3/4 cup brown rice
1/4 cup wild rice
2 teaspoons salt
1 bunch asparagus
1 tablespoon olive oil
2 celery ribs, chopped fine (about 2/3 cup)
1/2 onion, chopped fine (about 1/3 cup)
1 small carrot, chopped fine (about 1/3 cup)
1/2 teaspoon dried thyme
6 cups vegetable stock
2 tablespoons minced scallions or 2 tablespoons green onions
1 tablespoon chopped fresh parsley
1 tablespoon natural soy sauce (such as tamari)
1/2 teaspoon hot pepper sauce
fresh ground black pepper (to taste)

Steps:

  • Put the rice with the salt in 3 cups of water in a medium saucepan. Bring it to a boil, reduce the heat, cover, and simmer until the rice is tender and the water is absorbed, about 45 minutes.
  • Trim the tough ends off the asparagus stalks and discard. Steam the asparagus until tender yet crisp, about 2 minutes. Drain it in a colander, then rinse under cold water. Let the asparagus cool for a few minutes. When completely cooled, cut into 1-inch pieces, reserving 1/4 cup of tips for garnish.
  • Coat the bottom of a large pot with the olive oil. Add the celery, onion, carrot and thyme. Cover and cook over low heat for 4 minutes, stirring occasionally, until tender. Add the vegetable stock and cooked rice and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes. Remove from the heat and let cool a bit.
  • Carefully transfer small batches to a blender and blend until smooth. Return all the blended mixture to a pot. Stir in the asparagus, scallions, parsley, soy sauce, pepper sauce and ground pepper. Return to a simmer for 2 minutes. Ladle into bowls and garnish with reserved asparagus tips and parsley sprigs.

6 slices bacon
12 spears asparagus
1 egg, beaten
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C)
  • Slice the puff pastry into ½-inch (1-centimeter) strips.
  • Slice the bacon in half lengthwise into thin strips.
  • Wrap a strip of bacon around an asparagus spear in a spiral.
  • Wrap a strip of puff pastry around the asparagus, looping it in between the bacon spiral.
  • Repeat with the rest of the asparagus.
  • Place the wrapped spears on a baking tray lined with parchment paper.
  • Brush them with egg wash, then sprinkle a pinch of salt & pepper on top.
  • Bake for 18 minutes, until golden brown and puffed.

2 lbs asparagus spears (trim or peel any stalks that seem tough)
1 tablespoon olive oil
1/4 teaspoon salt (I use kosher salt)
1/8 teaspoon black pepper
2 tablespoons unsalted butter
2 teaspoons soy sauce
1 teaspoon balsamic vinegar

Steps:

  • Arrange asparagus in a single layer on baking sheet; toss to coat with olive oil.
  • Sprinkle with salt and pepper.
  • Bake at 400 degrees for approximately 12 minutes or until tender.
  • Just before asparagus is done, melt butter in a small skillet over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally.
  • Do not burn the butter or let it get too brown, should be golden brown.
  • Remove from heat; stir in soy sauce, and vinegar.
  • Drizzle over asparagus, tossing well to coat.
  • Serve immediately.

Topped with a brown butter sauce, it's a perfect accompaniment to meat, poultry or fish, but also just as at home with some white rice, part of a simple weeknight meal.

2 dozen large asparagus stalks with tight, firm tips (about 1 1/2 pounds; 4 per person)
1/2 cup water
6 tablespoons unsalted butter
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped parsley

Steps:

  • Peel the lower part (root end) of the asparagus stalks with a vegetable peeler.
  • In a large nonreactive saucepan, bring the water to a boil. Add the asparagus in one layer, cover and cook over high heat for about 6 minutes, to the desired tenderness. Lift asparagus from the water (most of it should have evaporated) and arrange on a platter.
  • Meanwhile, heat the butter in a skillet until it is lightly browned and stops smoking. Sprinkle the asparagus with the salt and pepper, and pour the hot butter over it. Garnish with parsley, and serve immediately.
