Broiled Peaches with Blackberry Sauce image

A light and elegant dessert that's as pretty as it is tasty!

4 cups frozen blackberries
1 teaspoon lime juice
2 tablespoons honey
16 canned peach halves or 8 medium fresh peaches, cut in half and pitted
3 tablespoons packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons peach liqueur or 2 teaspoons lime juice
Additional blackberries, if desired

Steps:

  • Place blackberries, lime juice and honey in blender. Cover and blend on medium speed about 45 seconds, stopping blender occasionally to scrape sides, until smooth. Strain sauce. Cover and refrigerate until serving.
  • Set oven control to broil. Place peach halves, cut sides up, on large piece of heavy-duty alumium foil. Sprinkle with brown sugar, cinnamon and liqueur. Fold foil over peaches and seal.
  • Broil foil packet with top about 4 inches from heat about 15 minutes or until peaches are heated through. Serve hot with blackberry sauce. Garnish with additional blackberries.

  • Broil 4 to 5 inches from heat until sugar is golden brown and peaches are tender, 6 to 8 minutes.

Steps:

  • Prepare a gas or charcoal grill for direct, medium-high heat (you can hold your hand 1 to 2 inches above the cooking grate only 3 to 4 seconds; visit Safeway.com for complete instructions).
  • While grill heats, in a small bowl mix jam and orange juice. Halve and pit peaches; if pit cant be removed easily, use a paring knife to cut around pit to remove.
  • Place peaches with cut sides down on oiled cooking grate; cover gas grill. Cook until cut edges begin to brown, 2 to 4 minutes. Turn peaches over with tongs. Spoon about 1 tbsp. of the jam mixture into the hollow of each peach half and continue cooking until fruit is hot, 3 to 5 minutes longer. Lift peaches to a platter.
  • Spoon a 1/2-cup scoop of ice cream into each of 4 dessert bowls and, with tongs, set peach halves in bowls. Drizzle fruit equally with remaining jam mixture and serve immediately.

Ice cream, liqueur, whipped cream, and/or chopped toasted nuts.

Steps:

  • HEAT the broiler.
  • CUT the peaches in half and remove the pit. Place the peaches cut side down in a 9 x 13-inch baking pan.
  • BROIL 4 inches from the heat source for about 3 minutes, until lightly charred. Remove the peaches from the oven and turn them over, cut side up.
  • COMBINE the butter and sugar in a small bowl. Spread the mixture evenly over the peaches. Return to the oven and broil for 5 minutes, until bubbly and browned.
  • SERVE immediately or at room temperature with your choice of toppings.

4 large ripe peaches
1 tablespoon lemon juice
1 pint fresh blackberries
2 tablespoons sugar
1/4 cup blackberry brandy or 3 tablespoons brandy or cognac
Creme fraiche (optional)

Steps:

  • Slice the peaches, removing the pits. Place in a bowl and toss lightly with the lemon juice.
  • Puree half the blackberries through a sieve to remove the seeds and place in a saucepan. Add the sugar and heat until the sugar has dissolved. Stir in the brandy.
  • Mix remaining blackberries with the peaches, pour the sauce over the fruit and toss. Refrigerate until ready to serve. If desired, each serving can be topped with creme fraiche.

1/2 of 10-ounce package frozen raspberries in syrup, partially thawed
1-1/2 teaspoons lemon juice
2 medium peaches, peeled and halved
5 teaspoons brown sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 teaspoon butter

Steps:

  • In a blender or food processor, process raspberries and lemon juice until pureed. Strain and discard seeds. Cover and chill. Place the peach halves, cut side up, on a large piece of heavy-duty foil (about 18x12 in.). Combine brown sugar and cinnamon; sprinkle into peach centers. Sprinkle with vanilla; dot with butter. Fold foil over peaches and seal. Grill over medium-hot heat for 15 minutes or until heated through. To serve, spoon the raspberry sauce over peaches.
