steps:

  • Mix together 2 tablespoons of the olive oil, lemon juice, salt, and pepper in a medium bowl. Add the fish and stir enough to get it coated. Let it marinate for about 15 minutes. Remove fish from the marinade and pat dry.
  • Heat remaining olive oil in a large skillet over medium-high heat. Fry the onion until golden, about 8 minutes, then add the fish. Brown the chunks of fish, about 1 minute per side; remove from the pan and set aside.
  • Stir the flour into the skillet; cook and stir until lightly browned. Gradually stir in the white wine. Return the fish to the pan, and add the fava beans. Sprinkle with fresh parsley, cover, and simmer for 2 to 3 minutes, or until the fish flakes easily with a fork. Serve hot.

4 swordfish or shark steaks, 1 inch thick (about 1 1/2 pounds)
1 tablespoon grated lime peel
1/4 cup lime juice
1/4 cup grapefruit juice
1/2 teaspoon salt
1 clove garlic, finely chopped
Papaya Salsa:
1 large papaya, peeled, seeded, and chopped (2 cups)
1 , medium green onion, , finely chopped (1 tablespoon)
1/4 cup finely chopped red bell pepper
1 tablespoon chopped fresh cilantro
2-3 tablespoons grapefruit juice
1/8 teaspoon salt

Steps:

  • 1. Place fish in ungreased square baking dish, 8 X 8 X 2 inches. Mix lime peel, lime juice, grapefruit juice, salt and garlic pour over fish. Cover and refrigerate 2 hours. Make Papaya Salsa. 2. Set oven control to broil. Spray broiler-pan rack with cooking spray. Remove fish from marinade reserve marinade. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat about 16 minutes, turning and brushing with marinade after 8 minutes, until fish flakes easily with fork. Discard any remaining marinade. These broiled swordfish steaks pair perfectly with fresh parsley sauce and are a source of healthy fats. You may also use tuna, halibut, or salmon.

2 pounds swordfish steaks, about 1-inch thick
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon sweet Hungarian paprika
5 tablespoons butter, melted
Optional: chopped fresh parsley
Garnish: lemon wedges
For the Garlic Parsley Sauce:
1/2 cup fresh parsley, minced
1 tablespoon lemon zest
3 cloves garlic , minced
1/3 cup olive oil
3 tablespoons fresh lemon juice
Kosher salt, to taste
Black pepper, to taste

Steps:

  • Sprinkle the swordfish steaks with salt , pepper, and paprika and gently rub into the fish.
  • Preheat a greased broiler rack.
  • Place the swordfish steaks on the greased broiler rack and brush with the melted butter. Put them under the broiler, about 2 to 3 inches from the heat source. Broil the steaks for about 4 minutes.
  • Turn the swordfish steaks, brush with more melted butter, and broil for 4 to 5 minutes longer.
  • The fish should be lightly browned and will flake easily with a fork when done.
  • Transfer the swordfish to a platter or individual plates and sprinkle with chopped fresh parsley, if desired. Serve with lemon wedges and drizzle servings with a tablespoon or two of garlic parsley sauce (below), if desired.
  • Serve with rice or potatoes.
  • In a bowl, combine the 1/2 cup of chopped parsley with the grated lemon zest, minced garlic, olive oil, and 3 tablespoons of fresh lemon juice.
  • Season with salt and freshly ground black pepper, to taste.

Number Of Ingredients 15

12 cups water
1 1/4 cups pearl barley
1/2 pound haricots verts, trimmed
2 cups grape tomatoes, halved
1 cup pitted Kalamata olives, halved
1 medium-size red onion, sliced
1/3 cup plus 1/2 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon chopped fresh thyme
1 teaspoon grated lemon peel
3 garlic cloves, minced
8 6-ounce swordfish steaks
2 medium-size red bell peppers, thinly sliced
2 medium-size yellow bell peppers, thinly sliced
Lemon wedges

Steps:

  • Bring 12 cups water to boil in large pot. Add barley. Cover pot; reduce heat to medium. Simmer until barley is tender, about 30 minutes. Add haricots verts; boil until tender, about 5 minutes. Drain. Place mixture in large bowl. Mix in tomatoes, olives, onion, 1/3 cup oil, lemon juice, thyme, and lemon peel. (Barley can be made 2 hours ahead. Cover and let stand at room temperature.)
  • Preheat broiler. Whisk 1/2 cup oil and garlic in bowl. Turn fish in oil mixture; divide fish between 2 rimmed baking sheets. Toss peppers in oil mixture; divide between baking sheets. Drizzle remaining oil from bowl over fish and peppers. Sprinkle with salt and pepper.
  • Place 1 pan in broiler 3 minutes. Turn fish over; broil until fish is opaque in center and peppers begin to blacken, about 2 minutes longer. Repeat with remaining fish and peppers. Divide barley salad among plates. Top with fish and peppers and drizzle with pan juices. Serve with lemon wedges.

1 tablespoon chopped shallots
1 1/2 teaspoons minced garlic
5 fluid ounces dry white wine
24 ounces tomato concasse
3/4 ounce anchovy fillets, minced
1 tablespoon olive oil
1 1/2 tablespoons basil chiffonade

Steps:

  • 1. Cut the swordfish into ten 3 1/2 ounce portions. Refrigerate until needed.
  • 2. Sweat the shallots and garlic in the wine until the shallots are translucent. Remove from the heat and stir in the tomatoes and anchovies.
  • 3. For each serving : Brush 1 portion of swordfish with 1/4 teaspoon of the oil and broil until golden brown and cooked through, about 6 minutes.
  • 4. While the swordfish is broiling, heat 3 ounces of the tomato mixture in a small saute pan. Remove from the heat and add about 1/2 teaspoon of the basil. Toss to combine. Serve with the swordfish.
  • Any firm-fleshed fish suitable for broiling, such as halibut or tuna, may be substituted for the swordfish.

1 -1 1/3 lb swordfish steak
3 -4 tablespoons bottled jerk marinade (Caribbean-style sauce)
1 (8 ounce) can pineapple tidbits, drained and liquid reserved
1 1/2 cups chicken broth, about
1 cup long-grain white rice
1 small red bell pepper, cored,seeded and diced
6 whole allspice berries (optional)
2 green onions, chopped or 2 tablespoons chopped fresh cilantro
1 lime, cut into 4 wedges

Steps:

  • Rinse the fish in cold water and pat dry with paper towels.
  • Brush both sides with marinade and lay on a plate (or on a broiler rack or baking sheet if broiling); set aside.
  • Preheat a charcoal grill or broiler.
  • Add enough chicken broth to the reserved pineapple juice to measure 2 cups.
  • Stir the broth mixture, pineapple, rice, bell pepper and allspice together in a medium saucepan and bring to a boil over high heat.
  • Cover, reduce the heat to low and simmer until the liquid is absorbed, 18 to 20 minutes.
  • Take from the heat and let stand until ready to serve; discard the allspice berries.
  • When the rice has cooked 12 to 15 minutes, place fish on a lightly oiled grill and cook 3 minutes.
  • Turn over and cook until the fish is just barely opaque but still moist in the center, 2 to 3 minutes more for 3/4-inch-thicksteaks (or broil, without turning, for 6 to 8 minutes).
  • Fluff the rice with a fork, stir in the green onions and spoon onto individual plates.
  • Transfer the swordfish to plates and garnish with lime wedges.

2 swordfish steaks, 1 1/2 inches thick, about two pounds in all
2 tablespoons creme fraiche
1 medium onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
4 cups canned Italian tomatoes, coarsely chopped
1/2 teaspoon hot pepper flakes
2 teaspoons fresh rosemary leaves
Coarse salt and freshly ground pepper to taste
1 pound cooked chick peas or two 8-ounce cans, rinsed and drained

Steps:

  • Preheat broiler. Spread the swordfish steaks on both sides with the creme fraiche. Set aside.
  • Soften the onion with the garlic in the olive oil. Add the tomatoes, hot pepper flakes, rosemary, salt and pepper. Simmer gently for 15 minutes. Add the chick peas and cook another 10 minutes.
  • Meanwhile, season the swordfish steaks with salt and pepper and broil, turning once, until medium rare. Serve with chick peas on the side.
