Bumbleberry Pie II image

I have made these pies for many years and always get great results and reviews! These pies are not too sweet, and the fresh fruit taste really shines!

5 ½ cups all-purpose flour
¼ teaspoon salt
2 cups shortening
¾ cup cold water
1 egg
1 tablespoon vinegar
4 cups apples - peeled, cored and chopped
2 cups chopped fresh rhubarb
2 cups sliced fresh strawberries
2 cups fresh blueberries
2 cups fresh raspberries
2 tablespoons lemon juice
2 cups white sugar
⅔ cup all-purpose flour
2 tablespoons tapioca
1 egg yolk, beaten
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Whisk together 3/4 cup water, egg, and vinegar. Stir into flour until mixture forms a ball. Divide dough into 4 balls. Wrap in plastic and refrigerate for 4 hours, or overnight. Roll out dough portions to fit a 9 inch pie pan. Place bottom crusts in 2 pie pans. Set aside top crusts.
  • In a large bowl, combine apples, rhubarb, strawberries, blueberries, raspberries, and lemon juice. Mix together 2 cups sugar, 2/3 cup flour, and tapioca; gently toss with fruit mixture. Divide into 2 pastry lined pie pans. Cover with top crusts; trim and crimp edges. Brush tops with egg wash (1 egg yolk beaten with 2 tablespoons water). Cut a few slits in the top to allow steam to vent.
  • Bake in preheated oven for 50 to 60 minutes, or until filling is bubbly in center and top is golden brown.

My father in law is from Scotland and this is a favorite family dish.

1 pound potatoes, peeled and cut into chunks
2 cups shredded cabbage
1 carrot, grated
1 onion, minced
1 teaspoon prepared yellow mustard
½ cup shredded sharp Cheddar cheese
salt and pepper to taste

Steps:

  • Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then simmer over medium heat until tender enough to pierce with a fork, about 10 minutes. Drain and mash potatoes, then set aside.
  • Meanwhile, combine cabbage and carrot in another saucepan and add just enough water to barely cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain off liquid and stir into the mashed potatoes along with the onion, mustard and Cheddar cheese. Season with salt and pepper.
  • Shape the mixture into 4 patties. Heat a greased grill pan over medium-high heat. Place the patties on the pan and grill until heated through and golden brown, about 5 minutes on each side. Serve right away.

Number Of Ingredients 10

1/2 cup butter or 1/2 cup margarine
2 tablespoons granulated sugar
2 1/2 cups flour
1/2 teaspoon salt
1/2 cup ice water
5 cups blueberries (or one 20 oz package, frozen)
1 cup granulated sugar
1/4 teaspoon ground cinnamon (klah bark)
2 teaspoons lemon juice
1/2 tablespoon butter or 1/2 tablespoon margarine

Steps:

  • Crust: Cut the butter into chunks.
  • Combine the dry ingredients in a bowl.
  • Work the butter gently into the dry mixture with a fork until pieces the size of peas form.
  • Sprinkle the water over and work it in.
  • (Do not overwork the dough.) Form the dough into a ball.
  • Filling: Gently toss berries with sweetening and klah bark in a large bowl.
  • Sprinkle citrus juice over mixture.
  • Spoon berries into crust and dot with butter.
  • For twelve gather pies: 1 crust recipe, 1 beaten egg, 1/2 filling recipe.
  • Roll out dough on a floured surface to a 1/8 inch thickness.
  • Using a 3-inch cookie cutter, cut out 24 circles.
  • Lay out 12 on a lightly greased cookie sheet.
  • Divide filling among circles, spooning approximately 2-3 tablespoons into the center of each, leaving a 1/4 inch border.
  • Brush the border with egg.
  • Lay the second circle on top of each pie, and press edges together with a fork all teh way around.
  • (Stretch the top crust gently to fit if necessary.) If desired, mix together 1/4 cup water with 1 1/2 tbsp sweetening; brush top of each pie with mixture for a sugary glaze.
  • Witha knife, cut three or four short slits in the top of each pie.
  • Bake at 400F for 20-25 minutes, until crust is golden.
  • Slide gently off cookie sheet with spatula.

Steps:

  • Melt butter in a 13" X 9" X 2" baking dish.
  • Wrap a crescent roll around each apple quarter.
  • Place wrapped apples in dish and roll in butter; place 1/2" apart in dish.
  • Combine sugar and spices and pour over wrapped apples; pour Sprite evenly over all.
  • Bake in a 350 degree oven for one hour.
