BROILED COCONUT TOPPING
My husband does not like the gooey icing of German Chocolate cake, so I found this pretty slick alternative! It has all the flavors, but a very distinct "crunch", it almost caramelizes on top of the cake. Try it, I think you will be pleasantly surprised! I do not use the nuts as my husband does not like nuts in his cakes, only cookies! This is perfect for a 13x9 cake, I often use a Swiss Chocolate cake mix.

Steps:
- Mix all ingredients well.
- Spread mixture over a slightly warm cake.
- Set your oven to broil.
- Place cake approximately 5 inches from the heat source and broil until topping bubbles and browns slightly.

- Combine ingredients and spread over warm cake. Brown under broiler for a few minutes.
CHOCOLATE CAKE WITH BROILED COCONUT FROSTING
Steps:
- Gather the ingredients.
- Preheat oven to 350 F. Grease and flour a 9-inch-square baking pan or spray with a flour and oil baking spray.
- Combine the flour, granulated sugar, cocoa, baking soda, and salt in a mixing bowl.
- Add the oil, buttermilk, and vanilla, along with the beaten egg into the bowl with the dry ingredients. Whisk or slowly beat until well blended.
- Pour into prepared pan and bake for 35 to 40 minutes. Allow it to cool down slightly before topping it with the coconut mixture.
- Combine topping ingredients in a small bowl, stirring until well blended.
- Spread the topping over the cooked warm cake and broil it for about 4 inches from heat for 3 minutes, or until topping is browned and bubbly.
- Serve and enjoy!

APPLESAUCE OATMEAL CAKE WITH BROILED COCONUT TOPPING

- In 1-quart saucepan, heat applesauce to boiling over medium-high heat. Stir in oats. Let stand 20 minutes.
- Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, cinnamon, nutmeg and salt, scraping bowl once, just until blended. Pour into pan.
- Bake 40 to 50 minutes or until toothpick inserted in center comes out clean.
- Meanwhile, in small bowl, mix all topping ingredients until well blended. Spread topping over hot cake. Broil cake with top 6 inches from heat 1 to 2 minutes or until top is golden and bubbly. Cool 30 minutes. Serve warm.

- Whisk the sugar, corn syrup, cream of tartar, salt, and water together in a small, heavy-bottomed saucepan. Bring to a boil over medium heat (do not stir it) and cook, undisturbed, until it reaches 240 degrees F on a candy thermometer, about 2 minutes; stirring can cause the sugar to crystallize.
- Meanwhile, in a medium bowl using an electric mixer on high speed, beat the egg whites until foamy.
- Once the sugar syrup reaches 240 degrees F, immediately and carefully pour it into the egg whites, with the mixer running on high speed, away from the beaters to prevent splattering and possible burns. Continue to beat until the frosting is glossy and fluffy, about 5 minutes. Beat in the coconut extract. Use immediately.
BISQUICK VELVET COCONUT CAKE
This came from the side of a Bisquick box, but I must admit it is about 30 yrs. old or better. My grandmother used to make this cake often because it was fast and my grandfather loved coconut. It is really "velvety" in texture and you'll love this too! This recipe is still seen on boxes of Bisquick called Velvet Crumb Cake ... after all these years, it must be good to others beside me!

- Grease and flour a 8"x8"x2" square cake pan or 9" x 1-1/2" round pan.
- Beat all ingredients (except topping) on low speed, scraping bowl constantly 30 seconds.
- Beat on medium speed, 4 minutes.
- Pour into pan.
- Preheat oven to 350 degrees.
- Bake for 30-35 minutes or until wooden pick in center comes out clean.
- Cool slightly and spread topping.
- FOR TOPPING: In a small bowl, mix all ingredients together by hand and set aside until cake is cooked and cooled slightly.
- Set oven control to broil.
- Broil about 3 inches from the heat until topping is golden brown about 3 minutes.
