OVEN ROASTED SIRLOIN STEAK WITH ONION SAUCE
Sirloin steak perfectly roasted in the oven, topped with a delicious onion sauce.

- in a small bowl, whisk together the ketchup and soy sauce. Stir in the cider vinegar, maple syrup, and apple cider. Add the garlic powder, paprika and cinnamon, then stir to combine with the liquid ingredients.
- pat dry the steaks, and place them in a large, sealable plastic bag. Pour the marinade into the bag with the steak, and seal the bag. Turn the bag back and forth several times to distribute the marinade and coat both steaks with it. Place the steak in the refrigerator to marinate for a total of 1 to 2 hours. Remove the steak to marinate at room temperature for the final 20 minutes before cooking.

- after turning on the oven. Heat the olive oil on medium low in a skillet. Add the onions and the salt. Cook the onions for 15 to 20 minutes, stirring infrequently to let the onions get a chance to brown. They should be starting to get nicely caramelized, indicated by the brownish color, after 15 minutes or so. Keep the onions on low heat until ready for the next step.
- steak: Coat a large, oven proof skillet with oil spray. Place on medium high heat. When the skillet is hot, remove the steak from the marinade bag, shaking excess marinade back into the bag. Reserve the excess marinade. Place the steaks on the skillet, and sear for 1 minute on one side, then turn to brown on the other side for another minute. After browning the steak, move the steak into the preheated oven.
- Roast the steak in the preheated oven (and finish making the sauce while the steak roasts - see next step). Roasting time will vary based on your oven, thickness of the steak and how you like your steaks cooked. I would check the steak at about 8 minutes of roasting time, as sirloin cooks quickly. Our steaks were fairly thick, about 1 1/2 inches thick, and came out medium rare after 10 minutes. When done to your liking, remove the steaks from the oven. Transfer steaks to a platter to rest for a few minutes.
- Pour the reserved marinade from the bag into the pan with the onions. Add the 1/4 cup red wine. Bring the heat up to high to bring the liquid to a boil, then reduce to simmer vigorously for at least 5 minutes. Stir in the butter and the chili powder, and cook until the butter has melted. Keep the sauce warm until ready to serve.
- Slice the steak, plate, and serve topped with the onion sauce. Pass extra onion sauce at the table. Enjoy!

- Set oven control to broil. Spray broiler pan rack with cooking spray. Remove fat from beef. Place beef, mushrooms, squash and onion on rack in broiler pan. Mix dressing, vinegar and pepper; brush over beef and vegetables.

CHILE-RUBBED SIRLOIN AND GREEN CHILE NACHOS
The inspiration for these ultra-macho nachos comes from a diner in Sante Fe, New Mexico, where I was served an enormous platter of charcoal grilled steak blanketed with fire-roasted green chiles and sharp cheese. Now I make the same dish at home, cooking up enough steak for leftovers to enjoy as nachos the next day.

- Preheat the oven to 475 degrees F or preheat the broiler, with the rack positioned about 7 inches from the top of the oven or the heat source.
- Assemble the nachos: Arrange the chips on a 12 by 18-inch baking sheet or ovenproof platter. Top each chip with a layer of Monterey Jack, followed in order by the chiles, sirloin, and cheese blend.
- Bake the nachos for 5 to 7 minutes, or broil, until the cheese is soft and bubbly.
- Before serving, squeeze streaks of Avocado Crema and Chipotle Mayonnaise, to taste, over the nachos, if using, and garnish with lettuce and onions.
- In a small bowl, combine the salt, chile, cumin, garlic, cinnamon, and pepper. Rub the steak all over with the mix. Set aside at room temperature for 15 minutes.
- Heat a grill or the broiler until very hot. Rub the steak all over with the olive oil and soy sauce. Grill or broil the steak very close to the heat, about 3 minutes per side, until medium rare. Set aside for 10 minutes before slicing or dicing.
- Puree all the ingredients in a food processor or blender. Funnel into a squeeze bottle. The mixture should be thin enough to streak easily. If not, add a few drips more lime juice or buttermilk. Plug the top of the nozzle with a toothpick and chill until read to use. The mixture will keep for 2 days refrigerated.
PAN-ROASTED SIRLOIN WITH ONIONS AND PEPPERS
Really great, Saturday night supper! I serve this with twice-baked potatoes and caesar salad. My adaptation of a Mr. Food recipe.

- Rub steak with ground pepper and season with 1/4 teaspoon salt.
- Heat a large, heavy skillet (I use my old cast iron skillet) over medium-high heat; when hot, add 1 tablespoon of the oil, then add the steak.
- Cook about 7 minutes per side for medium-rare; remove from skillet and place on a serving platter, cover loosely with foil and keep warm.
- Pour off any fat from skillet and add remaining 2 tablespoons of the oil; add onions to the skillet, saute about 4 minutes, or until soft and slightly browned; add sliced peppers, garlic and basil; saute about 10 minutes, or until the peppers are soft.
- Add balsamic vinegar and give it a few stirs.
- Slice the steak into 1/2-inch thick, diagonal slices; dump the onion/pepper mixture on top of the steak slices and dig in.
ROASTED ONION AND SMOKED CHILE OYSTER SAUCE
Steps:
- Start by caramelizing the onions: place the onions in a skillet over medium heat with 1 tablespoon of the oil. Saute, stirring occasionally, until the onions turn a rich, deep-golden brown, about 30 minutes.
- Next, in a 1-quart or larger saucepan on medium heat, saute the shallots in the remaining 1 tablespoon oil until translucent and the edges begin to brown.
- Mince the caramelized onions and add to the shallots, along with the wine and vinegar. Reduce the liquid until syrupy and almost gone. Add the cream and chipotle, and reduce the liquid, until thickened by half. Add the lemon juice and salt and pepper to taste.
- Turn down the heat to the lowest setting and stir in the cold butter a little at a time until melted. Repeat until all of the butter has been incorporated. Turn off the heat (you do not want this mixture to come to a boil once the butter has been added) and re-check for salt and pepper.
- Keep the sauce in a warm place until ready to serve or store in the refrigerator for up to 2 weeks.
- To reheat, warm a couple tablespoons of cream in a small saucepan over low heat, and stir in the cold sauce a little bit at a time until completely incorporated (do not boil).
- Serve with fresh oysters.
BROILED SIRLOIN WITH CHILE-ROASTED ONIONS
Steps:
- In a shallow glass dish, stir together the wine, 1 tablespoon brown sugar, and 1 teaspoon chili garlic sauce or paste until the sugar is dissolved. Add the beef, turning to coat. Cover and refrigerate for 8 hours, turning occasionally.
- Preheat the oven to 400°F. Lightly spray a large shallow metal baking pan with cooking spray.
- Spread the onions in the pan. Drizzle with the oil. Stir to coat. Spread the onions in a single layer.
- Roast for 30 minutes, or until the onions begin to brown on the edges, stirring halfway through. Transfer to a small bowl.
- Preheat the broiler. Lightly spray the broiler pan with cooking spray.
- Stir 1/8 teaspoon salt, remaining 1 teaspoon chili garlic sauce or paste, and remaining 1 tablespoon brown sugar into the onions. Cover to keep warm.
- Drain the beef, discarding the marinade. Sprinkle with the remaining 1/4 teaspoon salt. Transfer to the broiler pan.
- Broil the beef about 6 inches from the heat for 3 minutes on each side, or to the desired doneness. Transfer to a cutting board and let stand for 5 minutes. Slice the beef. Serve topped with the onion mixture.

- 1. Combine garlic, chili powder, oregano and cumin. Press into both sides of steak. 2. Place steak on rack in shallow roasting pan. Do not add water or cover. Roast beef in oven at 350° F for 50 to 60 minutes. 3. Remove steak when meat thermometer inserted in center registers 135° F or at desired doneness. Season with salt and pepper to taste. Cover steak with aluminum foil tent and let stand 10 minutes. Carve steak into thin slices.

- Position broiler rack so that top of meat in pan will be 4" from the heat source; OR Cook on grill, preheat broiler or grill.
- Combine oil, minced onion, 3/4 teaspoon Garlic, 1/2 teaspoon rosemary, 1/2 teaspoon salt and 1/4 teaspoon pepper, brush over one side of steak.
- Place steak on grill seasoned side up, Broil 12 to 15 minutes with-out turning for medium-rare or cook on grill to your liking.
- In large skillet melt 1 tablespoon butter over medium-high heat.
- add onions and shallot.
- Cover; cook, stirring occasionally, until softened 5 minutes.
