PROSCIUTTO AND PEAR GRILLED FLATBREAD

- Preheat the oven to 450 degrees F.
- Heat a grill pan over medium-high heat and brush with olive oil.
- Meanwhile, roll out the pizza dough 1/4- to 1/2-inch-thick on a lightly floured surface into the desired shape; for a flatbread I like an elongated oval to fit my grill pan. Place the dough on the grill pan and cook until crusty grill marks appear, about 3 minutes. Flip and grill the other side.
- Top the grilled side with a brushing of olive oil, the sliced pears and fontina cheese, arranging everything in a flat even layer. When the crust is heated through and not doughy, and grill marks appear, remove the flatbread to a sheet pan and place in the oven. Bake until the cheese is melted and the pears are heated through, 5 to 7 minutes.
- Meanwhile, add the arugula to a medium bowl, then drizzle with the lemon juice and some olive oil to lightly coat . Season with a small pinch of salt and the crushed red pepper. Remove the pizza from the oven and top with the prosciutto, then the dressed greens. Drizzle with the truffle honey. Slice and serve! Salty-sweet! Yum!
BROILED PEAR AND PROSCIUTTO TOASTS
Here is a wonderful little snack, or brunch item, that is a testament to it's ingredients--not the maker. A broiled pear slice draped across hot molten cheese toast, then topped with crispy prosciutto. So satisfying, yet so easy to prepare. It is a perfect stand-alone, or accompaniment to creamy soups!

- Preheat the broiler on high and set the oven rack to a high position. Lay the pear slices on a baking sheet.
- Brush them with oil on both sides and sprinkle them with salt. Broil the pears for 2-4 minutes--until the edges are crisp and the flesh is tender.
- Smear a tablespoon of soft creamy cheese across each English muffin half. Once the pears are tender, lay one on each toast.
- Place the toasts on the baking sheet and top each with a slice of prosciutto.
- Broil again for 2-4 minutes, until the prosciutto and muffin edges are crispy. Serve warm!

- Preheat oven to 375 degrees F (190 degrees C). Place the garlic in a small square of aluminum foil. Drizzle 1/2 tablespoon of olive oil over the garlic. Wrap foil around garlic to seal.
- Roast the garlic in the preheated oven until soft, about 20 minutes. Smash roasted cloves with a fork.
- Place the pears in a bowl with 1 tablespoon olive oil; toss to coat. Arrange pear slices on a baking sheet.
- Bake in hot oven until soft, 10 to 15 minutes.
- Raise oven temperature to 400 degrees F (200 degrees C). Preheat a pizza stone or baking sheet in the oven.
- Lightly dust a flat surface with flour. Roll the prepared pizza crust dough out onto the prepared surface. Dust a baking sheet with cornmeal. Lay the dough onto the prepared baking sheet. Spread the mashed garlic onto the dough; top with the Swiss cheese. Arrange the pears, prosciutto, and mozzarella cheese onto the pizza. Season with salt and pepper. Brush the edges of the crust with the 1/2 tablespoon olive oil.
- Bake in preheated oven until the cheese is melted and crust is golden brown, 15 to 20 minutes.

GRILLED PEAR AND PROSCIUTTO STARTER
This simple, elegant appetizer has an amazing combination of sweet, salty, tart and fresh flavors. Replace the mint with any type of herb that you like. Oregano is quite nice. For an even quicker version, use canned pears. Simply drain them and heat them up in the microwave until just warm, then proceed to step 4.

- Peel, halve, and core the pears.
- Grill the pears on medium heat, turning once, until they are heated through and have nice grill marks on both sides. 5-7 minutes.
- Alternately, you can sauté the pears in a little butter or apple juice to heat them through and soften them up a bit.
- Place one pear half on each plate.
- Top each pear half with a slice of prosciutto, followed by a slice of parmesan (use a potato peeler to get a nice, thin slice), and then a mint leaf.
- Drizzle a tablespoon of balsamic vinegar around each pear half.
- Season with salt and pepper if desired.

PEAR & PROSCIUTTO BRUSCHETTA

- Preheat oven to Broil. In a small bowl, mix pear, onion, 1 Tablespoon olive oil, balsamic vinegar, and thyme. Set aside to marinate for 5 minutes. While Pears are marinating, lay baguettes slices on a cookie sheet. Using a pastry brush, brush the tops of each with olive oil (about 3 Tablespoons total) Heat bruschetta slices in oven for 3 - 5 minutes. WATCH CAREFULLY as your baguette may burn. You want a slightly golden top. DO NOT OVER COOK. (Your oven will cook different than mine so watch close, cooking times are estimates.) Remove from oven. Sprinkle each with crumbled blue cheese and allow blue cheese to slowly warm and melt. While Baguette slices are still warm but not burning hot, Spread blue cheese onto each slice. Spoon pear mixture onto the blue cheese. Top with sliced prosciutto. Serve Immediately.
GRILLED PINEAPPLE AND PROSCIUTTO FLATBREAD
Pairing pineapple with ham on a pizza is very controversial, but what's not controversial, and actually a proven scientific fact, is that sweet pineapple pairs perfectly with the salty, savory flavor of ham on flatbread. Since there's no sauce or cheese involved, this is the perfect way to enjoy this pairing without having to worry about an angry mob of food bloggers with torches and pitchforks outside your house.

- To make the dough, combine warm water, 1/2 cup of flour, and yeast to a mixing bowl. Use a whisk to mix everything into a smooth batter. Cover bowl with a towel and let sit for 30 minutes.
- Add olive oil, salt, and remaining flour to the bowl, and stir with a spoon or fork until the mixture comes together to form a shaggy ball of dough.
- Transfer everything to a work surface and knead until the dough just starts to become elastic, about 2 minutes.
- Place dough in a lightly oiled zip-top bag. Press out most of the air, seal, and place in the refrigerator for 8 hours, or overnight.
- The next day, take the bag of dough out of the fridge, and leave out at room temperature until it roughly doubles in size, about 45 minutes.
- Meanwhile, preheat a charcoal grill until coals are white and ashy. Quarter your peeled and cored pineapple and trim out the tough, fibrous core in the center.
- Grill pineapple round-side down over hot coals until heated through, and fairly well charred, about 3 minutes; flip and continue to grill on the cored side until charred, 2 to 3 minutes. Reserve until needed.
- Once dough has doubled, remove from bag and divide into 4 portions. Form each portion into a ball and use a rolling pin to roll dough into an oval, or circle about an 1/8-inch thick.
- Place dough over hot coals, and grill until dough is cooked through, and about half the surface area is slightly charred, about 2 minutes per side.
- Remove from grill and top each warm flatbread with a drizzle of olive oil. Top with prosciutto, thin slices of grilled pineapple, tarragon leaves, and freshly ground black pepper. Finish with another small drizzle of olive oil and a pinch of flaky sea salt.
