1 tablespoon olive oil, plus more for pan and baking sheet
1 recipe Soft Polenta
2 tablespoons olive oil
1/2 large red onion, finely chopped
2 packages (10 ounces each) white or cremini mushrooms, halved (or quartered, if large)
Coarse salt and ground pepper
1/2 teaspoon crushed dried rosemary
2 tablespoons tomato paste
1 teaspoon balsamic vinegar
4 ounces goat cheese, crumbled (about 1 cup)
Wilted Spinach and Cherry Tomatoes, optional

Steps:

  • Brush an 8 1/2-by-4 1/2-inch loaf pan lightly with oil. Pour soft polenta into pan; smooth top. Cover with plastic wrap, and refrigerate until chilled and firm to the touch, about 3 hours and up to 3 days.
  • Meanwhile, make mushroom ragout: In a large skillet, heat oil over medium. Add onion; cook, stirring often, until soft, about 5 minutes. Add mushrooms; season generously with salt and pepper. Cover and cook until mushrooms release their juices, about 10 minutes.
  • Uncover pan; raise heat to high. Cook, stirring often, until liquid has evaporated and mushrooms are brown, 2 to 3 minutes. Add rosemary, tomato paste, and 2 cups water. Simmer until sauce has thickened, 10 to 15 minutes. Stir in vinegar.
  • Meanwhile, heat broiler. Invert polenta onto a cutting board: cut into 12 to 14 slices, each 1/2 inch thick. Brush a rimmed baking sheet with oil. Arrange slices in a single layer; brush with oil. Broil 4 inches from heat, without turning, until golden and browning in spots, 10 to 20 minutes. Divide among plates; top with mushroom ragout, and sprinkle with goat cheese. Serve with Wilted Spinach and Cherry Tomatoes, if desired.

Polenta
2 cups water
1/2 cup yellow cornmeal
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Mushroom Ragout
1 tablespoon unsalted butter
1 tablespoon peanut oil
1 small onion, chopped (1/2 cup)
5 ounces mushrooms (cultivated, wild, or a combination), trimmed, cleaned, and cut into 1/2-inch pieces (2 cups)
3 garlic cloves, crushed and finely chopped (2 teaspoons)
4 plum tomatoes, halved, seeded, and cut into 1/2-inch pieces (1 1/4 cups)
2 small ears corn, husked and kernels cut off (1 cup)
1/2 cup homemade chicken stock or low-salt canned chicken broth
1/4 teaspoon salt, or to taste
1/8 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • FOR THE POLENTA
  • Bring the water to a boil in a medium saucepan. Sprinkle the cornmeal on top while mixing it in with a whisk, and stir in the salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover with a lid to prevent splattering, and cook gently for 6 to 8 minutes, stirring occasionally, until the polenta is cooked and has the consistency of a creamy puree. Set aside, covered.
  • FOR THE RAGOUT
  • Heat the butter and oil in a large saucepan. When they are hot, add the onion and sauté for 30 seconds. Add the mushrooms and sauté over high heat for about 2 minutes, until the liquid emerges from them and evaporates. Add the garlic, tomatoes, corn, chicken stock, salt, and pepper and bring to a strong boil. Reduce the heat to medium and cook for 2 to 3 minutes.
  • To serve, ladle the polenta into the center of four soup plates and pour the mushroom ragout on top of and around it. Sprinkle with the chives and serve.

BROILED POLENTA WITH VEGETABLES AND CARAMELIZED SHALLOTS

3 1/2 cups vegetable stock, or water
1/2 teaspoon salt (less if your stock is salty)
1 teaspoon finely chopped fresh rosemary, or 1/4 teaspoon dried, crumbled
1 cup cornmeal
2 tablespoons unsalted butter
1/4 cup grated Parmesan cheese
1 cup grated mozzarella cheese
2 tablespoons olive oil (for brushing on polenta)
1 tablespoon butter
18 shallots, peeled (separate small ones from large ones)
A pinch sugar
3 tablespoons olive oil
12 shiitake mushrooms, stems discarded, caps kept whole
2 red bell peppers, cored and cut into strips 2?x1/2?
2 small zucchini, halved lengthwise and cut diagonally 1/4 inch thick
3 garlic cloves, minced
Salt to taste
Freshly ground pepper to taste
Rosemary sprigs for garnish

Steps:

  • To make the polenta, set aside a 10 x 10inch shallow baking dish or other comparable dish. Bring the vegetable stock, salt, and rosemary to a boil in a mediumsize saucepan. Reduce the heat to a simmer, then gradually sprinkle in the cornmeal, whisking constantly with a wire whisk. Cook the polenta, whisking all the while, until it begins to pull away from the sides of the pan, about 7 minutes. Whisk in the butter, Parmesan cheese, and mozzarella cheese.
  • Scrape the polenta into the reserved baking dish and smooth over the top. Let cool for 10 minutes, then cover and chill for at least 1 hour, or until cold throughout. When you are ready to broil the polenta, cut it into 12 squares or diamonds. Lightly brush both sides of each piece with the olive oil, and place the polenta on a baking sheet. Set aside while you cook the vegetables.
  • To cook the vegetables, melt the butter in a mediumsize skillet over medium heat. Add the largest of the shallots and cover the pan. Cook 5 minutes, shaking the pan occasionally. Add the smaller shallots, sprinkle on the sugar, then sprinkle on a few tablespoons of water. Lower the heat, cover the pan, and cook until caramelized and soft, about 25 minutes. Continue to shake the pan on occasion while the shallots are cooking.
  • Heat 1 tablespoon of the oil in a large, nonstick skillet over medium heat. Add the shiitake caps and saute until brown and juicy. Remove onto a plate. Add the remaining oil, then toss in the red peppers. Cook 2 minutes, then mix in the zucchini. Cook the vegetables, tossing often, until they are tender, yet crisp. Make a small well in the center of the pan and add the garlic. Cook 1 minute before mixing it into the vegetables. Stir in the shallots and shiitake mushrooms, then season generouly with salt and pepper. Keep the vegetables warm over low heat.
  • Broil the polenta until golden brown on top and hot throughout. Serve 2 polenta squares on each plate with some vegetables along the center. Garnish with rosemary sprigs

FOR THE POLENTA:
2 cups whole milk
1 cup coarse-ground yellow cornmeal or polenta
1 teaspoon kosher salt
1/2 teaspoon dried thyme
FOR THE RAGOUT:
8 ounces mixed wild mushrooms (shiitake, portabello, brown and button)
2 tablespoons extra-virgin olive oil, plus more for the mushrooms and polenta
2 cups thinly sliced red onions
1 tablespoon tomato paste
1/2 cup chicken broth
1/4 cup dry vermouth
1 1/2 teaspoons finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
kosher salt
freshly ground black pepper
1/2 cup freshly grated Parmesan cheese or Parmigiano-Reggiano cheese (optional)

Steps:

  • TO MAKE THE POLENTA: Line an 8- by 8-inch baking pan with plastic wrap so that the wrap spills over two opposite sides by about 4 inches. In a large heavy saucepan combine the polenta ingredients with 1 cup water and whisk until smooth. Bring the mixture to a boil over high heat. whisking frequently. Reduce heat to low and cook the polenta until tender, about 20 minutes, stirring every 5 minutes or so with a wooden spoon to avoid scorching. Transfer the polenta to the baking pan and smooth the surface with a spatula dipped in water. The polenta should be about 1/2 inch thick. Allow to cool to room temperature. Fold the long ends of the plastic wrap over the top and refrigerate until the polenta is firm, 4 to 24 hours.TO MAKE THE RAGOUT: Remove and discard the stems from the mushrooms, With a spoon, scrape the black gills from the partabello muchrooms and discard. Wipe all the mushroom caps clean with a damp towel. Generously brush or spray both sides of the caps with olive oil. Grill the mushrooms, cap side up, over Direct Medium heat until tender, turning once and basting with more oil if necessary, halfway through grilling time. The portabello mushrooms will take 12 to 15 minutes and the shiitake, brown, and button mushrooms will take 8 to 10 minutes. Remove from the grill and cut into 1 inch chunks.In a large sauté pan over medium heat, warm the 2 tablespoons of olive oil. Add the onion and cook, stirring occasionally, until soft and translucent, about 8 minutes. Add the mushrooms and continue to cook for 2 minutes more. In a small bowl whisk together the tomato paste, chicken broth, and vermouth. Add to the onion and mushroom mixture. Sprinkle with the rosemary and thyme and simmer for 5 minutes, stirring occasionally. Season with salt and pepper. Set aside while you grill the polenta.Remove the polenta from the baking pan and plastic wrap. Cut into squares or other desired shaped. Brush or spray both sides of the cakes with oil. Grill over Direct High heat until warm and marked on both sides, 8 to 10 minutes, turning once halfway through grilling time.To serve, gently reheat the ragout and spoon it over the polenta cakes, then sprinkle each serving with some of the cheese, if desired. 1 tablespoon chopped shallot
1/4 cup olive oil
2 tablespoons minced fresh basil or 2 teaspoons dried basil
3 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 cup white wine or chicken broth
3 cups chicken broth
1/3 cup chopped seeded tomatoes
1/2 teaspoon salt
1 cup cornmeal
MUSHROOM SAUCE:
1 pound sliced assorted fresh mushrooms
1 tablespoon chopped shallot
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup Marsala wine or chicken broth
1 cup heavy whipping cream

Steps:

  • In a large heavy saucepan, saute shallot in oil until tender. Add the basil, garlic and oregano; cook 1 minute longer. Stir in wine. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Add the broth, tomatoes and salt; bring to a boil. Reduce to heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon for 15-20 minutes or until polenta is thickened and pulls away cleanly from the side of the pan. Spread into a 9-in. square baking pan coated with cooking spray. Cool to room temperature, about 30 minutes., Meanwhile, in a large skillet, saute mushrooms and shallot in oil until tender. Add the garlic, salt and pepper; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Gradually stir in cream. Bring to a boil. Reduce heat; cook and stir for 5-10 minutes or until slightly thickened., Cut polenta into nine squares. Grill, covered, over medium heat for 5-7 minutes on each side or until crisp and golden brown. Serve with mushroom sauce.

I love mushrooms and was really drawn to this recipe. I haven't tried it yet. It comes from the cookbook Moosewood Restaurant Cooks at Home, and I am posting it for the Zaar World Tour.

1/2 cup boiling water (optional)
1/2 cup dried porcini mushrooms, in pieces (optional)
3 cups water
1/2 teaspoon salt
1 cup cornmeal
2 tablespoons olive oil
1 1/2 cups mushrooms, diced (use 2 cups if you omit the porcini)
1 large garlic clove, minced
1 tablespoon dry white wine
1/8 teaspoon salt
1/2 cup mozzarella cheese, shredded
1/2 cup smoked cheddar cheese or 1/2 cup mild provolone cheese, shredded
ground black pepper

Steps:

  • If you use the porcini mushrooms, pleace them in a bowl, cover with the boiling water, and set aside for about 10 minutes.
  • In a saucepan, bring the 3 cups water and salt to a rapid boil.
  • Add the cornmeal in a thin, steady stream, whisking to prevent lumps.
  • Lower the heat to simmer for about 10 minutes, stirring often to prevent sticking until the polenta thickens.
  • While the polenta cooks, strain the porcini mushrooms and rinse them.
  • Heat the oil in a skillet and saute the 1 1/2 cups mushrooms, garlic, and porcini on medium heat until the oil is absorbed, stirring occasionally.
  • Stir in the wine and add salt.
  • Simmer gently for another minute or two.
  • Preheat the broiler.
  • Spread the polenta in and oiled pie plate or casserole dish.
  • Sprinkle the mozzarella on the polenta.
  • Spoon the sauteed mushrooms over the mozzarella and finish with a layer of the smoked cheddar and/or provolone.
  • Add pepper to taste.
  • Broil for 3-5 minutes until cheese is golden brown, and serve bubbling hot.

1 cup cornmeal or 1 cup course-ground polenta
1/2 cup chopped bell pepper
1 tablespoon chopped garlic

4 teaspoons chopped assorted herbs
1/8 cup butter
1/2 cup asiago cheese
1/4 cup asiago cheese (to garnish)
3 tablespoons melted butter (, for garnish)
1 teaspoon chopped garlic
3 cups assorted rough cut or quartered mushrooms (crimini, buttons, oyster, shiitake)
1/2 cup sliced leek
1 tablespoon herbs
1 tablespoon scallion
1/8 cup diced, seeded tomatoes
2 cups brown vegetable stock, slightly thickened with brown roux
1/8 cup madeira wine
36 pieces waffle-cut sauteed carrots
18 pieces sauteed asparagus

Steps:

  • Bring vegetable stock to boil in heavy sauce pot.
  • Whip in cornmeal and lower heat just below a boil.
  • Simmer 1 hour.
  • Saute vegetables with garlic in 1 tablespoon butter and then add to the polenta.
  • Add herbs, 1/2 cup Asiago cheese, and 1/8 cup butter.
  • Whip together.
  • Adjust seasoning to taste with salt and pepper.
  • Pour this mixture in a well-buttered 9-by-13-inch glass baking dish.
  • Smooth out the polenta and lay a buttered waxed paper sheet on top.
  • Refrigerate overnight until cooled and firm.
  • Cut out 18 shapes of your choice, place on buttered cookie sheet, and top with a pinch of Asiago and 1/2 teaspoon melted butter.
  • Bake at 400 degrees for 20 minutes or until cheese browns.
  • Meanwhile, prepare the Mushroom Ragout (see below).
  • Mushroom Ragout-----------------.
  • In a hot saute pan, saute mushrooms, leeks, and garlic in a little olive oil.
  • Deglaze with Madeira wine.
  • Add stock and other ingredients.
  • Adjust seasoning.
  • Spoon over three polenta medallions on plate.
  • In the center, garnish with purple potato puree (see above recipe); place waffle-cut carrots and asparagus spears between polenta shapes.

4 cups water
1 cup polenta
½ cup finely grated Parmesan cheese
¾ teaspoon kosher salt, divided
2 tablespoons olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1 pound mixed wild mushrooms (like shiitake, oyster, chanterelle, hen of the woods), cleaned and sliced
1 pound cremini mushrooms, cleaned and sliced
1 tablespoon minced fresh thyme
2 tablespoons all-purpose flour
½ cup dry white wine
¼ cup heavy cream
1 teaspoon sugar
1 squeeze fresh lemon juice
½ cup chopped flat-leaf parsley
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Bring 4 cups of water to a boil. Whisk in the polenta. Once it begins to thicken, reduce heat to a simmer and cook for 45 minutes until creamy and thick, stirring occasionally to prevent sticking. Stir in the Parmesan and a 1/4 teaspoon of salt. Stir until melted and cheese is no longer visible. Remove from heat.
  • Line an 8x11 inch baking dish with Reynolds Wrap® Aluminum Foil and carefully pour the polenta into the baking dish, using a spatula to smooth it to an even thickness, about 3/4 inch. Cover and refrigerate for at least two hours and up to two days until firm.
  • While the polenta chills, make your ragu. In a large heavy skillet, heat the olive oil over medium heat until shimmering. Add the onion and garlic and saute until fragrant and translucent, about 5 minutes. Stir often to prevent browning. Add mushrooms and thyme and cook over medium-high heat until the mushrooms start to release their liquid. Add 1/2 teaspoon of salt and continue to cook another 5 minutes until they begin to soften more.
  • Add flour, stirring, until it is no longer visible, about 1 minute. Add in the wine, cream and sugar, and bring the mixture to a simmer. Taste and adjust salt if desired. Simmer until thick and creamy and the mushrooms are nicely coated, about 15 minutes. Finish with a squeeze of fresh lemon juice and 1/2 cup minced parsley. Set aside and cover to keep warm.
  • Slice your polenta into squares -- whatever size you desire. Wipe down your skillet, coat it with nonstick cooking spray, and heat it over medium-high. Fry the squares in the pan until golden brown and warmed through. To serve, top the squares with warm mushroom ragu.

Parmesan polenta topped with a rich mushroom mix and melting Taleggio cheese makes for a vegetarian main with a difference

small handful dried porcini mushrooms
25g butter
1 shallot , finely sliced
2 garlic cloves , crushed
5 thyme sprigs , leaves picked
500g large field mushroom , sliced
200g chestnut mushroom , sliced
small glass of red wine
125ml vegetable stock
100g taleggio cheese (or vegetarian alternative), sliced
500ml milk
1 bay leaf
3 thyme sprigs
250g instant polenta
50g butter
75g parmesan (or vegetarian alternative), grated

Steps:

  • Soak the dried mushrooms in 150ml warm water. Set aside for 20 mins, then drain and squeeze, reserving the soaking liquid. Heat the butter in a large frying pan. When sizzling, add the shallot and cook for a few mins until soft. Add the garlic and thyme leaves, cook for 1 min more, then turn up the heat and add the soaked mushrooms. After 1 min, add all the other mushrooms and fry over a very high heat for 5 mins until soft. Splash in the red wine and boil rapidly for 1 min. Pour in the stock and reserved mushroom liquid, and simmer for 15 mins until you have a thickened stew. Turn off the heat.
  • For the polenta, bring the milk to the boil with 500ml water, the bay and thyme. Turn off the heat and leave to infuse for 20 mins, then fish out the herbs and bring back to the boil. Add the polenta in a steady stream, whisking steadily. Cook for 1 min until thickened, then stir in the butter and Parmesan. Spoon a 'crater' of polenta onto a baking tray and fill with the ragout. Top with slices of Taleggio, place under a hot grill until melting and oozy, then let everyone help themselves.

2 pounds precooked polenta (in a tube), cut into 4 (1/2-inch-thick) rounds
1/3 cup grated parmesan
2 tablespoons olive oil, divided
1 pound sweet Italian sausage, casing removed
1/2 pound mixed sliced fresh wild mushrooms
1/2 cup dry red wine
1 1/2 cups bottled marinara sauce
Accompaniment: grated parmesan

Steps:

  • Preheat broiler.
  • Broil polenta rounds on a lightly oiled large heavy baking sheet 3 to 4 inches from heat until lightly browned in spots, about 7 minutes. Turn rounds over and sprinkle with cheese, then broil until polenta is golden in spots and cheese is melted, about 7 minutes more.
  • Meanwhile, heat 1 tablespoon oil in a 12-inch heavy skillet over high heat until it shimmers, then cook sausage, breaking up lumps, until just cooked through, about 4 minutes. Transfer to a bowl.
  • Heat remaining tablespoon oil in skillet over medium heat until it shimmers, then cook mushrooms, stirring occasionally, until softened, about 3 minutes. Add wine and boil, scraping up any brown bits, until reduced by about half, about 2 minutes. Stir in sausage and tomato sauce and simmer, stirring occasionally, 5 minutes. Season with salt.
  • Serve ragout spooned over polenta.

  • Brush an 8 1/2-by-4 1/2-inch loaf pan lightly with olive oil. Pour hot soft polenta into pan; smooth top.
  • Refrigerate until chilled and firm to the touch, about 3 hours (or up to 3 days, covered with plastic).
  • Heat broiler. Invert polenta onto a cutting board; slice 1/2 inch thick. Brush a rimmed baking sheet with oil. Arrange slices in a single layer; brush 1 teaspoon oil over tops.
  • Broil 4 inches from heat, without turning, until golden and browning in spots, 20 to 25 minutes.

Polenta With Wild Mushrooms and Vegetable Ragout image

4 tablespoons olive oil
2 large onions, about 2 pounds, coarsely chopped
1 pound assorted wild mushrooms, like chanterelle, cremini, shiitake, cleaned, trimmed and coarsely sliced
1/2 pound domestic or white mushrooms, cleaned, trimmed and coarsely sliced
4 large cloves garlic, minced
4 teaspoons fresh marjoram leaves
4 teaspoons fresh thyme leaves
4 bell peppers, 2 green and 2 red, yellow or orange, cored, quartered and cut in thin strips
1 28-ounce can plum tomatoes
1 1/2 cups dry red wine
Polenta (see recipe)

Steps:

  • Heat 2 tablespoons of oil in skillet large enough to hold all the ingredients. Add onions and cook until they are soft and golden, about 10 minutes.
  • Add the wild and domestic mushrooms with the garlic, marjoram and thyme and cook until mushrooms soften and release their juices.
  • Meanwhile in another skillet, heat remaining oil and saute peppers until soft.
  • Crush tomatoes in your fingers before adding to peppers, with tomato liquid, and cook over low heat until mushroom mixture is ready.
  • When mushrooms are softened, add the wine and cook over medium heat to slightly reduce liquid.
  • Combine contents of both pans and use to top polenta. This can be made a day ahead.
  • To serve, heat oven to 350 degrees. Bake for 20 to 25 minutes.
  • Divide both polenta and sauce in half. Use two 10-by-15-inch glass baking dishes. Using half of polenta and half of sauce, spoon a third of sauce in bottom of one baking dish . Arrange half of polenta slices over the sauce. Spoon another third of sauce over polenta. Top with remaining polenta and then with remaining sauce. Repeat with second dish and remaining ingredients.
