BROWN RICE SLAW

- In a large bowl, combine the coleslaw mix, rice and apple. In a small bowl, combine the orange juice concentrate, mayonnaise, sugar and salt; pour over coleslaw mixture and toss to coat. Cover and refrigerate until serving. Stir in pecans.

- Shred cabbage with a sharp knife. Grate carrots; combine with cabbage in a large bowl.
- In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, celery seed, salt, and pepper. Add dressing to cabbage mixture, and toss to combine. Serve immediately, or store in the refrigerator for up to 2 days.

- Generously salt the cabbage and drain in colander for 3 hours. Rinse thoroughly and dry.

- Add pepper, chicken broth and vinegar. Cover tightly and steam 10 minutes until cooked through.
